1 (16-ounce) bag frozen corn kernels
3 cups frozen O'Brien potatoes (cubed hash brown potatoes with onions and peppers)
2 cups frozen diced onions (see note)
2 (14 3/4-ounce) cans cream-style corn
1 (16-ounce) jar of your favorite salsa (see note)
1 (15-ounce) can black beans (preferably organic or reduced-sodium), rinsed and drained
1 (4-ounce or 4.25-ounce) can diced green chiles, undrained
1 1/2 teaspoons chili powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons kosher salt
1 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon oregano
1 pound boneless, skinless chicken breasts
optional for serving: chopped cilantro and shredded, reduced-fat cheddar cheese

Steps:

  • Directly in your slow cooker insert, whisk together milk and cornstarch.
  • Add corn, potatoes, onions, cream-style corn, salsa, black beans, green chiles, chili powder, garlic powder, salt, cumin, black pepper, and oregano. Stir to combine thoroughly.
  • Add chicken breasts to mixture, pushing them to the bottom of the slow cooker.
  • Cook on low (6-8 hours), or on high (5 hours).
  • Just before serving, use two forks to shred the chicken. Or, remove the chicken from the slow cooker onto a plate or cutting board and cut it into small cubes, and then return the chicken to chowder in the slow cooker.
  • Serve chowder sprinkled with cilantro and cheese, if desired.

3 bacon slices
1 pounds skinless boneless chicken breasts, (cut into bite-sized pieces)
1 cup chopped onion
1 cup diced red bell pepper
2 garlic cloves (minced)
1 4 ounce can diced green chiles
5 1/4 cups low-salt chicken broth
2 cups diced peeled russet potatoes
1 cup frozen whole-kernel corn
1 14 ounce can creamed corn
1/2 cup all-purpose flour
2 cups skim milk
1 1/2 cups grated sharp Cheddar cheese (plus more for garnishing)
1/4 teaspoon cayenne pepper
salt & pepper
chopped scallions (for garnish)

Steps:

  • Cook bacon in a large saucepan over medium heat until crispy. Remove the bacon from the pan and let drain on a piece of paper towel. Set aside.
  • To the bacon drippings, add chicken, onion, red bell pepper, and garlic. Cook, stirring occasionally, for 5 minutes. Add diced green chiles and cook for an additional minute. Add chicken broth and potatoes. Bring to a boil, reduce heat, cover, and simmer for 20 minutes, or until the potatoes are tender. Add frozen whole-kernel corn and creamed corn, and stir well.
  • Pour flour into a medium bowl. Gradually whisk in skim milk. Add the milk mixture to the soup and cook over medium heat, stirring frequently, until the mixture thickens, about 15 minutes. Stir in 1½ cups grated sharp Cheddar cheese and cayenne pepper. Season with salt and pepper. Ladle the soup into bowls and garnish with chopped scallions, grated Cheddar cheese, and crumbled bacon. If desired, break some tortilla chips over each portion of soup.

3 strips bacon, roughly chopped
1 medium onion, diced
3 tablespoons flour
One 15-ounce can chicken broth
3 cups milk
3 ears white corn, kernels removed and cobs reserved
2 sprigs fresh thyme
2 1/2 cups shredded chicken from store-bought rotisserie chicken
Salt and freshly ground black pepper

Steps:

  • In a large pot over medium heat, add the bacon and cook until browned, about 5 minutes. Add the onions and cook until softened, about 5 minutes. Add the flour, stirring constantly for 1 minute, until the flour is just slightly golden. Slowly add the chicken stock, whisking constantly to avoid lumps. Whisk in the milk and add the corn cobs and thyme to the pot. Bring to a simmer and cook about 15 minutes, stirring occasionally to infuse the corn flavor into the soup. Remove the cobs and thyme from the pot. Stir in the corn kernels and shredded chicken. Bring back to a simmer, remove from the heat, ladle into bowls and serve hot.

  • Add flour and whisk until all veggies are coated and a film starts to form on the bottom of the pan.Add chicken broth. I bought a ton of Hatch green chiles in August and thought a soup/chowder would be a good way to use them in the winter. They were spicier than I expected so I had to use rice and corn in the soup to cut the spice level. My parents loved it so I passed it on to them, then the girls at work loved it so I passed the recipe on to them also. Hopefully, y'all will love it too. It's a nice comfort food. Serve topped with cheese.

3 Hatch chile peppers, halved and seeded
4 cups water, or more as needed
1 (15 ounce) can cream-style corn

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; place chile peppers cut-side down on top.

