1 pound ground chicken
⅔ cup herb stuffing mix, crushed into fine crumbs
¼ cup grated Parmesan cheese
1 egg
1 cup diced onion
½ teaspoon salt
½ teaspoon ground black pepper
1 pinch garlic pepper seasoning
2 teaspoons ketchup
2 teaspoons barbeque sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the chicken, stuffing mix crumbs, cheese, egg, onion, salt, pepper and garlic pepper seasoning. Mix together, then stir in ketchup and barbeque sauce. Mix well and pour mixture into a bread loaf pan.
  • Bake in preheated oven for 50 minutes. Turn oven off and let sit in hot oven for an additional 15 minutes.

1 - 1 1/2 lbs ground chicken
3/4 cup breadcrumbs (Italian-style )
1/4 cup Parmesan cheese (grated)
1/2 medium yellow onion
1 green bell pepper (cored and seeded)
10 medium-sized button mushrooms
2 cloves garlic (minced)
1 large egg (beaten)
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 cup marinara sauce
1/4 cup Italian blend shredded cheese

Steps:

  • Preheat oven to 350 degrees and spray broiler pan or baking sheet with cooking spray. Place ground chicken, breadcrumbs and Parmesan in a large mixing bowl and set aside.
  • Mince onion, bell pepper, mushrooms and garlic very finely or pulse in food processor until small but not pureed.
  • Add minced vegetables, beaten egg, salt, pepper, oregano, basil and red pepper flakes to the bowl containing ground chicken. Mix by hand until completely combined.
  • Transfer to the prepared pan and shape into a loaf about 5" wide and 2" high. Bake 30 minutes then remove from oven. Spoon marinara sauce over meatloaf and spread to edges.
  • Return to oven for additional 25-30 minutes until cooked through or internal temperature registers 160 degrees on meat thermometer. Remove from oven and sprinkle with Italian blend cheese. Allow meatloaf to rest 10 minutes before slicing and serving.

1 lb ground chicken
1/2 cup fine breadcrumbs
1 large egg white
1 medium carrot
1 small onion
1/4 cup ketchup
1/2 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon celery seed
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees.
  • Combine chicken and bread crumbs in large bowl.
  • Set aside.
  • Cut the carrot& onion into chunks and add to blender.
  • Add the remaining 7 ingredients to the blender.
  • Process in blender until carrot is very fine.
  • Pour blender mixture over meat mixture.
  • Mix very well using your hands.
  • Form mixture into a loaf and place in lightly greased 9" X 13" pan.

1 tablespoon hot sauce
Nonstick cooking spray, for spraying the loaf pan
3 tablespoons unsalted butter
3 stalks celery, small diced (about 1 cup), celery leaves reserved for garnish
1/2 medium onion, small diced (about 1 cup)
3 tablespoons hot sauce
1 1/2 pounds ground chicken, 50/50 light and dark
1 cup blue cheese crumbles
1 1/2 teaspoons kosher salt
2 teaspoons coarsely ground black pepper
2 large eggs
2 1/4 cups panko breadcrumbs
1/4 cup grated Parmesan

Steps:

  • For the sauce: Whisk together the ketchup and hot sauce in a small bowl and set aside.
  • For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with cooking spray and set aside.
  • Melt the butter in a medium saute pan over medium-high heat. Once melted, saute the celery and onion until softened, 3 to 5 minutes. Transfer the mixture, with the drippings, to a large bowl. Add the hot sauce to the bowl and stir to combine. Add the chicken, blue cheese, salt, pepper, eggs and 1 1/2 cups of the panko and mix until well combined.
  • Press the mixture into the prepared loaf pan, pressing more in the center of the loaf to create a divot. This will allow the meatloaf to bake evenly and not create a mound after it is baked. Spread the sauce over the top of the meatloaf. Mix the Parmesan with 1/2 cup of the panko and sprinkle the mixture on top of the sauce. Bake until the center is set and the top is golden brown, 45 minutes to an hour. Let rest about 15 minutes before cutting to serve.
  • Meanwhile, toast the remaining 1/4 cup panko in a dry pan until lightly golden and set aside.
  • Garnish the meatloaf slices with the toasted panko and chopped celery leaves.

