2 teaspoons butter
1 tablespoon all-purpose flour
1/4 teaspoon salt
1 1/2 cups milk
2 beaten egg yolks
8 ounces cubed, cooked lobsters
1 tablespoon dry sherry
1/8 teaspoon white pepper or 1/8 teaspoon black pepper
1 dash ground red pepper
2 English muffins, split and toasted
snipped fresh chives (optional)

Steps:

  • In a medium saucepan, melt butter.
  • Stir in flour and salt.
  • Add the milk all at once.
  • Cook and stir until thickened and bubbly.
  • Cook and stir 1 more minute.
  • Stir about half the hot mixture into the beaten egg yolks.
  • Return all to saucepan.
  • Cook and stir until mixture is thickened and bubbly.
  • Stir in lobster, dry sherry, white or black pepper, and ground red pepper.
  • Heat through.
  • Serve over English muffin halves.
  • If desired, garnish with snipped chives.

We love lobster. This is one of our favorite ways to spread the goodness. It is wonderful served with pastry shells, toast, noodles or long grain rice. Make sure you have lots of soft crusty bread to soak up the delicious sauce. This sauce works well with other kinds of shellfish, crab, shrimp, langostinoes or prawns.

1/4 cup butter
3 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/4 teaspoon paprika
1/4 teaspoon dry mustard
1 cup milk, 2%
1/2 cup cream, half and half
1/3 cup cheddar cheese, grated (may substitute swiss cheese)
2 egg yolks
14 ounces lobsters, peices, canned
1/2 lb mushroom
3 tablespoons sherry wine, dry
3 tablespoons parsley, finely chopped, garnish

Steps:

  • Melt 2 tbsps of butter, add the mushrooms, saute for a few minutes on low, until the mushrooms are tender, then remove from heat and set aside until needed.
  • Next add the salt, nutmeg, paprika and dry mustard to the flour, mix well.
  • Using a double broiler, over medium heat, melt the remaining butter and add in the spiced flour mixture, stirr constantly until the mixture is smooth about 1 minute.
  • Mix the milk and cream together and gradually add to the butter flour mixture, stirring constantly until it has thickened and is bubbly. Then you will add the cheddar cheese and stir well. (watch carefully).
  • Beat the egg yolks slightly and stir a small amount of the hot cheese mixture into the egg yolks and mix well.
  • Next pour the egg yolks into the hot cheese mixture, stirring constantly until it thickens again, about 2 - 3 minutes.
  • Add the mushrooms and lobster, stirring frequently. Cook for a few minutes until well heated.
  • Remove from heat, add the sherry, blend well.
  • Serve over hot rice, garnish with parsley and enjoy.

SUNNY'S LOBSTER TAIL "NEWBERG"



Sunny's Lobster Tail

Four 4- to 6-ounce raw lobster tails, at room temperature
1 tablespoon hot Hungarian paprika
4 cloves garlic, crushed
1 small red onion, chopped
Kosher salt
2 tablespoons salted butter
2 tablespoons olive oil
2 pints wild mushroom mix, chopped
Kosher salt and freshly cracked black pepper
1 1/2 cups heavy cream
White wine vinegar or fresh lemon juice, as needed
Salted butter, at room temperature, for spreading
4 slices sourdough bread
2 teaspoons finely chopped chives

Steps:

  • For the lobsters: In a medium pot, add the lobster tails in one layer and cover with about 1 inch of water. Remove the lobster tails from the pot and set aside. Add the paprika, garlic, onions and a nice pinch of salt to the pot and bring to a boil over high heat. When the water begins to boil, turn the heat to medium low. When the bubbles subside, add the lobster tails to the pot. Cover and poach until the tails are bright red and curled, about 6 minutes for smaller tails, 8 minutes for larger. Transfer the tails to a plate until cool enough to handle. Strain and reserve the poaching liquid. Remove the meat from the shells and chop into bite-sized chunks.
  • For the mushrooms: In a large pan with straight sides, heat the butter and olive oil over medium-high heat until the butter melts. Add the mushrooms and cook, stirring occasionally, until slightly dehydrated and cooked through, 6 to 8 minutes. Remove with a slotted spoon to a plate and season with salt and pepper. Reserve the pan.
  • For the sauce: Add 3/4 cup of the strained lobster-poaching liquid to the mushroom pan, bring to a simmer over medium heat and reduce slightly, about 3 minutes. Add the cream and simmer until thickened, 10 to 12 minutes. Taste and add vinegar or lemon juice to brighten. Remove from the heat and add the lobster meat to warm in the ambient heat of the pan.
  • For the toast and serving: Preheat the oven to low broil. Lightly butter one side of each slice of bread and place on a baking sheet or directly on the middle rack, buttered-side up. Broil until the edges are golden and the centers are toasty. Cut into halves on the bias.
  • Arrange 2 toast halves on each plate or shallow bowl. Spoon the lobster and sauce onto the toasts. Top with the mushrooms and sprinkle with chives.

