EASY FLUFFY ONE HOUR DINNER ROLLS

Easy Fluffy One Hour Dinner Rolls image

Super easy, fluffy dinner rolls done in ONE hour! And no instant yeast necessary, regular active dry yeast is what I use. These rolls are soft and pillowy and full of buttery flavor! This is my favorite recipe to make for dinner on a weeknight because it is so easy to put together!

Provided by Karen

Categories     Bread

Time 57m

Number Of Ingredients 11

3 tablespoons warm water
1 tablespoon active dry yeast*
1 teaspoon sugar (to activate yeast)
3 tablespoons sugar
1 teaspoon kosher salt
3 tablespoons shortening
3/4 cup milk
1 large egg
2 & 1/2 cups all purpose flour (spooned and leveled)
1 tablespoon butter (to grease pan)
1 tablespoon butter (to top finished rolls)

Steps:

  • To proof the yeast: In a small bowl or coffee mug, add 3 tablespoons warm water. It should be lukewarm but not hot. It should feel like pleasant bathwater and not sting your finger at all. If you want to get technical, it should be between 105-110 degrees F.
  • Add 1 tablespoon yeast and 1 teaspoon sugar and stir. Let this mixture sit for 5 minutes. The yeast should dissolve and start to bubble.**
  • To make the dough: Meanwhile, in a large bowl or stand mixer, add 3 tablespoons sugar, 1 teaspoon kosher salt, 3 tablespoons shortening, and 1 cup of the flour called for in the recipe.
  • In a glass measuring cup, microwave 3/4 cup milk in 30 second increments until it is warm but not hot, the same temperature as the water. Add it to the flour mixture.
  • Stir together with a wooden spoon or beat with the paddle attachment. (I actually just use my hand to stir using the dough attachment because I'm a weirdo and don't like getting 2 attachments dirty.)
  • At this point the yeast should be dissolved and bubbly. Add it to the flour mixture.
  • Add 1 large egg and beat well until combined.
  • Add the remaining flour in increments, mixing in between. You might not need all the flour, and you might need a bit more. Bread is finicky like that. Use your best judgment to continue adding flour until the dough is smooth and soft, but still sticky. It will not pull away from the sides of the bowl completely. You need to add enough flour so that the dough comes together, but the less flour you use, the more tender your rolls will turn out. See photos.
  • Once all the flour is incorporated, use the dough attachment to knead the dough for 5 minutes. (If you are doing this by hand, you will need to knead for about 8 minutes on a floured work surface.) The dough is still quite sticky at this point. See photos.
  • Scrape the dough onto a well floured work surface, shape into a ball, and cover with your grandmother's 90 year old tea towel. (Or any tea towel will do I suppose). Let rest 5-10 minutes.
  • To prepare the pan/skillet: Meanwhile, turn your oven on 375 degrees F. It's only going to be on for 2-3 minutes.
  • Add 1 tablespoon butter to a 10-inch cast iron skillet OR a 9x13 inch baking pan. Place in the preheating oven until the butter is melted and the skillet/pan is hot. Turn the oven off. Use a pastry brush to swirl the butter around to coat the interior, making sure you grease the sides. Leave the pan in the hot oven until you are ready to shape your rolls.
  • To shape the rolls: Press down the resting dough and get out any air bubbles. Divide the dough in halves until you have 12 equal pieces (They should be about 2 ounces each if you want to measure.) Shape each piece into a roll shape by rounding the dough with your fingers on one side, then bring them around to pinch the dough on the other side. See photos. Place in the hot pan/skillet, pinched side down. There should be a little bit of space between each roll.
  • Cover the rolls with a tea towel. Open your turned-off oven and gauge the temperature. It should be warm but not too hot. If you can put your finger on the rack without burning yourself, then put your covered rolls in the oven and shut the door. If the rack is too hot to touch, place the rolls in the oven but leave the door open so that it continues cooling off a bit. We don't want the rolls baking yet.
  • Leave the rolls in the warm oven for 15 minutes. After 15 minutes, remove from the oven (place on top of the oven or in another warm place to continue rising) and preheat the oven back up to 375 degrees F.
  • Let the oven preheat and the rolls continue rising for another 10-15 minutes. The rolls should have doubled in size, and the total rising time after the rolls have been shaped should be at least 25 minutes.
  • Remove the towel and bake the rolls at 375 for about 12 minutes. The tops should be a deep golden brown all across the top. A thermometer should read at least 190 degrees at the center of a roll.
  • Remove the rolls from the oven and immediately melt 1 tablespoon of butter on top of the rolls, using a pastry brush to spread it around.
  • Let the rolls set for about 5 minutes before digging in! Eat with lots of melty butter! Or even better, this Cinnamon Honey Butter!

Time 50m

Number Of Ingredients 8

3 1/2 - 4 c bread or all purpose flour you might even have to use up to 4 1/2 cups(i use king arthur bread flour only)
1 Tbsp fast rise yeast (rapid rise)
1/4 c sugar
1 1/2 tsp salt
2/3 c milk (i use whole milk)
3/4 c water cold out of faucet
4 Tbsp butter diced into small cubes (salted or unsalted)
2 tsp lemon juice

Steps:

  • 1. Preheat oven to 180 degrees. In the bowl of an electric stand mixer whisk together 4 cups flour, sugar, yeast and salt.
  • 2. In a microwave safe bowl add milk, water and butter and heat in microwave on HIGH power until it reaches 115 degrees on a thermometer, about 1 minute 15 seconds. Stir to make sure butter is soft, you don't want it melted completely. Add lemon juice and give a light stir.
  • 3. Pour milk mixture into dry mixture in bowl of electric stand mixer along with lemon juice. Set mixer with dough hook attachment then set mixer on low speed and gradually increase speed to med. low and let mix 4-5 minutes until smooth and elastic add additional flour as necessary dough should be pillowy and soft and slightly stick to your hands but will come off of them clean..... not real sticky
  • 4. Cover bowl with plastic wrap or towel and let sit 5 minutes.
  • 5. line a 9x13 cake pan with parchment paper. Or you can butter the pan for a crunchier bottom on your roll.
  • 6. Remove dough to a floured surface and press into a rectangle about 3/4 to 1 inch thick. Use pizza cutter, dough blade or knife and cut into 2 inch squares or close to it. You can tell by the photo you will get all sizes that's one thing I love about these they are not perfect just awesome tasting!
  • 7. After you have cut your rolls place in pan you will have to just move them around until you get a good fit in the pan. Mist tops with water or wet hands and pat water onto tops of rolls.
  • 8. Place pan UNCOVERED in oven and turn it OFF (very important on both :) Set timer for 20 mins and let fast rise
  • 9. Remove from oven after the 20 minutes and just let them hang out on counter while you pre-heat oven to 375 degree.
  • 10. Bake rolls for 13-15 minutes until golden brown. Brush tops with melted butter and ENJOY!

1 HOUR DINNER ROLLS

1 Hour Dinner Rolls image

1-hour rolls are the perfect solution for making fresh bread in a pinch! This easy and delicious roll recipe will become your new favorite, just in time for the holidays!

Provided by Alyssa Rivers

Categories     Side Dish

Time 1h3m

Number Of Ingredients 6

3 ½ Cups of all-purpose flour
3 Tablespoons Granulated Sugar
1 Tablespoon Rapid Rise Yeast
1 ½ Teaspoon Salt
1 ¼ Cup Milk (warmed)
6 Tablespoons Unsalted Butter (melted and Divided)

Steps:

