Most people expect a certain flavor when they bite into a Swiss steak, so this dish is a real surprise! It is a wonderful alternative to regular Swiss steak. My family really likes Mexican food, and this is one of their favorites.

1 pound beef top round steak, cut into serving-size pieces
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons all-purpose flour
1 tablespoon vegetable oil
10 onion slices
1 garlic clove, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1/4 cup mild, medium or hot picante sauce
1/4 cup beef broth

Steps:

  • Sprinkle meat with salt and pepper. Using a mallet, pound all of the flour into the meat. , In a skillet, heat oil over medium-high. Brown the meat on both sides. Arrange onion slices over the meat. Combine remaining ingredients and pour over onions. Cover and simmer until the meat is tender, about 45 minutes. Remove meat and keep warm. , Cook the sauce until it is reduced and thickened, about 5 minutes. Season to taste with additional salt and pepper if desired. Pour sauce over meat and serve immediately.

An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
1 (2 pound) beef round steak, 1 inch thick
2 tablespoons vegetable shortening
¼ cup water, or as needed
1 (8 ounce) can diced tomatoes
1 onion, minced
½ green bell pepper, chopped
salt and ground black pepper to taste

Steps:

  • Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
  • Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
  • Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

This recipe has been in my family so long I don't even remember where it came from. Mexican-style food has been a favorite of mine since I was a child. This easy dish is mild, but it can be made hotter if desired.

1 large onion, chopped
2 garlic cloves, minced
4 tablespoons canola oil, divided
1 can (28 ounces) diced tomatoes, undrained
1 can (4 ounces) chopped green chilies
2 teaspoons salt, divided
3 tablespoons all-purpose flour
Dash pepper
2 pounds beef top round steak (1/2 inch thick)

Steps:

  • In a saucepan, saute onion and garlic in 2 tablespoons of oil. Add tomatoes, chilies and 1 teaspoon salt. Simmer, uncovered, for 20-25 minutes or until slightly thickened. , Meanwhile, in a shallow bowl, combine flour, pepper and remaining salt. Cut steak into serving-size pieces; dredge in flour mixture. In a skillet, brown steak on both sides in remaining oil. Transfer to an ungreased 13-in. x 9-in. baking dish. Set aside half of the tomato mixture; pour remaining mixture over steak. , Cover and bake at 325° for 2 hours or until meat is tender. Heat reserved tomato mixture and serve with steak.

2 -3 thin sliced quality cuts steak
seasoning salt
1 small onion (minced)
2 roma tomatoes (chopped)
2 cloves garlic (chopped)
2 (4 ounce) cans whole roasted green chili peppers (not chopped)
1 tablespoon olive oil
2 -3 slices monterey jack pepper cheese or 2 -3 slices white Mexican blend cheese (sliced length wise)

Steps:

  • Heat olive oil in pan.
  • Sautee onion, garlic and tomato for 3 minutes or until tender.
  • Set mixture aside.
  • Preheat oven to broil.
  • Cut green chile into long strips and set aside.
  • Sprinkle seasoning salt on both sides of steak.
  • Broil steaks (I broil the thin cuts 3-4 minutes) on one side.
  • Remove from oven and place mixture of tomato, onion and garlic evenly on unbroiled side of steaks.
  • Top with 2-3 strips of green chile.
  • Next,place a slice of cheese on top of each steak (you will cover mixture and green chile strips with cheese slice.) Broil until steak is done and cheese is melted (about 3 minutes).
  • Serve and enjoy!

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

Mom's Swiss Steak is the perfect family dinner! With tender braised beef in a hearty pepper, onion, mushroom and tomato sauce.

2 1/2 to 3 pounds chuck steak, 1 inch thick
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper
14.5 ounces petite diced tomatoes (1 can)
1 large onion, cut into strips
3 medium green and red bell peppers, cut into strips
8 ounces mushrooms, cleaned and sliced thin
3 garlic cloves, minced
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon salt and pepper
3 tablespoons Worcestershire Sauce (Lea & Perrins Original for gluten-free)
Optional: 1 tablespoon cornstarch and 2 tablespoons water to thicken sauce if desired

Steps:

  • Preheat oven to 350 degrees and place the rack in the middle position of the oven.
  • Cut the beef into serving-sized pieces. If some pieces are thicker than others, pound them with a meat tenderizer so they all are 1 inch thick.
  • Season both sides of the meat with garlic powder, onion powder, salt and pepper, and place in a 9x13 baking dish.
  • Add the tomatoes, onion, bell pepper, mushrooms, garlic, 1 teaspoon salt and pepper, 2 teaspoons onion powder and garlic powder, and three tablespoons Worcestershire sauce to a large mixing bowl. Fold it all together and pour over the steak in the 9x13 baking dish.
  • Cover the dish and cook on 350 degrees for 1½ - 2½ hours covered. (The total cook time depends on the thickness of your meat and the cut of meat you use. It could require more time in the oven if it's not as tender as desired.)
  • When the meat is tender, remove from the oven and allow to sit for 5 -10 minutes uncovered.
  • If you'd prefer a thicker sauce, pour the liquid from the pan into a sauce pan over medium high heat. In a small bowl, combine 1 tablespoon cornstarch with 2 tablespoon water. Bring the sauce to a boil and stir in the cornstarch slurry for 1-3 minutes until it's thickened.

