8 oz (250 g) frozen or fresh cheese tortellini, about 3 1⁄2 cups (875 mL)
1⁄2 cup (125 mL) creamy Caesar dressing
1⁄4 tsp (1 mL) freshly ground black pepper
1⁄4 cup (50 mL) finely chopped fresh basil or parsley
1 1⁄2 to 2 cups (375 to 500 mL) bite-sized cooked chicken pieces or shrimp
1⁄4 cup (50 mL) toasted slivered almonds
1⁄4 cup (50 mL) grated Parmesan

Steps:

  • 1. Add tortellini to a generous amount of salted boiling water; boil for minimum time on package, usually about 8 minutes. Rinse tortellini under cold running water until cool; drain. 2. Meanwhile, stir dressing with black pepper and basil. Turn pasta in to dressing. To avoid breaking up pasta, use a big spoon to carefully mix the salad with a lifting motion from bottom. Salad can be covered and refrigerated for up to a day. 3. When ready to serve, gently fold in chicken and nuts. Strew Parmesan overtop; serve with a baguette and seasonal vegetables.

1 cup diced onions
1 tablespoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
3 cups Progresso™ chicken broth (from 32-oz carton)
1/2 cup heavy whipping cream
1 package (20 oz) refrigerated cheese tortellini
2 cups chopped cooked chicken
1 package (10 oz) fresh broccoli florets (about 4 cups)
4 oz (half of 8-oz package) cream cheese, cut into cubes and softened
Shredded Parmesan cheese, if desired

Steps:

  • In 5-quart Dutch oven, melt butter over medium-high heat. Add onions, Italian seasoning, salt and pepper flakes. Cook 4 to 6 minutes, stirring frequently, until onions begin to brown on edges.
  • Stir in broth and whipping cream; heat to boiling over high heat. Stir in tortellini, chicken and broccoli; return to boiling. Reduce heat; simmer uncovered 5 to 7 minutes, stirring frequently, until tortellini is cooked and broccoli is tender.
  • Remove from heat; stir in cream cheese until melted. Let stand 5 minutes; stir. Top with Parmesan cheese.

1 pound boneless skinless chicken breasts, cut into 1-1/2-inch pieces
1/3 cup finely chopped onion

2 garlic cloves, minced

1 package (10 ounces) hearts of romaine salad mix
1-1/2 cups grape tomatoes
1 can (6-1/2 ounces) sliced ripe olives, drained
3/4 cup creamy Caesar salad dressing
3/4 cup shredded Parmesan cheese
6 bacon strips, cooked and crumbled

Steps:

  • Cook tortellini according to package directions. Drain; rinse with cold water., Meanwhile, in a small bowl, combine chicken, onion, oil, garlic, salt and pepper; toss to coat. Heat a large skillet over medium-high heat. Add chicken mixture; cook and stir 4-6 minutes or until chicken is no longer pink. One 3 1/2- to 4-pound organic whole chicken, rinsed, patted dry, neck reserved
Coarse salt
5 cloves garlic, peeled
2 sprigs fresh thyme
2 slices day-old bread, cut into 1-inch cubes
3 tablespoons unsalted butter, cut into small cubes, room temperature
8 ounces store-bought cheese tortellini

Steps:

  • Preheat oven to 350 degrees. Remove wing tips from chicken and place in a small roasting pan along with neck; set aside. Season cavity of chicken with salt; stuff with garlic, thyme, and bread, making sure to cover opening with some of the bread. Spread butter evenly under the skin, covering the breast meat. Truss chicken with kitchen twine, and season with salt. Transfer chicken, breast-side up, to roasting pan on top of neck and wing tips. Roast, basting frequently, until juices run clear, 1 to 1 1/2 hours.
  • Remove chicken from pan; let cool. Place roasting pan on stove over medium-high heat. Add 1/2 cup water, stirring, and cook, scraping up any browned bits from the roasting pan. Strain juices into small bowl; skim any fat, and discard. Set aside.
  • In a medium pot, bring 2 1/2 quarts salted water to a rolling boil. Cook tortellini according to package directions; drain, and return to pot.
  • Meanwhile, remove breasts, legs, and wings; discarding skin and bones. Shred half of the chicken, reserving remaining meat for another use. In same pot, toss together shredded meat, juices, and tortellini. Serve immediately.

Steps:
