- Melt butter in a medium saucepan over medium heat. Stir in garlic, onion and chicken livers. Reduce heat to low, and simmer approximately 10 minutes, until chicken livers are tender and no longer pink.
- Place chicken liver mixture in a blender with dry sherry, cream cheese, hot sauce, salt and pepper. Blend until smooth. Transfer to a medium bowl, cover and chill in the refrigerator approximately 2 hours before serving.

CREAMY CHICKEN LIVER PâTé
French pâté is in fact easier to make than my grandmother's chopped liver, which called for rendering chicken fat. Here, you just soften onions in butter, cook the livers, cool, purée and refrigerate. You don't have to bother with soaking the livers in milk, a step found in many recipes. Season aggressively: you want to taste the pepper, the coriander, the brandy and even the allspice and clove. Finally, cook the liver quickly, over pretty high heat. What you want is to brown the outside while keeping the inside pink. This, perhaps, is another major difference between pâté and chopped liver, in which the livers are almost always cooked to death.

- In a spice grinder or clean coffee grinder, combine peppercorns, allspice, clove and coriander seeds; grind until fine and set aside.
- Melt 2 tablespoons butter in a skillet over medium-high heat; when foam subsides, add onion and cook until softened, about 3 to 4 minutes. Add livers to pan and sprinkle with salt; cook livers on one side until they begin to brown, about 2 minutes, then flip them and cook the other side. Be sure to keep heat relatively high so that the outside of livers sears and inside stays pink.
- Put onion, livers and their buttery juices into a food processor or blender with remaining butter, the cream, spices and brandy. Purée mixture until it is smooth; taste and adjust seasoning.
- Put pâté in a terrine or bowl, smooth top and put in refrigerator for 2 to 3 hours or until fully set. Serve pâté with bread or crackers.

- Set aside 1/2 cup butter to soften slightly.
- Place onion and apple in a food processor with the steel knife blade; process until coarsely chopped.
- Melt 3 tablespoons butter in a large skillet over medium heat. Add onion and apple; cook and stir until lightly browned, 5 to 10 minutes. Return onion and apple to food processor.
- Melt 5 tablespoons butter in the same skillet over high heat; cook chicken livers until browned and just done inside, about 5 minutes. Reduce heat to low and pour in brandy; allow to warm up without stirring. Carefully light the liquid; let flames subside.
- Transfer chicken liver mixture to the food processor with onion and apple. Add cream and process until very smooth. Transfer mixture into a bowl and refrigerate until cool, at least 30 minutes.
- Cut the softened 1/2 cup butter into pieces and process in the food processor; add about 1/3 of the liver mixture and blend about 5 seconds. Repeat 2 more times with remaining liver mixture. Add lemon juice, salt, and pepper and blend well.
- Transfer pate to a serving dish or several small dishes; top with 1 tablespoon melted butter. Cover loosely with plastic wrap; refrigerate until chilled and set, about 3 hours.

Steps:
- Place currants in a small bowl; cover with orange liqueur. Let soak until plump, about 1 hour.
- Melt 1/4 cup butter in a large skillet over medium heat. Cook and stir onion and garlic in the hot butter until softened, about 1 minute. Add chicken livers; cook and stir until no longer pink in the center, 5 to 8 minutes.
- Place remaining 3/4 cup butter, chicken liver mixture, heavy cream, thyme, and allspice in a food processor; blend until smooth. Transfer to a bowl and stir in currants and orange liqueur. Season pate with salt and pepper.
- Divide pate among small ramekins. Refrigerate until firm, at least 3 hours.

Steps:
- Rinse chicken livers and pat dry.
- Place livers in large bowl and pour over 3/4 cup Madeira and macerate for 1 hour.
- Drain and puree in blender.
- Pour in large bowl and add salt, pepper, nutmeg, thyme, marjoram and eggs.
- Set aside.
- Melt 1 T.
- butter in skillet and cook shallots and garlic until soft.
- Add wine, cognac, port and remaining madeira.
- Flame and reduce to 1/2.
- Remove from heat and cool slightly.
- Add clarified butter slowly while beating vigorously with wooden spoon.
- Sir in raisins and peppercorns.
- Place in buttered 1 1/2 quart pate mold or souffle.
- Place bay leaves atop.
- Cover with double layer of foil and lid.
- Place in boiling water bath.
- Bake 325 degrees 3 hours.
- Add water as needed.
- Remove and cool on rack.
- Chill in fridge 1 day before serving.

This recipe needs a small amount of preparation the day before. This recipe came from a friend who adapted it from a book called "Salads and Summer dishes". Please make sure that you use GREEN peppercorns and not black ones :) Cooking time is more than enough for presoaking the livers and fridge setting times. ZWT REGION: France.

- Soak the chicken livers in the milk overnight, and before using, drain off the milk and rinse the livers in cold water.
- Melt half the butter in a saucepan and sauté the onion gently until soft and golden but not dark brown.
- Add the chicken livers and the rest of the ingredients EXCEPT for the crushed green peppercorns and the rest of the butter. Cook the mixture until the livers become firm and change colour, about 10 minutes.
- Blend the liver mixture in the blender or a food processor and once smooth, stir in the crushed green peppercorns. Add more salt and pepper to taste.
- Transfer to a serving dish, the mixture should "not quite" fill it up. Refrigerate for 2 hours or until firm. Melt the remaining butter, and carefully spoon it over the pate, refrigerate until set (approx 1 hour) garnish with whole green peppercorns and coriander.

