CHICKEN OR STEAK WITH BALSAMIC BBQ SAUCE

1 cup balsamic vinegar
3/4 cup ketchup
1/3 cup brown sugar
1 garlic clove, minced
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 pieces chicken (any combination of breast or leg-and-thigh pieces) or 4 pieces of New York strip or Club strip steak
Salt and freshly ground pepper

Steps:

  • For the BBQ sauce:
  • Combine all the ingredients in a small saucepan and stir until all the ingredients are incorporated and the mixture is smooth. Simmer over medium heat until reduced by 1/3, about 15 to 20 minutes.
  • For the chicken or steak:
  • Place a grill pan over medium heat or preheat a gas or charcoal grill. Season the meat with salt and pepper. Lightly coat with some of the BBQ sauce using a pastry brush. Place the meat on the grill. Place the remaining BBQ sauce, still in the small saucepan, over low heat or on the edge of a gas or charcoal grill and allow to gently simmer while the meat cooks.
  • Cook the chicken about 8 minutes per side. Cook the steaks starting at about 4 minutes per side until a meat thermometer reads the desired temperature, 120 degrees F for medium rare, 135 degrees F for medium (about 6 minutes per side), 155 degrees F for well done (about 9 minutes per side). Continually brush the meat with BBQ sauce every few minutes. Remove the meat from the grill and let rest for at least 5 minutes. Serve with the heated BBQ sauce alongside.
  • Alternately, the chicken can be baked in the oven. Preheat the oven to 375 degrees F. Place the chicken skin side up in a baking dish and bake for 25 minutes. Remove the baking dish from the oven and spoon the BBQ sauce all over the top of the chicken. Return the baking dish to the oven and bake for another 15 minutes.

½ cup olive oil
½ cup honey

1 (8 ounce) can diced tomatoes
1 (4 ounce) can tomato paste
1/2 cup catsup

Extra-virgin olive oil, for liberal drizzling plus 2 tablespoons
1/4 pound pancetta, chopped
2 red onions chopped
Salt and black pepper
1 fresh bay leaf
2 pounds ground chicken
1 1/2 tablespoons fennel seed, lightly toasted
1 teaspoon crushed red pepper flakes -- go heavier for extra spicy
1/4 teaspoon allspice
Zest and juice of 1 orange
3 tablespoons finely chopped rosemary, 4 to 5 sprigs
4 cloves garlic, grated with a microplane or the small side of a box grater
2 generous handfuls of grated Parmigiano Reggiano or Romano cheese
2 tablespoons Worcestershire sauce, eyeball it
1/2 cup aged balsamic vinegar
3 tablespoons honey or dark brown sugar
1/2 endive, chopped
1 cup arugula leaves, shredded
1/2 radicchio, chopped
4 crusty rolls, split, toasted and drizzled with extra-virgin olive oil or buttered

Steps:

  • Put 2 tablespoons extra-virgin olive oil in a pot over medium high heat. If you're cooking outside you can cook over the grill flames. Add the pancetta to the pot and crisp it up, 3 to 4 minutes, add the onion to the pot and season with salt and pepper - go heavy on that pepper. The black pepper will really balance out the sweetness of your sauce later on. Add the bay leaf to the pot.
  • While the onions cook, place the ground chicken in a bowl and add fennel seed, red pepper flakes, allspice, orange zest, rosemary, garlic, salt and pepper, to taste, and cheese. Mix the meat with seasonings and form 4 large patties. Make a shallow dent in each patty at the center of it to prevent the burger from bulging up as it cooks. Wash up and drizzle the patties liberally with extra-virgin olive oil. Place the patties on the grill and cook 6 to 7 minutes on each side.
  • When the onions are very soft and begin to caramelize, remove the bay leaf and add the Worcestershire sauce, balsamic vinegar, honey or sugar, and orange juice. Let the sauce thicken up and sweeten up 6 to 7 minutes until the liquids are syrupy. Adjust the black pepper level to your taste.
  • Mix the chopped endive, shredded arugula and chopped radicchio together. Pile the chopped lettuces on the bun bottoms top with burgers and lots of onion barbecue sauce. Set bun tops in place and serve.

In our house, we don't agree on how much barbecue sauce should be added to our pulled chicken. Some like the sauce to be dripping, and I like a minimal amount. This is a simple recipe for pulled chicken, and you may add any amount of barbecue sauce you would like. You could also use this pulled chicken as a protein for a green salad, or a filling for a taco, with a few seasoning tweaks. Or, dice it (instead of pulling it) and use in a mayonnaise-based chicken salad. However you choose to use it, you can start it on the stovetop, finish it in the oven, and have dinner on the table in less than an hour.

3 pounds bone-in chicken breast halves, with skin
salt and ground black pepper to taste
2 tablespoons avocado oil
½ cup barbeque sauce, or to taste

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Pat chicken breasts dry with a paper towel. Season both sides with salt and pepper.

  • In a medium size, saucepan mixes together all the barbeque sauce ingredients. Bring the mixture to a boil over medium-high heat, reduce heat to simmer and cook uncovered until mixture starts to thicken. (About 20 minutes.)
  • Preheat grill on high heat – while the grill is heating pat chicken dry and rubs the pieces with the spices; getting some of it under the skin whenever possible.
  • Clean and oil the grill grates, turn all burners off except for the primary burner trying to maintain an indirect heat of 350F after the grill is closed. (I have a 4 burner grill for me I need to have the primary burner on high with the second one at about half)
  • Place the chicken skin side down on the cool side of the grill. Cover and cook until the skin starts to brown. (About 30 minutes depending on the temperature) uncover the grill, flip the chicken, and move the pieces closer to the burners brushing with the barbeque sauce. Flip and coat the chicken every few minutes until chicken is sticky, move the chicken over the direct heat, continue flipping and brushing the chicken with the sauce until chicken is well glazed and has a slight char. Remove the chicken from the grill when the internal temperature is reached of 160F. for the breasts, and 175 for thighs and legs.