1 teaspoon sesame oil
1 1/2 cups finely diced white onions
2 tablespoons minced garlic

1/2 cup whole milk
Unsalted butter, for greasing
2 pounds ground chicken (see Cook's Note)
2 tablespoons low-sodium soy sauce
2 large eggs, lightly beaten
2/3 cup hoisin sauce
1/3 cup blackberry jam
Toasted sesame seeds, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Grease a 9-by-5-inch loaf pan with butter (see Cook's Note).
  • Heat the olive oil and sesame oil in a medium skillet over medium-low heat until warm. Add the onions, garlic, ginger and a pinch each of salt and pepper. Cook, stirring occasionally, until the onions are translucent, about 8 minutes. Transfer the mixture to a large bowl and let cool to room temperature.
  • Meanwhile, stir together the panko and milk in a small bowl and set aside for 5 minutes, then transfer to the large bowl. Add the chicken, soy sauce and eggs and mix together with your hands just until combined. Transfer to the prepared loaf pan and smooth out the top. Bake the meatloaf for 45 minutes.
  • Meanwhile, whisk together the hoisin sauce and blackberry jam in a small saucepan over medium-low heat until smooth and warm, about 3 minutes. Remove from the heat and cover with foil to keep warm.
  • Remove the meatloaf from the oven and brush generously with the hoisin glaze. Return to the oven and continue to bake until the meatloaf reaches an internal temperature of 165 degrees F, about 20 minutes. Remove from the oven and let the meatloaf sit for 5 to 10 minutes.
  • Sprinkle sesame seeds over the meatloaf then slice and serve topped with the remaining hoisin glaze.

1/2 yellow onion, chopped
1/2 red bell pepper, chopped
1 clove garlic, minced
1/2 teaspoon ground oregano
pinch salt and pepper
1/2 cup breadcrumbs
2 tablespoons milk
1 egg
1 generous tablespoon ketchup
1 1/2 teaspoons worcestershire sauce
1 lb ground chicken breast
4 oz diced cheddar cheese (about 1/2 cup)
salt and pepper
1/3 cup ketchup
1 tablespoon brown sugar
1/2-1 teaspoon ground mustard

Steps:

  • Preheat oven to 350F degrees.
  • In a small bowl, combine 1/3 cup ketchup, brown sugar and dried mustard; set aside.
  • In a small saute pan, heat olive oil and saute onion and bell pepper for about 2 minutes. Add minced garlic, dried oregano and pinch of salt and pepper. Cook for one minute more and remove from heat. Combine bread crumbs and milk in a small bowl; set aside.
  • In a large mixing bowl, beat egg slightly. Add 1 tablespoon ketchup, worcestershire sauce, ground chicken, cubed cheese, bread crumb mixture and sauteed peppers and onions. Season with a generous pinch of salt and ground black pepper. Mix all ingredients together taking care not to over mix.
  • Put chicken mixture in a standard loaf pan. Top with brown sugar/ketchup mixture.
  • Bake, uncovered, for 35-40 minutes.

1-1/4 pounds boneless skinless chicken breast halves
1-1/4 pounds boneless skinless chicken thighs
2 large eggs, lightly beaten
1/2 cup panko bread crumbs
1/2 cup mayonnaise
1 envelope onion soup mix
2 tablespoons minced fresh parsley
1 tablespoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon garlic powder

GRAVY:
2 cups sliced fresh mushrooms
1 tablespoon butter
3 cups reduced-sodium chicken broth

1/4 cup white wine or additional reduced-sodium chicken broth

Steps:

  • Place chicken in the freezer for 15-20 minutes or until it begins to freeze. Cut into 1-in. pieces. In a food processor, cover and process chicken in batches until ground., In a large bowl, combine the eggs, bread crumbs, mayonnaise, soup mix, parsley, horseradish, salt, garlic powder, sage, thyme and pepper. Crumble chicken over mixture and mix well., Shape into a loaf; place in a greased 13x9-in. baking dish. Bake, uncovered, at 350° until no pink remains and a thermometer reads 165°, 55-60 minutes. 20 slices bacon
1 cup BBQ sauce, divided
10 slices cheddar cheese
2 green bell peppers, sliced
½ red onion, sliced
2 red bell peppers, sliced

Steps:

  • Preheat the oven to 350°F (180°C).
  • Cut each chicken breast in half crosswise, then cut the larger half again horizontally, creating 3 cutlets. Transfer to a large bowl.
  • In a small bowl, combine the salt, garlic powder, smoked paprika, onion powder, chili powder, black pepper, and cayenne pepper. Stir to combine.
  • Pour the spice mix over the chicken cutlets and toss to coat completely in the seasoning. Set the chicken aside.
  • Arrange the bacon slices in a 9x5-inch (23x13-cm) loaf pan, making sure the bottom and sides are fully covered, and that the strips hang over the sides.
  • Layer in 4 seasoned chicken cutlets, 2 tablespoons of barbecue sauce, 5 slices of cheddar cheese, 4 more chicken cutlets, another 2 tablespoons of barbecue sauce, the green pepper, onion, 2 tablespoons of barbecue sauce, the red pepper, 5 remaining cheese slices, and the remaining chicken. 1 large egg
½ cup parmesan cheese (, grated)
1 cup panko breadcrumbs
1 small onion (, diced)

1 teaspoon coarse kosher salt
½ teaspoon black pepper
15 ounces tomato sauce (store-bought or homemade)

Steps:

  • Preheat the oven to 375°F. Spritz a baking dish with nonstick baking spray and set aside.
  • Place the ground chicken in a large bowl. Add the egg, parmesan cheese, panko breadcrumbs, onion and garlic on top of the meat. Season with parsley, Italian seasoning, salt and pepper.
  • Use your hands to mix the ingredients together until combined. This might take a few minutes and effort since you want to make sure that the ingredients are well-dispersed in the meat.
  • Place the meat mixture into the prepared baking dish and form into a loaf. Mine was 6 ½" (L) x 3 3/4 " (W) x 1 ¼" (H). The taller your meatloaf is, the longer it will take to bake.
  • Pour the tomato sauce on top of the meatloaf, and sprinkle additional cheese on it.
  • Bake for 55-60 minutes, or until the meatloaf is cooked through. The meatloaf's internal temperature should reach 165°F at the thickest spot.
  • Once out of the oven, let rest for 5-10 minutes before slicing and serving with your favorite sides.

1¼ cups breadcrumbs
½ cup finely chopped onion
½ cup shredded Parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon kosher salt
½ teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup milk
2 large eggs
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
¾ cup ketchup
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, crumble the ground chicken.
  • In a medium bowl, combine all of the dry ingredients (breadcrumbs, onion, parmesan, parsley, garlic powder, salt and pepper) and stir to mix. Add this to the bowl with the ground chicken and stir.
  • Add the remaining wet ingredients (milk, eggs, tomato paste, and Worcestershire sauce) and stir to mix.
  • In a small bowl, make the glaze by stirring together the ketchup, brown sugar and Worcestershire sauce.
  • Spoon a couple tablespoons of the glaze into the bottom of an 8x4-inch loaf pan. Add the chicken mixture to the loaf pan and then spread the remaining glaze on top.
  • Bake in the preheated oven, uncovered, for 80-90 minutes, or until the internal temperature reaches 165°F and the loaf is cooked through.

1½ tablespoons Worcestershire sauce
2 pounds ground chicken
½ white onion, diced
1 cup breadcrumbs
¼ cup Parmesan cheese, grated
½ cup milk
1 large egg
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon pepper
½ teaspoon crushed red pepper flakes

Steps:

  • Preheat the oven to 350F. Lightly grease a 9x5 loaf pan. Line with parchment paper, leaving about an inch of overhang on both sides. This will help to easily remove the meatloaf from the pan.
  • In a large mixing bowl, mix together the ground chicken, onion, breadcrumbs, Parmesan cheese, milk, egg, Worcestershire sauce, salt, basil, oregano, garlic powder, onion powder, pepper, and red pepper flakes.
  • Mix up the glaze in a small bowl by whisking together the ketchup, brown sugar, and Worcestershire sauce.
  • Spoon a couple of tablespoons of the glaze into the bottom of the pan.
  • Add the meat mixture into the prepared pan. Bake in the 350F oven for 45 minutes.
  • Brush the glaze over the hot meatloaf.
  • Increase the oven temperature to 400F and bake an additional 15 to 20 minutes, or until the meatloaf reaches an internal temperature of 165F.
  • Cool 10 minutes before slicing.