This is my best friend's and my attempt to replicate the Green Chicken Chile Soup served at Los Arcos Steakhouse in Truth or Consequence, New Mexico. We love it and have it every time we are at the lake. I called several years ago and they will not give out the recipe. My best friend and I decided we needed to try to replicate it and used our husbands as guinea pigs -- we are close! This is fabulous any time but especially good on a COLD New Mexico night!

3 -4 chicken breasts, boneless, skinless, cooked & cubed
1/2 cup green chile, peeled & chopped

1 cube chicken bouillon
4 cups milk
2 medium potatoes, partially cooked & diced
1 tablespoon garlic pepper (or to taste)

This is to die for. It's just a regular corn chowder made with fresh corn shaved off the cob, which is yummy enough as it is.

2 slices Bacon, Cut Into 1/2-inch Pieces (or Smaller)
2 tbsp. Butter
1 1/2 whole Yellow Onion, Diced
5 ears Corn, Shucked (about 4 Cups)
2 whole Chipotle Peppers In Adobo Sauce, Finely Diced
1 whole (4 Oz. Size) Diced Green Chilies
32 oz. fluid Low Sodium Chicken Broth
1 1/2 c. Heavy Whipping Cream
1/2 tsp. Kosher Salt (more To Taste)
3 tbsp. Corn Meal OR Masa
1/4 c. Water

Steps:

  • (Carefully) slice the corn kernels off the cob. Set aside.Add bacon pieces to a pot or dutch oven over medium heat. Cook for a couple of minutes. Throw in diced onion and stir, cooking the onion for 3 to 4 minutes. Add butter and melt. Add corn. Stir and cook for one minute. Add both kinds of chilies and stir. Pour in chicken broth and cream. Add salt. Stir and bring to a boil. Reduce heat to low. Combine cornmeal (or masa) with water. Stir to combine, then pour into the chowder. Cover and cook for 15 minutes over low heat. If chowder needs more thickening, add another tablespoon of cornmeal mixed with water. Cook for another ten minutes.Serve with crusty sourdough bread or in a bread bowl. Absolutely yummy!

1 c onion, chopped
4 can(s) great northern beans, 1/2 cans drained
1 c fat free half and half
1 can(s) (4.5oz) green chilies
3 chicken bouillon cubes
1 tsp cumin
1/2 tsp chili powder
1 c frozen corn
1/2 tsp onion powder
1/2 tsp adobo
1 Tbsp bacon salt
dash(es) tabasco
salt and pepper to taste

  • 1. In large saucepan spray with cooking spray and cook chicken and onion until chicken is lightly brown. Add all remaining ingredients, mix well, bring to a boil, reduce heat and simmer for 15 minutes, until slightly thickened. Mash beans slightly with hand held blender or potato masher. Add corn startch and water to thicken to desired consistancy.
  • 2. Serve topped with sour cream and cheddar cheese. May also serve with cilantro and salsa.

1 cup milk (I use 1% cows milk. I suspect almond and coconut milk will also work)
Juice of 1 lime
1 (15 ounce) can white beans (navy or cannellini), rinsed and drained
Shredded cheddar or pepper jack cheese, diced green onions, minced cilantro, diced avocado, crushed tortilla or corn chips, sour cream or yogurt

Steps:

  • Select sauté on the pressure cooker and add oil. When hot, add onions, garlic, jalapeno, red bell pepper, potatoes, and corn. Sauté for 3-4 minutes, just until the vegetables start to soften.
  • Add salt and spices; stir to distribute.
  • Add chicken tenderloins and nestle them down into the veggies and spices (this will help flavor the chicken as it cooks). Add chicken broth.
  • Secure the lid and turn pressure release knob to a sealed position. Cook at high pressure for 5 minutes.
  • When cooking is complete, let the pressure release naturally for 5-10 minutes, then release any remaining pressure.
  • Remove chicken to a plate.
  • Scoop 3-4 ladles of soup into a blender (more or less depending on how chunky/smooth you want the soup). Add sour cream to the blender and blend until smooth. Note: the soup will be very hot, so start on low, then gradually increase the blender to high to prevent splatters. I like to put a hand towel over the lid, just in case. Stir pureed soup back into the pot.
  • Add milk, lime juice, and beans; stir.
  • Shred or chop chicken into bite-size pieces; stir into soup.
  • Taste and season with extra salt if needed (I typically add another teaspoon).
  • Serve hot with a garnish of cheese, green onions, cilantro, avocado, crushed chips, and a dollop of sour cream or yogurt.