1 (14.5 oz) can (use can and add 1 can of water) diced tomatoes
2 cloves crushed garlic
1/3 cup vegetable oil
for dusting all purpose flour
to taste salt and pepper
1 teaspoon garlic powder
1 (approximately 1 1/2 pounds) (see Note) round steak
1 medium cut into strips onion
1 medium cut into strips bell pepper

Steps:

  • Cut steak into serving-size pieces. Season, to taste, with garlic powder, salt and pepper. Dust meat with flour. In heavy skillet, brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic, tomatoes, onion, bell pepper and 1 tomato-can measure of water. Pour over steak and simmer over low heat until meat is tender, about 1 1/2 hours, adding water if necessary to keep meat partially covered. Season, to taste, with additional salt and pepper. Hint: Cook this in a slow-cooker, according to manufacturers instructions, on low for a most fabulous dinner. Low heat on a slow cooker is about 200 °F and high heat on a slow cooker is about 300 °F.
  • Note: to ensure tenderness, it is necessary to have the butcher run the round steak through a cuber.

2 lbs. round steak (cut into 1-2 inch pieces)
2 Tbsp vegetable oil or coconut oil
1/3 cup beef broth (can use water instead if you prefer)
29 oz diced tomatoes (2 (14.5 oz) cans)
1/2 cup green pepper (chopped)
1 onion (cut into rings)
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper

Steps:

  • Mix together flour, 1/2 tsp salt and 1/2 tsp black pepper in a plastic bag
  • Add in steak and mix until meat is covered in flour.
  • Heat oil in a heavy pan.
  • Add the meat and onions and cook until the meat is browned on both sides and the onions are softened.
  • Add in water, cover and let simmer for about 1 hour or until beef is fork tender.
  • Add more water if needed. Check ocassionally to make sure the water hasn't evaporated.
  • Mix together diced tomatotes, green pepper, onion powder, salt and pepper.
  • Pour over beef and stir to combine
  • Simmer for 30 minutes or until thickened.

2 pounds bottom round roast (Cut into 1/2" thick slices)
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
½ cup flour (all-purpose)
3 tablespoon olive oil
1 onion (sliced)
4 cloves garlic (minced)
1 tablespoon tomato paste
14.5 ounce diced tomatoes (1 can)
2 cups beef broth (low sodium)
2 teaspoon Italian seasoning
1 tablespoon Worcestershire sauce
1 tablespoon parsley (freshly chopped)

Steps:

  • Swiss the steak: Use a meat tenderizer mallet to poke holes into each slice of steak on both sides. You can also do with a fork or pairing knife.
  • Dredge through flour: Generously salt the beef slices with salt and pepper. Add the flour to a shallow bowl. Dredge each piece of beef well in the flour.
  • Sear the steak: Heat 2 tbsp of the olive oil in large, deep skillet over medium-high heat. Add the dredged beef to the skillet and cook for 4-5 minutes per side, or until seared and well browned. Remove the beef from the skillet and set aside.
  • Sauté onion: Add the remaining tbsp of olive oil to the skillet along with the onions. Cook for 3-4 minutes, until they soften and get translucent. Add the garlic and cook for 30 seconds or until aromatic.
  • Add the rest of ingredients: Stir in the tomato paste and cook for 1 minute, then add the diced tomatoes, broth, Italian seasoning, and Worcestershire sauce. Stir everything together well.
  • Braise: Bring the mixture to a boil, then reduce the heat to a simmer. Add the beef back to the skillet and make sure it's fully submerged. Cover and cook for 1 1/2 hours, or until the sauce has reduced to your liking and the beef is tender. Stir occasionally.
  • Finish & serve: Taste for seasoning and add salt and pepper if needed. Garnish with parsley and serve.

2 tablespoons butter
1 large onion (cut in half and sliced into 1/2 moon shapes)
1 green pepper, (sliced)
1 1/2 pounds cube steak
salt and pepper
1 cup flour
4 tablespoons Vegetable oil, (divided)
2 (14.5-ounce) cans stewed tomatoes
1 cup water
2 beef bouillon cubes, (crumbled)
1 teaspoon Worcestershire sauce
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt

Steps:

  • Melt 2 tablespoons of butter in a cast iron Dutch oven. Add onion and green pepper and cook until soft, about 5 minutes. Remove onion and green pepper to a bowl and set aside.
  • Season both sides of cube steak with salt and pepper and dredge in flour. You want a thick coating of flour because it will help thicken the sauce.
  • Add 2 tablespoons vegetable oil to Dutch oven. Working in 2 batches, cook cube steak until browned on both sides (it will not be cooked through).
  • Leave the second batch of cube steak in the Dutch oven and return the first batch plus the onion and green peppers to the Dutch oven.
  • Add remaining ingredients and stir to mix. Cover Dutch oven (I leave a little gap) and cook for 1 hour and 15 minutes over low heat, stirring occasionally to make sure nothing on the bottom burns.

1 jar(s) (8 oz) salsa (i like the chunky style)
1 small onion, diced
1 clove garlic, minced
1/2 tsp salt
1/2 tsp pepper
1/2 c oil
3 Tbsp flour
1/2 to 1 c shreeded cheddar cheese

Steps:

  • 1. Pour oil in skillet to get hot. In a ziplock bag mix flour, salt and pepper and shake well. Coat cube steak with flour and place in skillet. Cook both sides until lightly brown.
  • 2. Spray a 9 x 13 inch cooking dish with Pam cooking spray. Add meat to dish. Cover with Salsa, onions, garlic and bell peppers.
  • 3. Bake in a 350 degree oven for 1/2 hour. Sprinkle with shredded cheddar cheese and cook another 10 to 20 minutes, or until cheese is melted.
