There really is no translation for this mixture of onion, garlic, peppers and green herbs. Recao is culantro in Puerto Rican-speak, so this seasoning is called recaito, or "little culantro." You can buy it in bottles in some ethnic grocery stores but why? when it's so simple to make. Use in dishes like Cuban black beans or Puerto Rican style pot roast, where you want the flavor but not the color or extra liquid that you have in a sofrito. Culantro is the defining flavor.

1 medium Spanish onion, cut into big chunks
8 garlic cloves, peeled
6 ajies dulces, hot peppers, cored, seeded, and cut into chunks or 1 cubanelle pepper, cored, seeded, and cut into chunks
4 leaves culantro (if you can't find culantro, increase the amount of cilantro by half)
1 cup packed fresh cilantro, stems and all, coarsely chopped

Steps:

  • Place the onion and garlic in the work bowl of a food processor fitted with the metal blade.
  • With the motor running, add the remaining ingredients, one at a time and process, until the mixture is smooth.
  • Set aside the amount you need for the recipe you're preparing.
  • Pack the remaining recaito in ½-cup portions in sealable plastic bags and store in freezer.

  • *** Ajices Dulces, also known as cachucha or ajicitos are tiny sweet peppers with a hint of heat. They range in color from light to medium green and yellow to red and orange. They add freshness and an herby note to anything you cook. Do not mistake them for Scotch bonnet or Habanero chilies (which they look like)--those two pack a wallop when it comes to heat.
  • *** Culantro is not cilantro. It has long leaves with tapered tips and serrated edges. When it comes to flavor, culantro is like cilantro times ten.

Chicken thighs are simmered with sofrito and other seasonings until they fall apart. Serve with some yellow rice and beans for a delicious Spanish-style meal.

2 Roma tomatoes, quartered
1 green bell pepper, seeded and quartered
1 red bell pepper, seeded and quartered
1 Cubanelle pepper, seeded and quartered
1 small onion, peeled and quartered
1 bulb garlic, peeled
1 cup chopped fresh cilantro
2 tablespoons olive oil
10 boneless, skinless chicken thighs, or more to taste
2 teaspoons adobo seasoning
2 teaspoons cumin
1 cup chicken broth

Steps:

  • Combine tomatoes, green bell pepper, red bell pepper, Cubanelle pepper, onion, garlic, and cilantro in the bowl of a food processor; pulse until finely chopped. Set aside 1 cup of sofrito for the recipe and save the rest for another use.
  • Heat olive oil in a large skillet over medium heat. Season chicken thighs with adobo and cumin. Add chicken to hot skillet and sear on each side until golden brown, 5 to 6 minutes per side. Reduce heat to low and add chicken broth and 1 cup of sofrito. Cover and simmer until chicken thighs fall apart, about 1 hour.

YUM! This is great. I got this from my mother-in-law (who is Puerto Rican) and it turns out excellent! Rich sauce, flavorful chicken and potatoes served over hot steaming rice. This can also be adapted to be made in the slow cooker (season the chicken, brown in a skillet and then dumpt it and the rest of the ingredients in the slow cooker and cook on low for about 4-5 hours, depending on your slow cooker).**Sofrito-you can use my recipe "Sofrito-Puerto Rican/Dominican", use someone else's or buy Goya Sofrito or Recaito.

3 lbs chicken thighs (I get boneless, skinless)
3 teaspoons adobo seasoning
3 tablespoons olive oil
1 tablespoon vinegar
1 1/2 tablespoons garlic, minced
2 teaspoons salt
3 tablespoons olive oil
1/2 cup ham, diced (optional)
1 cup sofrito sauce
1 cup tomato sauce
1 cup white wine
2 teaspoons capers, minced before measuring
2 bay leaves
3 small potatoes, cut up (I use red and keep the skin on)

Steps:

  • 1. Make a paste of the adobo, olive oil, vinegar, garlic and salt.
  • 2. Rub/brush the chicken with the paste, let sit for up to an hour (if you don't have time to let the seasoning sit it will still taste pretty good).
  • 3. Brown the chicken in a large heavy saucepan in the 3 tbs olive oil, set aside on separate plate, leave the renderings and oil in the pan.
  • 4. In the oil saute the ham and sofrito for 3 minutes or so.
  • 5. Add the chicken and the rest of the ingredients, and cook over medium heat for about 20 minutes until chicken and potatoes are cooked & tender.
  • 6. Enjoy! This recipe is great served with rice and gets better after sitting in the fridge for a day or two.