  • Set the oven to warm or alternately as low as you can set it if you don't have a warm option, about 170°. Lightly spray a 9x13 pan with pan spray and set it aside.
  • In the bowl of your mixer whisk together the flour, sugar, yeast, and salt.
  • In another bowl combine the warm milk and 4 tablespoons of melted butter. Using the dough hook on low, slowly add the liquid to the dry ingredients. Knead the dough for about 4 minutes or so, until it is smooth and elastic. If the dough is still very sticky, add more flour 1-2 tablespoons at a time.
  • Once you have achieved a smooth dough, cover the bowl and let rest for about 5-10 minutes.
  • Once the dough has rested, turn it out onto a lightly floured surface and divide the dough as evenly as you can into 15 pieces. I like to use a kitchen scale so I can get them equal in size. Weigh the whole ball of dough in grams and then divide it by 15. That's the weight each roll should be. Shape each piece into a ball and pinch the dough together on the bottom.
  • Place the dough balls into the baking pan and use your fingers to rub a little bit of water over the tops of the balls so they don't dry out while baking. Transfer to the warm oven and let rise for 20 minutes, or up to 30 minutes if they have not doubled in size after 20. I find it can be helpful to use a spray bottle to spray the bottom of the oven to create steam to help the rolls rise faster.
  • Remove the risen rolls from the oven and bump the heat up to 375°. As soon as the oven has preheated, bake the rolls for 16-18 minutes, until the tops are golden brown. Brush with melted butter as soon as they come out of the oven.

DINNER ROLLS IN ONE HOUR

Dinner Rolls in One Hour image

This is from Beatrice Ojakangas' Great Holiday Baking Book. I own several of her books due to our common Finnish heritage. She says, "You really can do these rolls from beginning to end in an hour! I use the food processor to mix the dough and hasten the rising by using rapid-rise yeast. This yeast is so finely milled that it dissolves right in the flour mixture, and it can stand a higher temperature, giving the dough a boost for the single necessary rising." These were handy when my step-sons lived with us, and of course, they loved them.

Time 1h

Yield 16 rolls

Number Of Ingredients 8

2 1/2 cups all-purpose flour
2 3/4 teaspoons fast rise yeast (1 package)
5 tablespoons instant nonfat dry milk powder
2 tablespoons sugar
1/2 teaspoon salt
3/4 cup water (very warm, about 130 degrees F)
2 tablespoons extra virgin olive oil
3 tablespoons unsalted butter, melted

Steps:

  • In either a food processor or mixing bowl, mix the flour, yeast, milk, sugar, and salt.
  • Add the water and oil and stir or process until a thick, sticky dough forms. Let stand for 5 minutes.
  • Butter an 8-inch round cake pan.
  • Place the dough on a lightly floured board. Gather the dough together gently. Using a floured knife or dough scraper, cut the dough into quarters. Cut each quarter into quarters, and shape each into balls, adding flour, if necessary, to prevent stickiness.
  • Place the dough pieces close together in the prepared pan. Cover, and let rise in a warm place for 20 to 25 minutes or until the rolls are puffy.
  • Meanwhile, preheat oven to 400 degrees F.
  • Drizzle the melted butter over the rolls.
  • Bake for 20 minutes or until golden.

Time 1h10m

Yield 12 serving(s)

Number Of Ingredients 9

2 1/4 teaspoons dry yeast or 1 package yeast
1/4 cup sugar
2 tablespoons water
3/4 cup buttermilk
1/4 cup canola oil
1/2 teaspoon salt
2 1/4 cups flour
1/4 teaspoon baking soda
2 tablespoons butter or 2 tablespoons margarine (butter, especially Lurpak Danish butter is of course best)

Steps:

  • Combine yeast and sugar in large bowl.
  • Set aside.
  • Heat the buttermilk and water in the microwave until warm- NOT HOT!
  • About 45 seconds to 1 minute.
  • Pour the buttermilk slowly into the yeast/sugar mixture until combined.
  • Allow this mixture to sit for 5 minutes.
  • Add oil and dry ingredients, mixing until a soft dough forms.
  • Allow the dough to rest for about 10 minutes.
  • While the dough is resting, melt the butter in a 9" round (dark) cake pan.
  • Spray your hands with butter or cooking spray, and scoop out a piece of dough (about 2-3 T. size).
  • Roll it into a ball in your hands.
  • Drop the ball into the pan, and roll it around in the butter.
  • Repeat this process with the remaining dough, buttering hands again as needed.
  • You will wind up with about 12 rolls.
  • Place the pan in a warm place to rise, for 30-60 minutes.
  • Longer is better, of course.
  • Preheat the oven to 425, and bake for 8-12 minutes until golden brown.
