Chicken-Sausage and Bean Casserole with Sage image

In this recipe from reader Robert Estep of East Haddam, Connecticut, sage-infused olive oil complements the beans and sausage, and the fried leaves make the crunchy breadcrumb topping even crunchier.

Categories     bean     and     sage     casserole     with     chicken-sausage

Time 1h

Yield 8

Number Of Ingredients 10

1/2 baguette
1/4 c. olive oil
Coarse salt
ground pepper
c. fresh sage leaves
1 large onion
4 clove garlic
1 lb. fresh chicken sausage
1/2 c. dry white wine
3 can cannellini beans

Steps:

  • Preheat oven to 350 degrees F. In a food processor, pulse bread until very coarse crumbs form (you should have about 3 cups). Add 2 tablespoons oil; pulse briefly to moisten. Season with salt and pepper; set breadcrumbs aside.
  • In a medium saucepan, heat remaining 2 tablespoons oil over medium-high heat. Add sage; cook until crisp, 2 to 3 minutes. Using a slotted spoon, transfer sage to a paper-towel-lined plate; set aside (reserve pan with oil).
  • Add onion and garlic to pan; cook, stirring occasionally, until onion is tender, 5 to 7 minutes. Add sausage and wine; cook, breaking sausage up with a wooden spoon, until cooked through, 3 to 5 minutes. Stir in beans; cook until beans are tender and creamy, about 5 minutes. Season with salt and pepper.
  • Transfer sausage-and-bean mixture to a shallow 4-quart baking dish; scatter breadcrumbs over top. Place dish on a rimmed baking sheet, and bake until topping is golden, 25 to 30 minutes. Let cool 5 minutes before serving. Serve casserole topped with fried sage leaves.

SPICY SAUSAGE, CHICKEN AND BEAN POT

Spicy Sausage, Chicken and Bean Pot image

This one-pot meal is a wink and a nudge to cassoulet -- in 30 minutes.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 17

2 tablespoons extra-virgin olive oil, 2 turns of the pan
3/4 pound bulk Italian hot sausage
3/4 pound, 1 package, andouille sausage, cut into 1-inch lengths on an angle
1 1/2 pounds boneless, skinless chicken thighs, cut into large chunks
Salt and freshly ground black pepper
1 large onion, quartered and thinly sliced
2 carrots, shredded
3 to 4 ribs celery from the heart, thinly sliced
1 fresh bay leaf
2 (15-ounce) cans white cannellini beans
5 to 6 fresh sage leaves, thinly sliced
1 cup dry white wine
2 cups chicken stock
1/2 loaf baguette
3 tablespoons butter, melted
A handful fresh parsley sprigs, left whole
3 to 4 sprigs fresh thyme, left whole

Steps:

  • Heat a Dutch oven over medium-high heat with extra-virgin olive oil. Crumble the Italian sausage into large pieces, add to Dutch oven and begin to brown, about 2 to 3 minutes. Add the andouille and crisp at edges, 2 to 3 minutes. Remove browned sausages to a paper towel lined plate and add chicken, season with salt and pepper. Lightly brown chicken a couple of minutes on each side then add veggies and bay leaf, add more salt and pepper and cook 7 to 8 minutes more to soften veggies. Add sausages back to the pan along with the beans and sage. Deglaze with wine and stir in the stock.
  • Turn broiler on and set rack in the middle of the oven.
  • Coarsely chop the bread in food processor into large crumbs, remove blade and toss with melted butter (it melts in 15 seconds in microwave) and the parsley, thyme, salt and pepper. Cover the sausage and chicken with bread and set in oven to brown 2 to 3 minutes. Serve directly from the pot. Keep an eye out for that bay leaf and sprigs!

SAUSAGE, CHICKEN, AND WHITE-BEAN GRATIN

Sausage, Chicken, and White-Bean Gratin image

The celebrated French cassoulet influenced our version, which substitutes chicken breast for the traditional duck or goose. Sweet sausage and white beans add heft to this hearty one-pot meal.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Number Of Ingredients 16

1 1/2 cups coarse fresh breadcrumbs
3/4 cup finely grated Parmesan cheese
2 teaspoons chopped fresh rosemary
1 tablespoon plus 1 teaspoon chopped fresh thyme
1 teaspoon thinly sliced fresh sage leaves
3 tablespoons chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper
4 ounces bacon (about 5 slices)
2 boneless, skinless chicken-breast halves (about 1 pound total), cut into 1-inch cubes
1 1/2 pounds sweet Italian sausage (casings removed), cut into 1/2-inch-thick pieces
4 garlic cloves, finely chopped
1 medium onion, thinly sliced
1/2 cup dry white wine
2 cans (14 1/2 ounces each) navy, great Northern, or cannellini beans, rinsed and drained
1 can (14 1/2 ounces) diced tomatoes, with juice
1 cup homemade or low-sodium store-bought chicken stock

