CHICKEN CORDON BLEU
Steps:
- Preheat the oven to 350 degrees F.
- Take a piece of chicken and place 2 ounces ham and 1 ounce Gruyere cheese in the middle. Roll up the chicken breast tightly and place toothpicks in the ends and middle. Place the chicken breasts in an oiled baking dish and bake for 18 minutes.
- For the breading: Combine the all-purpose flour, breadcrumbs, wheat flour, rice flour, Cajun seasoning, garlic powder, paprika, salt, pepper and cayenne pepper, mix well, and place on a large platter.
- For the hollandaise sauce: Gently place 4 egg yolks in a food processor and add a pinch of salt, white pepper, paprika, the lemon juice and hot sauce. Place the warmed clarified butter into the food processor very slowly until it thickens. To thicken the sauce, add an egg yolk and to thin it out add warm water.
- Place the baked chicken cordon bleu in the egg wash and then coat evenly with the breading mixture. Repeat process again.
- Deep-fry the breaded chicken at 325 degrees F for 3 minutes. Drizzle the hollandaise sauce over the top of the chicken.
EASY CHICKEN CORDON BLEU

- In a small bowl, mix together the mustard and mascarpone. Set aside.
- Preheat the broiler to high.
- Heat a large ovenproof skillet over medium-high heat. Add the oil and continue to heat for an additional 1 minute. Sprinkle the chicken breasts evenly with 1 teaspoon salt. Place the chicken in the skillet and cook on the first side until golden brown, about 4 minutes. Flip the chicken and continue to cook until just cooked through, about 2 minutes more. Remove from the heat.
- Lay 1/2 slice of cheese on each chicken breast. Lay 2 slices of ham on top of the cheese on each breast. Divide the mustard sauce evenly over the ham and top with the remaining cheese slices. Broil until the cheese is melted, golden brown and bubbly, about 2 minutes.

- Preheat oven to 350 degrees F.
- Lay the chicken breast between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Remove the top sheet of plastic and lay 2 slices of prosciutto neatly over the top to cover the breast and sprinkle a quarter of the cheese over the prosciutto. Tuck in the sides of the breast and roll up tight like a jellyroll inside the plastic wrap. Squeeze the log gently to seal and twist both ends tight to form a nice log. Repeat with remaining chicken.
- Season the flour with salt and pepper. Mix the bread crumbs with thyme, garlic and kosher salt, pepper, and melted butter. The butter will help the crust brown. Beat together the eggs and season so the flour, the eggs and the crumbs are all seasoned.
- Remove the plastic wrap. Lightly dust the chicken with flour, dip in the egg mixture and gently coat in the bread crumbs. Lightly coat a baking pan with olive oil and carefully transfer the roulades onto it. Bake for 20 to 25 minutes until browned and cooked through.
- Cut into pinwheels and serve on top of Brussels Sprout Hash with Chicken Jus and Cranberry Chutney, if desired.
CHICKEN CORDON BLEU

- Preheat oven to 350 degrees F. Lay the chicken between 2 pieces of plastic wrap. Using the flat side of a meat mallet, gently pound the chicken to 1/4-inch thickness. Take care not to pound too hard because the meat may tear or create holes. Lay 2 slices of cheese on each breast, followed by 2 slices of ham, and 2 more of cheese; leaving a 1/2-inch margin on all sides to help seal the roll. Tuck in the sides of the breast and roll up tight like a jellyroll. Squeeze the log gently to seal.
- Season the flour with salt and pepper; spread out on waxed paper or in a flat dish. Mix the breadcrumbs with thyme, kosher salt, pepper, and oil. The oil will help the crust brown. Beat together the eggs and water, the mixture should be fluid. Lightly dust the chicken with flour, then dip in the egg mixture. Gently coat in the bread crumbs. Carefully transfer the roulades to a baking pan and bake for 20 minutes until browned and cooked through. Cut into pinwheels before serving.

- Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
- Pound chicken breasts to 1/4 inch thickness.

- Pound chicken breasts if they're too thick.
- Place a cheese and ham slice on each breast within 1/2 inches of edge.
- Fold edges of chicken over filling and secure with tooth picks.
- Mix flour and paprika and coat chicken.

- Sprinkle the chicken breasts with salt, pepper, garlic powder, and onion powder, tossing to coat evenly.
- On a cutting board, place a chicken breast between two sheets of plastic wrap and pound until about ½ inch (1 cm) thick with a meat mallet, rolling pin, or heavy pan.
- Remove the plastic wrap and place 2 slices of Swiss cheese, then 2 slices of ham, then another layer of Swiss cheese, and another layer of ham. Evenly roll the chicken and place onto a new sheet of plastic wrap.
- Wrap the chicken in the plastic wrap tightly and use the excess plastic on the sides to twist, firming up the roll of chicken cordon bleu as you work. Tie the excess plastic. Repeat with the remaining ingredients, then chill the rolls in the fridge to set for 30 minutes.
- Meanwhile, preheat a tall-sided pan with 2 inches (5 cm) of oil to 325°F (170°C).
- After the rolls are set, prepare 2 separate large, wide dishes with the flour, beaten egg, and bread crumbs. Dredge the chicken first in the flour, then the egg, and then bread crumbs.
- Place the breaded chicken cordon bleu in the oil and cook for about 5 minutes per side, or until the outside is an even golden brown. If a good color is achieved and the chicken's center is still not 165°F (75°C), place the chicken cordon bleu on a wire rack set over a baking sheet and finish the chicken in the oven at 325°F (170°C) until that temperature is reached.
- Meanwhile, prepare the sauce. In a 1 ½-quart saucepan over medium heat, melt the butter and cook the garlic until soft. Add the flour and whisk for 1 minute.
- Add the milk and whisk until fully combined with the roux and no lumps remain. Continue whisking until the mixture comes to a simmer and has thickened.
- Add the mustard, Parmesan cheese, salt, and pepper and whisk to combine. Remove the pan from the heat.
- Slice the chicken and serve drizzled with Dijon sauce.

- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with heavy-duty aluminum foil.
- Combine bread crumbs and 1 teaspoon melted butter in a small bowl.
- Melt 2 tablespoons butter in a saucepan over medium heat. Cook and stir ham and onion in melted butter until onion turns translucent, about 5 minutes. Stir in thyme and cook for 1 minute. Add flour and cook, stirring constantly, until flour has lost its raw smell, about 3 minutes. Remove from heat and pour in 1/2 cup plus 1 tablespoon milk. Place saucepan back over medium heat and cook, stirring constantly, until sauce is thick, 1 to 2 minutes.
- Remove saucepan from heat and add 1/2 cup shredded Gruyere cheese, Dijon mustard, salt, black pepper, cayenne pepper, and nutmeg. Stir to combine.
- Stir chicken and diced pickle into cheese sauce.
- Place toasted bread slices on the prepared baking sheet. Brush one side of each bread slice with 3/4 teaspoon melted butter. Turn slices over and top each with 1/4 of the cheese sauce. Sprinkle 1 tablespoon shredded Gruyere cheese over the top of each sandwich. Top with bread crumb mixture.
- Bake sandwiches in the preheated oven until cheese is bubbling and chicken mixture is hot, 15 to 20 minutes.

This is one of my favorite chicken dishes. It's something like chicken corden bleu but much better. A friend's mother was a caterer this was one of her most popular recipes. She says the recipe takes a little time (about an hour or so) but it's well worth it. The dish can be frozen for 2 to 3 months and it gets better when you reheat it.

- Open each whole breast so it lies flat. Pound breasts between sheets of waxed paper with a mallet until thin, leaving each whole breast intact.
- Arrange opened breasts on a tray, smooth side down. Cut a piece of ham and a piece of cheese the same size as half the breast and arrange on top of it.
- Fold breast in half to cover ham and cheese. Seal edges by pounding with mallet. Repeat with remaining breast.
- Roll breasts in 2 tablespoons of flour to coat, shake off excess.
- Heat 2 tablespoons of butter and the oil in a 10-inch skillet.
- Add chicken breasts; cook until underside is golden brown.
- Turn and cook other side 6 to 8 minutes or until golden brown.
- Place breasts on a platter and keep warm in a low oven.
- Add mushrooms, shallots to skillet in which chicken cooked; cook until tender and lightly browned.
- Add tomatoes and wine; simmer until most of the liquid has evaporated.
- Stir in heavy cream; cook until reduced by half. Remove from heat.
- In a 1 quart saucepan melt remaining butter over low heat.
- Stir in the remaining flour with a wire whisk; blend well.
- Add light cream; cook, stirring constantly, until thickened and smooth.
- Add salt and pepper.
- Gradually add sauce to tomato mixture in the skillet and cook over low heat until heated through.
- Pour sauce over chicken and sprinkle with chopped parsley.
CHICKEN CORDON BLEU SANDWICHES

- Preheat the broiler. Line a baking sheet with foil and evenly space the chicken cutlets in the center. Brush the chicken with 1 tablespoon olive oil and season with salt and pepper. - Combine eggs and milk in a small bowl.
- Combine flour and breadcrumbs in a larger bowl.
- Pound the chicken breasts to approximately 1/4 inch between waxed paper.
- Place 1 slice swiss cheese on chicken breast, followed by 1 slice ham, then another slice of cheese.
- Tuck in sides of chicken and roll chicken in a tight roll. Secure with toothpicks.
- Dip chicken into egg mixture, place into breadcrumb mixture and coat thoroughly.

This is a delicious, easy dish that is nice enough for company and cooks in one pan. It's been a favorite of my husband's for over 20 years. It's not fried, and the sauce is terrific over rice and vegetables. Even the kids will eat this, and you can use low-fat ingredients if you prefer.

- Pound breasts to uniform thickness.
- Place one slice each of the ham and cheese on top of each breast.
- Starting from the narrow end, roll breasts, securing with two toothpicks each.
- Melt butter in skillet and brown rolled breasts on all sides.
- Blend cream of chicken soup, seasoned with herbs, salt and pepper with no more than 1/3 cup of water, wine or broth.
- Pour soup over chicken and simmer until chicken is cooked through, about 35 minutes.
- Taking the top on or off the pan will help get your sauce to the desired consistence.
- Serve hot, over white rice, with peas and onions.
- Don't forget to take out the toothpicks!

- Preheat oven to 350 degrees.
- Slice chicken breasts into bite-sized strips and brown in oil.
- If using seasoning, sprinkle chicken during cooking process.
- Slicing is much easier if chicken is partially frozen (or partially thawed).
- While chicken is cooking, spray a 10x15 pan and spread potatoes in the bottom.
- Stack deli ham and slice into roughly 1-inch square pieces.
