- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine the chicken, stuffing mix crumbs, cheese, egg, onion, salt, pepper and garlic pepper seasoning. Mix together, then stir in ketchup and barbeque sauce. Mix well and pour mixture into a bread loaf pan.
- Bake in preheated oven for 50 minutes. Turn oven off and let sit in hot oven for an additional 15 minutes.

- Preheat oven to 350 degrees and spray broiler pan or baking sheet with cooking spray. Place ground chicken, breadcrumbs and Parmesan in a large mixing bowl and set aside.
- Mince onion, bell pepper, mushrooms and garlic very finely or pulse in food processor until small but not pureed.
- Add minced vegetables, beaten egg, salt, pepper, oregano, basil and red pepper flakes to the bowl containing ground chicken. Mix by hand until completely combined.
- Transfer to the prepared pan and shape into a loaf about 5" wide and 2" high. Bake 30 minutes then remove from oven. Spoon marinara sauce over meatloaf and spread to edges.
- Return to oven for additional 25-30 minutes until cooked through or internal temperature registers 160 degrees on meat thermometer. Remove from oven and sprinkle with Italian blend cheese. Allow meatloaf to rest 10 minutes before slicing and serving.

- For the sauce: Whisk together the ketchup and hot sauce in a small bowl and set aside.
- For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with cooking spray and set aside.
- Melt the butter in a medium saute pan over medium-high heat. Once melted, saute the celery and onion until softened, 3 to 5 minutes. Transfer the mixture, with the drippings, to a large bowl. Add the hot sauce to the bowl and stir to combine. Add the chicken, blue cheese, salt, pepper, eggs and 1 1/2 cups of the panko and mix until well combined.
- Press the mixture into the prepared loaf pan, pressing more in the center of the loaf to create a divot. This will allow the meatloaf to bake evenly and not create a mound after it is baked. Spread the sauce over the top of the meatloaf. Mix the Parmesan with 1/2 cup of the panko and sprinkle the mixture on top of the sauce. Bake until the center is set and the top is golden brown, 45 minutes to an hour. Let rest about 15 minutes before cutting to serve.
- Meanwhile, toast the remaining 1/4 cup panko in a dry pan until lightly golden and set aside.
- Garnish the meatloaf slices with the toasted panko and chopped celery leaves.

- Preheat the oven to 375 degrees F. Grease a 9-by-5-inch loaf pan with butter (see Cook's Note).
- Heat the olive oil and sesame oil in a medium skillet over medium-low heat until warm. Add the onions, garlic, ginger and a pinch each of salt and pepper. Cook, stirring occasionally, until the onions are translucent, about 8 minutes. Transfer the mixture to a large bowl and let cool to room temperature.
- Meanwhile, stir together the panko and milk in a small bowl and set aside for 5 minutes, then transfer to the large bowl. Add the chicken, soy sauce and eggs and mix together with your hands just until combined. Transfer to the prepared loaf pan and smooth out the top. Bake the meatloaf for 45 minutes.
- Meanwhile, whisk together the hoisin sauce and blackberry jam in a small saucepan over medium-low heat until smooth and warm, about 3 minutes. Remove from the heat and cover with foil to keep warm.
- Remove the meatloaf from the oven and brush generously with the hoisin glaze. Return to the oven and continue to bake until the meatloaf reaches an internal temperature of 165 degrees F, about 20 minutes. Remove from the oven and let the meatloaf sit for 5 to 10 minutes.
- Sprinkle sesame seeds over the meatloaf then slice and serve topped with the remaining hoisin glaze.

- Preheat oven to 350F degrees.
- In a small bowl, combine 1/3 cup ketchup, brown sugar and dried mustard; set aside.
- In a small saute pan, heat olive oil and saute onion and bell pepper for about 2 minutes. Add minced garlic, dried oregano and pinch of salt and pepper. Cook for one minute more and remove from heat. Combine bread crumbs and milk in a small bowl; set aside.

- Cut each chicken breast in half crosswise, then cut the larger half again horizontally, creating 3 cutlets. Transfer to a large bowl.

- Place the ground chicken in a large bowl. Add the egg, parmesan cheese, panko breadcrumbs, onion and garlic on top of the meat. Season with parsley, Italian seasoning, salt and pepper.