Steps:

  • Preheat oven to 375 degrees. Stir together breadcrumbs, cheese, 1 teaspoon rosemary, 1 tablespoon thyme, 1/2 teaspoon sage, 1 tablespoon parsley, 1/4 teaspoon salt, and a pinch of pepper; set aside.
  • Cook bacon in a 4- to 5-quart Dutch oven over medium heat until browned and crisp, 5 to 7 minutes. Transfer to paper towels to drain.
  • Brown chicken all over in fat in pot, about 6 minutes total. Transfer with a slotted spoon to a plate. Cook sausage in pot, stirring occasionally, until browned, about 5 minutes. Transfer to plate.
  • Add garlic and onion to pot; cook stirring, until softened, about 3 minutes. Add wine, and deglaze pot by scraping up any brown bits from bottom with a wooden spoon; cook until most of the liquid has evaporated, about 2 minutes.
  • Stir in chicken, sausage, beans, tomatoes, and stock; the remaining teaspoon each rosemary and thyme; the remaining 1/2 teaspoon sage and 2 tablespoons parsley; and 1/2 teaspoon salt and 1/4 teaspoon pepper. Sprinkle breadcrumbs on top; pat down with a wooden spoon.
  • Cover pot; transfer to oven. Bake until bubbling, about 20 minutes. Uncover; bake until golden brown, about 15 minutes more. Crumble reserved bacon on top. Let cool slightly before serving.

CHICKEN AND SAUSAGE WITH SAGE

Chicken and Sausage With Sage image

From Nigella Lawson. She says it was inspired by sage and onion stuffing. This recipe is easy and makes great comfort food, but the best part is the way it smells in the oven. It makes the whole house smell amazing. Sometimes I substitute chicken thigh meat with good results. This needs to marinate overnight.

Provided by JenPo

Categories     One Dish Meal

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 10

1 -2 yellow onion, peeled and cut into 8 pieces
1/2 cup olive oil (not extra virgin)
2 teaspoons English mustard
1 tablespoon dried sage
ground pepper
1 lemon
1 tablespoon Worcestershire sauce
4 lbs chicken, cut into 10 pieces
12 banger sausages (can sub Italian sausage)
2 tablespoons chopped sage leaves

  • The night before, add the chicken and onions to a storage bag.
  • Juice the lemon into the bag, cut it into 8 pieces, and toss all the pieces into the bag.
  • Add the olive oil, mustard, dried sage, pepper, and Worcestershire. Squish it around to combine, and seal it up.
  • Refrigerate overnight or up to 2 days total.
  • Preheat the oven to 425°F.
  • Combine the chicken and marinade with the sausages in a roasting pan, and when it has come to room temperature, place it in the oven.

ENGLISH SAUSAGE AND BEAN CASSEROLE

English Sausage and Bean Casserole image

This is a recipe that my mum gave me and it makes a very comforting meal on a cold day. I am not certain if you can buy Cumberland sausages in other countries (doubtful!) but if not then go for a thick, heavily seasoned / peppery sausage. What I call Butter Beans I think are called White Lima Beans in the US. I think Worcestershire sauce is widely available but if not use a brown spicy sauce. Lastly, I think cider is referred to as "hard cider" in the US so just to clarify it's the version with alcohol for this recipe! I normally serve with baked potatoes.

Provided by Karen Pea

Categories     Stew

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 10

6 cumberland sausages
2 onions, chopped
16 ounces butter beans (I used tinned)
16 ounces baked beans (tinned)
1/2 of chopped garlic clove (my mum said half but I like to use a whole clove)
1 tablespoon Worcestershire sauce
0.5 (440 ml) can cider
12 slices bacon
2 pints chicken stock
16 ounces of tinned chopped tomatoes

Steps:

  • Grill the sausages until brown.
  • Fry the chopped onions with the garlic and bacon.
  • In a large saucepan add all the ingredients except only add half the stock. Bring to the boil and then simmer slowly.
  • The recipe doesn't tell you how long to simmer for but sometimes I serve after 20-30 mins or so. If I keep it on for longer I haven't managed to overcook it yet. I just add in the rest of the stock as and when required if I'm waiting for guests to arrive.

1 large onion, diced
2 tablespoons minced garlic
1 (9x9 inch) pan cornbread, crumbled

Pour in enough chicken broth to make mixture extremely moist. Spoon mixture into the prepared casserole dish.
