¼ Cup Red Wine Vinegar
1 lemon, juiced
2 teas. Dijon Mustard
4 Garlic Cloves, minced
1 Tbsp. Herbes De Provence, or equal parts rosemary, savory, marjoram and thyme
½ teas. Salt
½ teas. Black Pepper
½ Cup Olive Oil
1 lb. White Mushrooms, sliced
1-1½ lbs. Russet potatoes, peeled and diced into ¼ inch cubes

Steps:

  • Preheat oven to 375˚.
  • In a large bowl add the Vinegar, Lemon juice, Mustard, Garlic, Herbes De Provence, Salt and Pepper.
  • Slowly whisk in the oil.
  • Add the Mushrooms and Potatoes and toss to coat.
  • Place on a greased baking sheet and bake at 375˚ flipping over for even roasting every 15 minutes until potatoes are golden brown and the mushrooms have darkened, about 45 minutes.
  • Serve hot.

This roasted potatoes and mushrooms recipe makes a nice side dish to bake alongside a roast in the oven but it's also great as a meal on its own!

4 large garlic cloves (smashed)
2/3 cup olive oil
1 tsp dry thyme
8 medium small potatoes (washed well, dried and diced)
salt and pepper to taste
15 medium button (champignon mushrooms, sliced)
3 tbsp olive oil
3 large garlic cloves (minced)
salt and pepper to taste
bunch of fresh parsley (finely chopped)

Steps:

  • Pre heat the oven to 475 F. Line a baking sheet with parchment paper and set aside. In a small bowl mix 4 garlic cloves, smashed, olive oil and dry thyme and combine well.
  • Place diced potatoes and the olive mix in a zip bag seal then mix well to coat evenly.
  • Spread potatoes in the prepared baking sheet, then sprinkle salt and pepper to taste (I found a pinch of each works great). Make sure you don't over crowd the potatoes as they will boil instead of roasting so use a large baking sheet.
  • Place in the pre heated oven and roast for 25-30 minutes or until the potatoes are a golden brown.
  • Meanwhile, place sliced mushrooms in a non stick skillet, sprinkle salt and pepper to taste, add 3 tbsp olive oil and saute until the mushrooms are slightly soft and brown and the juice has evaporated, about 7-10 minutes. Add minced garlic and saute for an additional minute or until the garlic is fragrant.
  • Turn the heat off and sprinkle chopped fresh parsley. Mix to coat.
  • Mix cooked mushrooms with roasted potatoes and serve warm or re heat in the oven for a few minutes, if served the next day.

Comforting, bright and warm, this dish celebrates the bounty of winter with strong spices and high heat. While this dish cooks, your whole house will smell fragrant and bright.

10 tablespoons of oil (I use a mix of olive oil and grapeseed oil, but you can mix olive oil with any vegetable oil you have)
½ tablespoon of paprika
4 garlic cloves
3 large potatoes
2 cups of mushrooms
2 tb of salt (and more, to taste, after they come out of the oven)
One large roasting pan

Steps:

  • Preheat your oven to 400 degrees Fahrenheit.
  • Clean your potatoes well (no need to peel, though feel free to do so if you're not a fan of the vitamin-full peel). Cut the potatoes in half lengthwise, and then cut each half into three or four wedges.
  • Clean your mushrooms with a damp paper towels (never wash mushrooms; it makes them gummy and a bit gross). Depending on their size, cut in half or quarter them. Add to the potatoes and set aside.
  • Mix your oils and paprika in the bottom of your roasting pan. Mince your garlic into small pieces, and add it to the oil mixture. Place in the oven for five minutes, until the oil is fragrant and the garlic is golden.
  • Add your potatoes and mushrooms to the pan, tossing them with a large spoon. Make sure they're coated with the oil.
  • Place the pan in the oven for one hour. Every 15 minutes, remove the pan from the oven and carefully stir the potato wedges and mushrooms, ensuring they're coated with the bubbling oil. Take care not to get any of the oil on yourself - it's extremely hot!
  • When ready to eat, serve some wedges and mushrooms on a plate, and gently sprinkle with a bit of the leftover oil. For the full effect, once you're done eating, I suggest mopping up the leftover oil with a crusty piece of regular or gluten-free bread.

1 ½kg floury potatoes (such as Maris Piper, King Edward or Desirée), peeled and cut into halves or quarters, depending on size
100ml olive oil

  • Heat oven to 200C/180C fan/gas 6. Add the potatoes to a pan of cold salted water, bring to a boil, then simmer for 5 mins until partly tender. Drain and steam dry for a few mins in a colander.
  • Return the potatoes to the saucepan, and add the oil, paprika and plenty of salt and pepper. Cover with a lid, then shake the pan around to roughen the edges of the potatoes and thoroughly coat them in the paprika and oil. Parsnips, Potatoes and Spinach Casserole
4 large starchy potatoes, peeled and cut into chunks
4 medium parsnips, peeled and chopped into chunks
Salt
1 small peeled onion
1 box frozen chopped organic spinach, defrosted and squeezed dry
2 tablespoons butter
About 1/2 cup milk
1/2 cup heavy cream
Freshly ground black pepper
Freshly grated nutmeg
2 eggs, beaten
1 cup grated Gruyere or Parmesan
Paprika
Roasted Mushrooms
2 1/2 pounds mixed mushrooms - when you bring them home, wipe them, stem them and slice them, portobellos should be gilled and sliced, buttons may be halved, shiitakes, oysters or other wild mushrooms may be coarsely chopped
8 to 10 cloves garlic, crushed
Several sprigs fresh thyme
1/2 cup extra-virgin olive oil
1 lemon

Steps:

  • Put the potatoes and parsnips in large pot and cover with water. Bring the water to a boil, over medium heat. Salt the water and cook the vegetable until tender, 12 to 15 minutes. Drain and return them to the hot pot. Grate in 3 to 4 tablespoons of onion, then add the spinach, butter, half of the milk and all of the cream. Season with salt, pepper and a little freshly grated nutmeg, to taste. Mash the mixture together and taste to adjust seasonings. Add the extra splash of milk if the potatoes are too tight. Cool to room temperature, then stir in the eggs and transfer the mixture to a casserole. Cover with cheese and sprinkle with paprika. Cool and chill for a make-ahead meal.
  • Preheat the oven to 400 degrees F.
  • Put the casserole on a baking sheet and put it in the lower third of the oven. Bake until hot and golden, about 35 to 40 minutes.
  • In a medium baking dish toss the mushrooms with the garlic, thyme and olive oil. Roast until dark and tender, about 30 minutes. Stir in the lemon juice and season with salt and pepper, to taste.
  • Serve the mushrooms alongside the casserole.

1 pound baby new red potatoes
1 clove garlic, smashed
3/4 cup reduced-fat sour cream
1/4 cup low-fat plain yogurt
1/4 cup well-shaken buttermilk
1 tablespoon champagne vinegar
Small pinch cayenne
1/4 cup roughly chopped parsley leaves
1/4 cup chopped chives
2 tablespoons chopped green onion
2 tablespoons chopped dill
1 tablespoon chopped tarragon leaves
Dash Worcestershire
Dash hot sauce

Steps:

  • Preheat the oven to 450 degrees F.
  • On a rimmed baking sheet, toss the mushrooms with 1 tablespoon olive oil, and season with salt and pepper, to taste.
  • On another rimmed baking sheet, toss the potatoes with the remaining 1 tablespoon olive oil, and season with salt and pepper, to taste. Put both pans in the oven, and roast until the mushrooms are browned and the potatoes are cooked through, about 20 minutes, tossing once and rotating the sheets halfway through. Remove the pans from the oven, and let cool slightly.
  • While the potatoes and mushrooms roast, make the dressing. Add the garlic, sour cream, yogurt, buttermilk, and vinegar into a food processor and blend to combine. Add the cayenne, herbs, Worcestershire, and hot sauce. Blend until fully incorporated and the dressing is a pale green. Season the dressing with salt and pepper, to taste, if needed.
  • Add the potatoes and mushrooms to a serving bowl and pour in the dressing. Toss to coat and serve warm or room temperature.

1 cup sour cream, at room temperature
3 tablespoons all-purpose flour
1 (14-ounce) can crushed tomatoes
1/2 cup chopped dill or 2 teaspoons dried dill
1/2 cup chopped parsley

Steps:

  • Turn on a 6- to 8-quart electric pressure cooker and select the sauté setting (on the more, or hot, setting, if you have it). Add the vegetable oil, then half of the mushrooms. Season with salt, and brown for about 5 minutes, stirring once or twice. Remove the first batch of mushrooms and place on a plate. Add a little more oil if the pot is dry, and brown the second batch the same way, seasoning with salt and transferring the mushrooms to the plate when done.
  • Add the butter to the pot, then the onion. Season with salt and cook for 2 minutes, stirring, until the onion just begins to soften. Add the garlic, and cook for 1 minute more, until the garlic is fragrant. Add the sweet and smoked paprikas; stir well to combine the spices with the onion. Add the wine and carefully scrape up all the browned bits on the bottom of the pot with a spatula. Add the vegetable stock, then the potatoes and mushrooms, along with any accumulated liquid on the plate. Season generously with black pepper. Turn off the sauté setting. Close the lid and twist the pressure knob to seal. Cook on high pressure for 2 minutes.
  • Turn off the pressure cooker and quick-release the pressure by carefully turning the pressure knob to venting. While the steam releases, combine the sour cream with the flour in a medium bowl. Uncover the pot and stir in the crushed tomatoes. Whisk a few ladlefuls of the hot liquid into the sour cream mixture. Add the sour cream mixture and the herbs to the pot. Stir well, and adjust the texture of the stew with up to ½ cup of water if it is too thick for your taste. Taste and add more salt and pepper, if you like.

(If you don't have a microwave, you can parcook in salted boiling water for 3 to 5 minutes instead.) Transfer the first batch of mushrooms to a plate, add a little more oil if the pan is dry, and brown the second batch the same way, seasoning with salt and transferring them to the plate when done.
  • Reduce the heat to medium-high. Add the butter to the pot, then the onion. Season with salt and cook for 3 minutes, stirring, until the onion just begins to soften. Add the garlic and cook for 2 more minutes, until the onion is soft and the garlic is fragrant. Reduce the heat to low and add the sweet and smoked paprikas; stir well to combine the spices with the onion. Add the wine, increase the heat to medium and let it come to a simmer while you scrape up any browned bits on the bottom of the pot. Add the vegetable stock and the crushed tomatoes, then the potatoes and mushrooms, along with any liquid that accumulated on the plate. Season generously with black pepper. Increase the heat to high to bring the mixture to a boil, then reduce the heat to maintain a simmer and cover the pot. Cook for 15 minutes.
  • Uncover the pot and cook for about 5 minutes more, until the potatoes are fully tender and the liquid has reduced a bit. Meanwhile, combine the sour cream and flour in a medium bowl, then whisk a few ladlefuls of the hot liquid into the sour cream mixture. Reduce the heat to low, then add the sour cream mixture and herbs to the pot. Stir well, and adjust the texture of the stew with up to ½ cup of water if it is too thick for your taste. Taste and add more salt and pepper, if you like.
