1 lb ground chicken (ground turkey can be substituted)
1 egg
1/4 cup breadcrumbs
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 -2 garlic clove, finely minced
1 small onion, grated
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup grated parmesan cheese
1/2 cup pasta sauce (homemade or store bought)
1/2 cup shredded Italian cheese blend
minced parsley (to garnish)

Steps:

  • Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray, set aside.
  • In a large bowl, combine the ground chicken, egg, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. To not over handle the mixture otherwise it will get tough. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce.
  • Place filled loaf pan on a baking sheet and bake in the preheated oven for 40-45 minutes. Remove the meatloaf from the oven and sprinkle the top with the remaining shredded cheese. Place the meatloaf back in the oven and bake until the cheese is melted.
  • Remove the meatloaf from the oven and allow to rest for 5-10 minutes before serving/slicing. Garnish with parsley if desired.

1 pound lean ground chicken
⅔ cup dry bread crumbs
¼ cup grated Parmesan cheese
¼ cup finely chopped onion, or more to taste
1 large egg, lightly beaten
2 teaspoons minced garlic
½ teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground black pepper
1 pinch chipotle chile powder
¼ cup marinara sauce, or more to taste
¼ cup shredded Italian cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8x4-inch loaf pan with nonstick spray.
  • Mix together ground chicken, bread crumbs, Parmesan cheese, onion, egg, garlic, basil, thyme, oregano, salt, black pepper, and chipotle chile powder until well combined. Press into the prepared loaf pan and top with marinara sauce.
  • Bake in the preheated oven until no longer pink in the center, 40 to 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Sprinkle Italian cheese over top and bake until melted and bubbly, about 10 more minutes.
  • Let stand 5 minutes before serving.

2 tablespoons olive oil
1 cup diced onions
3 cloves finely chopped garlic
1 1/2 lb ground chicken
1 cup Progresso™ panko crispy bread crumbs
1/4 cup milk
1 egg
2 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes, if desired
6 oz mozzarella cheese, cut into planks
1 cup marinara sauce
1/2 cup Progresso™ panko crispy bread crumbs
1 clove finely chopped garlic
2 tablespoons butter
3 tablespoons grated Parmesan cheese
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 400°F. Spray 9x5-inch loaf pan with cooking spray.
  • In 8-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Cook onions, 3 cloves garlic and a dash of salt in oil about 5 minutes or until onions are soft and translucent. Set aside to cool.
  • In large bowl, mix remaining tablespoon olive oil, the ground chicken, 1 cup bread crumbs, the milk, egg, 2 tablespoons Parmesan cheese, 2 tablespoons parsley, the salt, pepper and pepper flakes. Add onion and garlic mixture; mix well.
  • Pat half of meatloaf mixture in pan. Arrange cheese planks down center of meatloaf, leaving 1/2 to 1 inch of cheese-free space around all edges. Cut cheese in half as needed to fit. Cover cheese with remaining meatloaf mixture; press around edges to seal in cheese. Spread half of the marinara sauce over top of meatloaf.
  • Bake about 1 hour or until meat thermometer inserted in center of loaf reads 165°F. Cool 10 to 15 minutes. Meanwhile in 6-inch skillet, toast 1/2 cup bread crumbs, 1 clove garlic and the butter until golden. Scrape into small dish to cool slightly. Stir in 3 tablespoons Parmesan and 2 tablespoons parsley. Top meatloaf with mixture.
  • Serve with remaining marinara sauce.

1 1/2 lbs ground chicken
6 tablespoons dried breadcrumbs
3/4 teaspoon dried basil (or 2 t chopped fresh basil)

3/4 teaspoon dried oregano (or 2 t chopped fresh oregano)
2 garlic cloves, minced
1/2 small onion, chopped small or grated
3/4 teaspoon table salt
1/3 teaspoon black pepper
1 1/2 ounces grated parmesan cheese (about 3/4 cup)
3/4 cup pasta sauce
3 ounces low fat shredded mozzarella cheese (3/4 cup)
oregano (optional) or basil, for garnish (optional)

Steps:

  • Preheat oven to 350°F Spray a muffin tin with non-stick cooking spray.
  • In a large bowl, beat together egg and egg white until combined. Add everything else except pasta sauce, mozzarella cheese, and optional herbs. Mix gently to combine; do not over mix or compress the mixture too firmly.
  • Divide evenly into 12 wells of muffin tin. Divide pasta sauce evenly over the top of each portion (about 1 tbsp). Bake 20 minutes.
  • Top each portion with about 1 tbsp shredded cheese and return to oven until cheese is melted and bubbly, 3-5 minutes. Sprinkle with herbs and serve.

I am always looking for meatloaf recipes to fix and invite my mother in law over to try. Meatloaf is her favorite entree! I found this one and tweaked it to my liking.

3 lb ground chicken
2 eggs, lightly beaten
1 1/2 can(s) italian bread crumbs
1 Tbsp italian seasoning
2 Tbsp minced garlic
1 1/2 c grated parmesan cheese
1 c marinara sauce
1 can(s) shredded mozzarella cheese

Steps:

  • 1. Preheat the oven to 350.
  • 2. In a large bowl, combine the ground chicken, eggs, breadcrumbs, Italian seasoning, , garlic and Parmesan cheese. Mix with your hands.
  • 3. Place into a well greased 13x9 pan and shape into a loaf. Top the meatloaf with the marinara sauce.
  • 4. Bake about 55 minutes. When done remove from oven and add the mozzarella cheese on top. Return to oven until the cheese is melted. Let stand for about 10 minutes before slicing and serving.

1 cup CLASSICO Tomato and Basil Pasta Sauce, divided
1 lb. ground chicken
1/4 cup (1/2 of pkt.) SHAKE 'N BAKE Chicken Coating Mix
2 Tbsp. KRAFT Grated Parmesan Cheese
2 Tbsp. chopped fresh basil
1 clove garlic, minced
1 egg, beaten

Steps:

  • Place 3/4 cup mozzarella and 1/2 cup pasta sauce in separate freezer-weight containers; place in freezer. Mix remaining mozzarella and pasta sauce with all remaining ingredients just until blended; shape into 4 loaves. Place on baking sheet. Freeze 1 hour or until firm.
  • Transfer meatloaves to large freezer-weight resealable plastic bag. Freeze up to 1 month.
  • When Ready to Serve
  • Heat oven to 375�F. Place (frozen) meatloaves in 9-inch square baking dish sprayed with cooking spray. Bake 45 min. or until done (165�F).
  • Meanwhile, transfer (frozen) mozzarella and pasta sauce to separate microwaveable containers. Microwave on MEDIUM-LOW (30%) 2 to 3 min. or just until thawed.
  • Top meatloaves with pasta sauce and mozzarella; bake 3 to 4 min. or until mozzarella is melted.