1 lb lobster, cooked and cut into pieces
2 tablespoons butter
1 cup madeira wine
1 cup cream
2 egg yolks, beaten
1/4 teaspoon salt
cayenne, to taste

Steps:

  • Heat the lobster slowly in butter about five minutes or until the outside membrane acquires a full red color.
  • Add wine and simmer slowly until the wine is almost all reduced.
  • Beat the cream into the egg yolks; add to lobster and season to taste.
  • Cook until thickened, stirring constantly.
  • Serve immediately in warm timbales or over toast.

1 tablespoon paprika
1/2 teaspoon curry powder
1/8 teaspoon ground nutmeg
Pinch cayenne
4 tablespoons unsalted butter
1 shallot, minced
2 cups milk
2 tablespoons tomato paste
1/2 cup dry sherry
4 cups water
2 teaspoons kosher salt
2 bay leaves
10 black peppercorns
1 pound sea scallops
1 pound large shrimp, peeled and deveined
1/2 pound lobster tail meat
Gremolata for garnish, recipe follows
Sea Salt Roasted Asparagus, recipe follows
Serving Suggestion: steamed long-grain white rice
4 tablespoons flat-leaf parsley, chopped
1 tablespoon fresh rosemary leaves, chopped
1 garlic clove, minced
1 tablespoon grated lemon zest
Pinch salt
2 pounds asparagus
3 to 4 tablespoons extra-virgin olive oil
1 to 2 tablespoons sea salt

Steps:

  • To make the Newburg sauce, combine the flour, paprika, curry powder, nutmeg, cayenne, and salt, to taste, in a small bowl and set aside. Melt the butter in a large saucepan over low heat. Add the shallot and cook for 3 minutes until it begins to brown. While the shallot is cooking, bring the milk and tomato paste to a simmer in a small saucepan over medium heat; be careful not to let it boil over. Add the flour mixture to the browned shallot and stir until mixed well with the butter. Add the sherry and whisk until smooth. Add the hot milk mixture to the flour mixture slowly, whisking constantly until the mix is creamy and thick. Remove from heat and set aside.
  • Put the water, salt, bay leaves and peppercorns in a large saucepan and bring to a boil over high heat. Add the scallops and boil for 3 minutes. Remove immediately and set aside. Do the same with the shrimp and lobster tail meat.
  • Add the cooked shell fish to the Newburg sauce and bring to a simmer over low heat.
  • Serve over white rice, garnished with the Gremolata and a side of Sea Salt Roasted Asparagus. If serving the Newburg on a large platter, arrange the asparagus around the platter edges.
  • Mix all of the ingredients together in a small bowl. Refrigerate until ready to use.
  • Preheat the oven to 400 degrees F.
  • Trim the ends off the asparagus and toss the spears with the olive oil in a mixing bowl. Put the asparagus onto a sheet pan, sprinkle with the salt and put in the preheated oven until they begin to brown, about 15 to 20 minutes. Remove from oven and divide evenly among the 4 dinner plates.

1/2 stick (1/4 cup) unsalted butter
2 tablespoons plus 1 teaspoon medium-dry Sherry
3 tablespoons plus 1 teaspoon brandy
1 1/2 cups heavy cream
1/4 teaspoon freshly grated nutmeg
cayenne to taste
4 large egg yolks, beaten well
toast points as an accompaniment

Steps:

  • Into a large kettle of boiling salted water plunge the lobsters, head first, and boil them, covered, for 8 minutes from the time the water returns to a boil. Transfer the lobsters with tongs to a cutting board and let them cool until they can be handled. Break off the claws at the body and crack them. Remove the claw meat and cut it into 1/2-inch pieces. Halve the lobsters length-wise along the undersides, remove the meat from the tails, discarding the bodies, and cut it into 1/2-inch pieces.
  • In a heavy saucepan cook the lobster meat in the butter over moderate heat, stirring occasionally, for 2 minutes, add 2 tablespoons of the Sherry and 3 tablespoons of the brandy, and cook the mixture, stirring, for 2 minutes. Transfer the lobster meat with a slotted spoon to a bowl. Add the cream to the Sherry mixture and boil the mixture until it is reduced to about 1 cup. Reduce the heat to low and stir in the remaining 1 teaspoon Sherry, the remaining 1 teaspoon brandy, the nutmeg, the cayenne, and salt to taste. Whisk in the yolks, cook the mixture, whisking constantly, until it registers 140°F. on a deep-fat thermometer, and cook it, whisking, for 3 minutes more. Stir in the lobster meat and serve the lobster Newburg over the toast.

4 tablespoons flour
1 cup chicken broth
1/4 cup dry sherry
1 cup sliced mushrooms
1 lb lobsters or 1 lb crabmeat
1/2 cup half-and-half
1/2 cup fresh breadcrumb
1 tablespoon grated parmesan cheese

Steps:

  • In lg skillet, melt butter; saute shallot and red pepper.
  • Add flour and stir until mixed; add broth and sherry.
  • Simmer for 3 minutes.
  • Add mushrooms; simmer 5 minutes.
  • Add lobster or crab and half and half.
  • Do not boil, but let this mixture heat through.
  • Spoon into 1 qt casserole dish.
  • Sprinkle with breadcrumbs and Parmesan cheese.
  • Place under broiler until breadcrumbs are light brown.
