CHICKEN BREASTS IN CREAMY WHITE WINE SAUCE
These skillet chicken breasts in rich and creamy white wine sauce are simple enough for weeknight dinner, yet indulgent enough for special occasion.

Steps:
- Bring a large pot of water to a boil for pasta. Generously salt it.
- Meanwhile, cut each chicken breast horizontally (if desired, you can butterfly it as shown here) and season with salt on both sides. And dice shallot, slice garlic, trim and cut asparagus.
- When the pasta water comes to a boil, add pasta and cook it al dante according to package directions.
- As soon as you drop the pasta in boiling water, heat a large stainless steel or cast iron skillet over medium high heat. (I used 12-inch skillet.)
- Add 1 tablespoon of olive oil.
- Add chicken breasts into the sizzling hot skillet in a single layer. (Work in batches, if needed.)
- Sear chicken without disruption until golden crust forms, 2-3 minutes . If they are still stuck to the pan, it means they are not ready. Don't force it. Try again in about 30 seconds.
- Using a pair of kitchen tongs, flip the chicken and cook the other side for another 2 minutes. Chicken doesn't need to be cooked all the way through at this point. Remove the chicken onto a clean plate.
- Repeat with the remaining oil and chicken.
- When all the chicken are cooked, reduce heat to medium low and add shallots. Cook until nice and aromatic.
- Add garlic and cook for a minute, stirring frequently.
- Add wine. (Be careful as it might splatter when you add wine.) Deglaze the pan by scraping the bits off the bottom of skillet with a wooden spoon, about 1 minute.
- Pour in heavy cream and add chicken and asparagus. Cook gently for about 5 minutes.
- Once the pasta is cooked, drain the pasta and reserve about ½ cup of pasta cooking water.
- Add pasta and lemon juice. Toss to combine. Salt to taste. If needed, add reserved pasta cooking water to thin out the sauce. Serve immediately with freshly grated parmesan cheese.

- Preheat oven to 350.
- Combine first 4 ingredients in a shallow dish.
- Dredge chicken in flour mixture.
- Heat oil in an ovenproof skillet over medium heat.
- Add chicken; cook 2 minutes on each side or until browned.
- Add broth and wine.
- Bring to a boil; remove from heat.
- Cover and bake at 350 for 30 minutes or until chicken is done.

PASTA WITH CHICKEN IN A LIGHT WHITE WINE AND FRESH HERB SAUCE
This is a fresh, light meal that is great for the warmer times of year. The sauce is not thick or heavy but coats the pasta for an even flavour. The choice of herbs here is merely what I have found to work well but please adjust to your family's tastes! The herbs should be fresh though- dried herbs will not give the same result. The fresh basil really brings out the flavours in this dish. UPDATE: In light of a review, I have tried this dish again and increased the liquid ingredients in the recipe to provide more sauce. It is important in this recipe to include the stock cube as there is something in it that thickens the sauce. If you must leave it out, add an alternative thickening agent.

- Heat the oil in a skillet and add the chicken, red onion and garlic. Cook for 10 minutes, stirring frequently, until the chicken is cooked through.
- Start to cook the pasta according to the instructions on the packet (if using fresh pasta, wait a while as it takes less time to cook).
- Pour the white wine into the skillet with the chicken, bring to the boil and simmer until the liquid is reduced by about half. Do not reduce it for too long or there will not be enough sauce.
- Stir in the mascarpone cheese and fresh herbs. Crumble in the half stock cube.
- Heat the sauce through gently for a few minutes but do not boil.
- Drain the pasta and spoon the sauce over it in the pan. Toss to coat the pasta.
- Serve immediately.

