4 Boneless Skinless Chicken Breasts
1½ Tbsp Olive Oil
4 Garlic Clove (minced)
Kosher salt and freshly ground black pepper
12 oz Dry Penne or Fusilli Pasta (use whole grain pasta, or gluten-free)
2-3 Tbsp Chopped Fresh Thyme
2 Tbsp Fresh Chopped Oregano (or dried)
2 Cups Cherry Tomatoes (halved)
1 Yellow Bell Pepper (seeds removed, thinly sliced)
½ Cup Green Olives (sliced in half)
1 medium Red Onion (thickly sliced)
⅓ Cup Ground Parmesan Cheese
3 Cups Packed Arugula (roughly chopped)
4 Tbsp Extra Virgin Olive Oil
2 Tbsp White Wine Vinegar
1 Tsp Honey
1 Garlic Cloves (pressed or minced)
Pinch crushed red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • In a small bowl, add all the dressing ingredients and whisk until well combined. Set aside.
  • Meanwhile, cook the pasta in a pot of boiling salted water, according to the package directions. Drain, rinse with cold water and transfer to a large mixing bowl. Set aside.
  • While the pasta is cooking, prepare the chicken. Slice the chicken breasts crosswise to create long (0.5-inch thick) strips.
  • In a mixing bowl, combine 1 tablespoon olive oil with the thyme, oregano, garlic, and a pinch of salt and pepper.
  • Add in the chicken pieces and stir to coat. Heat a large non-stick pan over medium heat. Add the chicken in a single layer, and cook for 6-8 minutes, or until cooked through and golden on the sides.
  • Transfer the chicken along with any accumulated juices to the pasta bowl. Add the pepper and onion, cherry tomatoes, olives, parmesan, and arugula.
  • Pour over the dressing and toss to combine. Season to taste with more salt and pepper, if necessary, and serve warm or chilled.

1 cup cubed cooked chicken
1 small green pepper, diced
1 small carrot, thinly sliced

  • Cook pasta according to package directions. 8 ounces tubetti or other small tube-shaped pasta
1 1/4 cups 2% percent Greek yogurt
1/2 cup mayonnaise
2 teaspoons apple cider vinegar
1 teaspoon dijon mustard
1/3 cup chopped fresh dill
1 tablespoon chopped fresh chives
1 rotisserie chicken
2 stalks celery, chopped
1 Kirby cucumber, peeled, halved lengthwise, seeded and chopped
Freshly ground pepper
8 cups mesclun greens

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Drain and rinse under cold water to stop the cooking.
  • Meanwhile, whisk the yogurt, mayonnaise, 1/4 cup water, the vinegar, mustard, dill, chives and 2 teaspoons salt in a medium bowl. Remove the skin from the chicken and shred the meat into large pieces. Add the chicken, celery and cucumber to the dressing and gently stir to combine.
  • Shake the excess water from the pasta and add it to the chicken salad. Season with pepper and toss. Serve over the greens.

10 -12 ounces cooked chicken, shredded (leftover chicken works, or shortcuts prebagged work as well....also leftover ham or turkey would be )
8 ounces elbow macaroni (or pasta of your choice)
4 ounces frozen vegetables (we use half a bag of peas & carrots but whatever floats your boat will work ,o)
3/4 cup bottled ranch dressing (measure is approximate, we eyeball it til its the right consistency. Creamy Italian would also be go)

Steps:

  • Cook pasta according to package directions, adding frozen vegetables and chicken to boiling water.
  • Drain and cool.
  • Toss with bottled dressing, serve cold.

For a speedy, superhealthy supper this pasta dish is just the thing - save leftovers for lunch the next day

1 red pepper , deseeded and thickly sliced
1 red onion , thickly sliced
1 tbsp olive oil
300g penne or fusilli pasta
4 skinless chicken breasts
2 tbsp each chopped thyme and oregano
pinch dried chilli flakes
2 garlic cloves , crushed
150g pack cherry tomato , halved
50g bag rocket
1 tbsp white wine vinegar

Steps:

  • Heat oven to 220C/200C fan/gas 7. Mix the pepper and onion with 1 tsp oil and roast for 20 mins.
  • Cook the pasta following pack instructions. Drain and set aside.
  • Meanwhile put the chicken breasts between two sheets of cling film and bash with a rolling pin until they're about 1cm thick. Mix remaining oil, herbs, chilli and garlic then rub all over the chicken. Heat a griddle or barbecue and cook for 3-4 mins on each side.
  • Slice the chicken on a board, scrape into the pasta with any juices, plus the roasted onion and pepper, cherry tomatoes, rocket, vinegar and seasoning. Toss together and eat warm or cold.

I originally created this recipe with leftover BBQ chicken and stuff from my fridge and it's become my most requested recipe! I make this for just about any occasion and my relatives all request that I bring it to family birthday parties and get togethers. The cooking time reflects typical marinating and pasta cooking time. The prep time is the grilling and cutting time (it usually doesn't take that long). The salad isn't hard but it takes a little bit of prep time to get the best results. It's well worth it! This recipe is also very easy to prepare ahead of time. You can grill the chicken and cut the veggies one day and assemble it the next.

1 pint Miracle Whip (not mayo)
1/4 cup sugar
1/4 cup pickle juice or 1/4 cup vinegar
1/4 cup milk
2 tablespoons mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup barbecue sauce, of your choice
3 lbs boneless skinless chicken breasts
1 cup barbecue sauce
1 lb campanelle pasta (or other shape of your choice)
1/2 yellow bell pepper, cut into 1 strips 1/2 orange bell peppers, cut into 1 strips
1/2 red bell pepper, cut into 1 strips 1 green bell pepper, diced 2 small tomatoes, seeded, cut into 1 strips
1/2 large red onion, diced

Steps:

  • Marinate the chicken breasts in the 1 cup BBQ sauce (or more) for up to 1 hour.
  • Meanwhile, combine all dressing ingredients except for the BBQ sauce.
  • Refrigerate until ready to dress the salad.
  • This is an excellent all-purpose dressing that can be used for any potato or pasta salad.
  • It will keep in the refrigerator for several weeks.
  • Grill chicken on a gas grill set to med-high for about 8 minutes a side until juices run clear, basting with more BBQ sauce as they cook.
  • You can also use leftover cut up chicken or bake it in the oven.
  • Set chicken aside to cool.
  • Cook pasta in rapidly boiling salted water for 10 minutes or according to package directions.
  • Drain and rinse with cold water.
  • While the pasta cooks, cut up the vegetables for the salad and place in a large bowl.
  • When the chicken is cool enough to handle, cut it into strips or cubes and place in the large bowl with the veggies.
  • Add the cooked pasta to the bowl and mix well.
  • Add enough dressing and additional BBQ sauce (around 1/2 cup or more to your liking) until the salad is dressed to your preferred consistency.
  • Cover and chill for several hours or overnight.
  • When time to serve, add more dressing or BBQ sauce as needed if the salad has dried out a little.