CHICKEN LIVER PARFAIT WITH GREEN PEPPERCORNS (GRAVETYE MANOR)
Steps:
- Melt butter over very low heat. Remove from heat and allow to sit until sediment settles on the bottom. Strain carefully through several thicknesses of cheesecloth, discarding sediment.
- Line a 10-inch by 3-inch terrine with thin slices of the pork fat.
- Drain the raisins, reserving the liquid. Pat raisins dry on paper towel.
- Strain the milk from the livers. Place the livers in blender and with the power on slowly add warm clarified butter, processing until livers are pureed. Add the soaking liquid and process until smooth.
- Stir in all the remaining ingredients. Adjust seasonings.
- Pour the mixture into the prepared terrine; place the sprig of thyme on top and cover with pork fat.
- Place in a pan containing boiling water and place in 350-degree oven. Cook until the top is quite firm when pressed, about an hour to an hour and 10 minutes.
- Remove from hot water bath and cool. Refrigerate and chill completely.
- Slice when cold and serve. It is excellent with brioche toast.

- In a wide frying pan, melt the 2 tsp butter over medium-high heat; add green onions, cook, stirring, until limp.
- Add chicken livers; cook, turning, until browned.
- Stir in wine, salt, thyme and pepper; reduce heat and simmer, uncovered, for 3 minutes.
- Add the 2 T parsley.
- Transfer mixture to a food processor and whirl until smooth; with motor running, drop in butter pieces, a few at a time, and whirl until well combined.
- Cover and refrigerate for at least 3 hours or for up to 4 days.
- Garnish with additional parsley, if desired.

- Combine chicken livers and milk in a bowl. Let soak in the refrigerator, about 2 hours.
- Melt 2 tablespoons butter in a saucepan over medium heat. Add onion; cook and stir until soft, about 5 minutes. Add 1 1/2 teaspoon black peppercorns, garlic, red pepper flakes, and thyme; cook and stir until fragrant, 1 to 2 minutes.
- Remove chicken livers from the milk with a slotted spoon; add to the saucepan with balsamic vinegar and bay leaves. Season with salt and pepper. Cook until chicken livers are tender and no longer pink, 10 to 12 minutes. Remove from heat and cool slightly, 5 to 10 minutes.
- Transfer chicken liver mixture to a food processor. Add remaining 1 1/2 teaspoons black peppercorns and Scotch; blend until smooth. Add remaining 6 tablespoons of butter and pulse until fully incorporated into the mixture.

- In a large skillet, saute chicken livers and onion in chicken fat for 10 minutes or until livers are no longer pink. - To make the pâté:.
- In a small, covered bowl, soak the cherries in the brandy overnight at room temperature.
- Then drain cherries, pressing out brandy, and reserve cherries and brandy separately.
- In a large sauté pan, heat the butter over medium-high heat until melted.
- Add the onions and cook, stirring often, about 3 minutes, or until translucent.
- Add the garlic and cook 30 seconds, and then add the livers.
- Sprinkle with salt, allspice and pepper.
- Cook about 2 minutes, turning livers as needed.
- Add reserved brandy and increase heat to high.
- Cook until livers are just done, and brandy/juice has cooked down until pan is almost dry, about 1½ to 2 minutes.
- Immediately remove from heat and place mixture in a food processor.
- Process until smooth, then add reserved cherries (and nuts) and pulse just enough to mix - not to chop them.
- Pack pâté in a 2-cup crock or pâté mold.
- Cover surface with plastic wrap and chill pâté at least 4 hours, can be prepared up to 3 days before serving.
- Serve with Sage Toast.
- To make Sage Toast:.
- Heat oven to 375 degrees.
- Meanwhile, heat oil and sage in a very small pan until just warmed.
- Remove from heat and let sit for 5 to 10 minutes to infuse sage flavour.
- Lay out baguette slices on a baking sheet and lightly brush slices with the oil.
- Sprinkle with salt and bake for about 10 minutes or until crisp.
CHICKEN LIVER PASTI (PâTé)
A very tasty appetizer that goes over very well at any party. The liver taste is hidden by the onion and Sherry. A Swedish friend helped me to develop this recipe.

Steps:
- In a medium size saucepan, add water, chicken livers, sliced onion and bring to boil.
- The onion used in cooking the chicken livers absorbs and reduces the liver odor.
- Reduce heat, cover and simmer for 20 minutes.
- When cooked, drain, remove onions and discard.
- Cut away any hard muscle portions of the liver and discard.
- In a food processor or blender, add liver and Sherry and process until smooth.
- Add 1/4 cup of finely chopped onion, butter, salt, pepper, mace and blend well.
- Remove pâté from food processor, form into a ball using 2 large spoons and place on a serving plate or platter.
- Refrigerate for 1 hour to chill.
- Serve with thinly sliced brown bread, rye crisp, crackers or chips.
- Refrigerate any unused portion.