SKILLET CHICKEN THIGHS WITH WHITE WINE-BUTTER SAUCE
The stovetop-to-oven cast-iron skillet technique in this recipe is our go-to for achieving crispy, juicy chicken thighs. If you're tight on time, the chicken is delicious without the butter sauce (simply plate the thighs straight out of the oven). But to truly impart restaurant-worthy flavor, try your hand at the classic white wine and butter sauce known as beurre blanc in French. - Preheat the oven to 450 degrees F.
- Pat the chicken dry with paper towels. Sprinkle them on both sides with 1 1/2 teaspoons each salt and pepper.
- Heat a large oven-proof skillet (preferably cast iron) over medium-high heat. Add the chicken thighs to the skillet skin-side down and cook, moving them around once or twice to ensure even browning, until the skin is very golden brown, 11 to 12 minutes.
- Turn off the heat. Grasp a wad of paper towels with tongs and mop up excess fat in the bottom of the skillet-this will prevent the grease from spattering all over your oven; carefully discard the paper towel. Repeat several times until there's only a thin film of oil over the bottom of the skillet.
- Transfer the skillet to the oven and roast until the chicken is almost cooked through, 6 to 8 minutes. Flip the thighs so they are skin side up, then continue roasting until no longer pink near the bone, another 6 minutes. Remove the skillet from the oven and transfer the chicken thighs to a plate, skin side up. Wipe out the skillet and set aside.
- Meanwhile, start your sauce. Combine the vinegar, wine, shallots, lemon juice and bay leaves in a heavy 2-quart saucepan. Simmer over medium heat until the mixture is reduced to a wet paste, 8 to 10 minutes. Add the cream and continue to simmer until the mixture is reduced to about 2 tablespoons.
- Reduce the heat to low and remove the bay leaves. Add a few chunks of the butter and whisk constantly until melted, then add a few more chunks and whisk again until melted. Continue adding and whisking the butter, which should melt into a creamy emulsion, until all the butter is incorporated, about 4 minutes. Do not let the sauce go over 130 degrees F or it will separate. If the sauce starts to break, remove from the heat, add 2 ice cubes and whisk until it cools down and comes back together.
- Season the sauce with 1/2 teaspoon salt and a pinch of pepper. Transfer it to the cast iron skillet, nestle the chicken on top and sprinkle the whole dish with chives. Serve immediately.
CREAMY WHITE WINE SAUCE AND ITALIAN CHICKEN OVER PASTA
This is a super easy, ultra tasty recipe that calls for white wine, a packet of Italian dressing mix, chicken and pasta. Upon my first time making it, I already had leftover cooked chicken breast, so I made the sauce on the stovetop and let simmer for 20 minutes, chopped the chicken and added it to the sauce and served over pasta. I used 1-1/2 cups of white wine to yield a sauce that was a little more runny, but consistency is a matter of preference. I also used 2 freshly chopped roma tomatoes, rather than the sundried.

- Preheat oven to 325 degrees. Melt butter in large pot and stir in package of Italian salad dressing mix and garlic. Next stir in wine, mushroom soup and cream cheese until well-blended. Continue to heat (without boiling) mixture for about 5 minutes, sauce should be creamy and all cream cheese should be melted. Place chicken in single layer in baking dish and pour the above mixture over. Cover and cook for 50-55 minutes. Cook pasta about 15 minutes before chicken is done. - Season chicken pieces thoroughly with salt, pepper and garlic powder and sauté in olive oil.
- Once browned, add 1/4 cup chicken stock and cover, cooking until chicken is cooked through and very tender. (5 minutes)
- In another sauté pan, soften garlic and onion over low heat, add red pepper flakes.
- Add chicken pieces (drained) and butter.
- Once butter has melted and mixture is simmering, add the wine, broth and tomato paste.
- Bring back to a simmer, add herbs to taste.
- Cover and cook on low for 15 minutes.
- Remove cover and in another pan, boil your pasta in salted water.
- Drain pasta when cooked al dente and add to sauce, stirring to coat.
- Serve with a shake of parmesan cheese on top.
- Crusty bread would be a great addition to get that leftover sauce off of your plate!
CHICKEN AND PASTA IN WINE CHEDDAR SAUCE
I wrote this to replace my favorite frozen entree that was discontinued by a major company. A solo meal for me, but with a salad or side of vegetables this will serve two for lunch. Cooking the chicken breast coated in the oil/pepper as a separate step will keep the meat moist and tender and also allow the chef to make sure it is done before adding it to the pasta and cheese.

Steps:
- Heat 2 quarts of salted water to a boil and heat a non stick (I like cast iron) frying Pan.
- Cover both sides of the chicken breast, first with the black pepper, and then with the 1 teaspoon of olive oil.
- When the water is boiling, add the pasta and stir once.
- This should cook 8 to 10 minutes.
- While the pasta is cooking, place the chicken breast in the hot pan, fry for 4 minutes, flip and fry for another 4 minutes.
- Then remove and set aside.
- Add 1 tablespoon of olive oil and the butter to the hot frying pan, then add the onion, and sauté until nearly transparent.
- When the onion is done, add the flour, stir into a paste, and then the wine, stirring until thickened.
- Add the cheese a little at a time and stir until the sauce is smooth.
- If the sauce is too thick, add more chicken stock.
- Drain the noodles and add to the sauce.
- Cut the chicken into bite size pieces and add to the cheese and noodles.
- Stir and serve.
