CHINESE HOT DOG BUNS
An Asian bakery classic and the food of my childhood, these homemade Chinese Hot Dog Buns recipe is better than what you get in any Chinese bakery. Really!

- In the bowl of a mixer, add the heavy cream, milk, egg, sugar, cake flour, bread flour, yeast, and salt (add it in that order). Using the dough hook attachment, turn on the mixer to "stir." Let it go for 15 minutes, occasionally stopping the mixer to push the dough together.
- After 15 minutes, the dough is ready for proofing. Cover the bowl with a damp towel and place in a warm spot for 60-90 minutes, until the dough doubles in size.
- In the meantime, heat a tablespoon of oil in a skillet over medium heat. Add the hot dogs, and allow them to crisp slightly and get some color on them. Set aside on a plate to cool.
- After the hour of proofing, put the dough back in the mixer and stir for another 5 minutes to get rid of air bubbles. Dump the dough on a lightly floured surface and cut into 12 equal pieces.
- Preheat the oven to 350 degrees F. Take each piece of dough and roll it into a 10-12 inch rope, keeping the middle thicker than the ends. Roll the rope around a hot dog, tucking in the ends. Place on a parchment-lined baking sheet (keep the buns 2-3 inches apart). Repeat until all the buns are assembled.
- Cover the baking sheet with a kitchen towel and allow the buns to rise in a warm place for another hour. The buns should close to double in size. Brush with egg wash, and bake the buns for 14 minutes, rotating the pans halfway through baking.
- Remove from the oven and immediately brush the buns with sugar water. This last step gives them that signature Chinese bakery shine.

CHICKEN IN A HOT DOG BUN
A delicious lunch time meal that is healthier than hot dogs. Very Good!! In this recipe, I prefer not to mix the lettuce in with the chicken mixture. I put the lettuce in the bottom of the hot dog bun as a bed for the chicken mixture; the choice is yours.

- Butter the outside of each hot dog bun and grill in a hot skillet until golden brown on each side, about a minute per side; set aside.
- In a bowl, combine cooked chicken, celery, lettuce, salad dressing, salt and pepper. Lightly toss.
- Stuff each bun with chicken mixture.
- Makes 6 servings.

BACON-WRAPPED CHICKEN DOGS
If you're looking for a different alternative to put on your hot dog bun, try these bacon-wrapped chicken dogs. Made with strips of boneless chicken breasts that are baked with a secret sauce and coated with barbecue to finish, these chicken dogs are tender and juicy. Plus, you can feel good knowing exactly what ingredients went into your hot dog!

- Preheat the oven to 500 degrees F (260 degrees C). Line a baking sheet with foil and spray foil with cooking spray.
- Stir 1 tablespoon mayonnaise, mustard, pepper, and cayenne together in a small bowl.
- Slice chicken breast in half lengthwise, then slice each piece in half again. Align the thicker end of one piece of chicken with the thinner end of another, forming a consistent thickness that would fit into a hot dog bun. Repeat with remaining two pieces.
- Transfer chicken to a plate and season chicken with kosher salt. Spread mayonnaise mixture over top and toss to coat.
- Re-align chicken pieces and wrap each chicken "dog" with 2 slices bacon, making sure you don't wrap too tightly and that you tuck the ends of the bacon underneath the chicken. Place on the prepared baking sheet.
- Bake in the center of the preheated oven until the bacon is browned and the chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Generously spread hot dog rolls with mayonnaise and add jalapeno slices. Place chicken dogs on rolls and top with barbecue sauce.
