SOUTHERN BBQ CHICKEN
Slow-grilling over indirect heat keeps this chicken moist and tender. Giving the drumsticks a long rub with seasonings makes them taste great. Always baste at the end of grilling to prevent the legs from burning.

- Mash brown sugar, garlic, salt, and pepper together in a mortar and pestle to form a paste. Spoon paste into a resealable plastic bag. Add the chicken, coat with the paste, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
- Heat oil in a small saucepan over medium heat. Cook and stir onion in hot oil until softened, about 5 minutes. Stir ketchup, vinegar, and Worcestershire sauce into onions; bring to a simmer and cook until flavors blend, about 10 minutes.
- Preheat grill for medium heat and lightly oil the grate. Remove chicken from bag and discard marinade.
- Cook chicken on the preheated grill until lightly browned on all sides, about 1 minute per side.
- Turn off one of the grill burners or move the coals and move chicken so there is no heat source directly below it.
- Baste drumsticks with the sauce and cook another 10 minutes; turn again and baste chicken with sauce. Continue to grill drumsticks until juices run clear, 10 to 15 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

I love playing with dried chiles and one day decided to put together a marinade that was low in sodium, since it's hard to find them in the stores. Steps:
- 1. FOR MARINADE: Crush dried peppers in food processor. Finely chop cilantro and garlic. Mix together with all other ingredients.
- 2. NOTE: Leave pepper seeds in for more heat, or remove for less. You can also add salt to this recipe, but left out the only sodium is from the reduced sodium Worcestershire sauce.
- 3. Rub both sides of chicken with marinade, place in baking dish, cover with foil and refrigerate overnight.
- 4. Remove chicken from baking dis and lay out on baking sheet for about 30 min before grilling to allow them to come down closer to room temp.
- 5. Grill on each side for about 10-15 min over med heat, or until done. Grilling time will vary depending on size of chicken.
- 6. Slice or dice and this makes a great taco meal.

- In a large saucepan, combine the first eight ingredients. Bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, for 10 minutes, stirring often. Cool., Pour 1-2/3 cups marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate overnight, turning occasionally. Cover and refrigerate remaining marinade for basting., Prepare grill for indirect heat, using a drip pan. Drain and discard marinade from chicken. Place skin side down over pan. Grill, covered, over indirect medium heat for 20-25 minutes on each side or until juices run clear, basting occasionally with reserved marinade.

- First, melt the butter, then stir in all the powdered ingredients. Slowly stir in the beer (room temperature) until the mixture is uniform. Keep warm so the butter does not harden and stir well before basting. Grill the chicken on each side (wings, breasts, whatever - but make sure the skin is ON) over medium coals and control the flare-ups with a water squirt-bottle. Begin basting as soon as the skin starts to get crispy.
- Continue cooking and turn chicken a total of four times, basting each time after the first baste. Chicken should be well grilled on the outside but not burned.About 60 minutes total. Skin should be crispy and laden with the caramelized baste.

Steps:
- Preheat the oven to 375 F degrees.
- Fry the chicken joints in the oil and butter until browned.
- Put them aside in a casserole dish.
- Make a sauce by adding the chopped onion to the oil and butter in the pan and fry for 2-3 minutes.
- Add the mushrooms, parsley, lemon juice, Southern Comfort and seasonings.
- Stir well and cook for a further 3 minutes before pouring the sauce over the chicken joints.
- Cover and cook in the 375°F oven for about an hour.
