CHICKEN WITH MORELS
Steps:
- Preheat the oven to 375 degrees F.
- Lift the morels carefully from the hot water in order to leave any grit behind in the liquid. Rinse a few times to be sure all the grittiness is gone. Discard the liquid and dry the morels lightly with paper towels. Set aside.
- Sprinkle the chicken breasts with salt and pepper. Dredge them in flour and shake off the excess. Heat half the clarified butter in a large saute pan and cook the chicken in 2 batches over medium-low heat until browned on both sides, 8 to 10 minutes. Remove to an ovenproof casserole.
- Add the rest of the clarified butter to the pan along with the shallots, drained morels, and garlic. Saute over medium heat for 2 minutes, tossing and stirring constantly. Pour the Madeira into the pan and reduce the liquid by half over high heat, 2 to 4 minutes. Add the creme fraiche, cream, lemon juice, 1 teaspoon salt, and 3¿4 teaspoon pepper. Boil until the mixture starts to thicken, 5 to 10 minutes. Pour the sauce over the chicken and bake for 12 minutes, or until the chicken is heated through. To make ahead, refrigerate the chicken and sauce in the casserole and reheat slowly on top of the stove.
PAN-ROASTED CHICKEN WITH MOREL MUSHROOM SAUCE
Morel mushrooms are one of the most delicious-and fleeting-signs of spring, and this one-pan dish is a decadent way to usher in the new season. In it, tender whole chicken legs are finished in a creamy sauce that's layered with the flavors of morels, herbs and white wine. Round out the meal with a salad of mixed greens, oven-roasted potatoes or rice pilaf for an impressive dinner-party menu.

- Season the chicken generously all over with salt and pepper.
- Heat the olive oil in a large heavy pan over medium-high heat. Once the oil is shimmering and just starting to smoke, add the chicken skin-side down and cook until golden brown all over, flipping halfway through, about 12 minutes. Transfer the chicken to a plate; set aside.
- Return the pan to medium heat and add the shallots and garlic to the pan. Cook, stirring often, until the shallots are soft and the garlic is lightly browned, about 2 minutes. Add the mushrooms and cook, gently stirring and scraping up any browned bits from bottom of the pan with a wooden spoon, until the mushrooms begin to release liquid, about 2 minutes. Transfer the mushroom mixture to a medium bowl and set aside.
- Add the wine to the pan and bring to a boil. Cook until the wine is reduced by half, about 4 minutes. Add the broth and thyme and bring back to a boil. Return the chicken to the pan, skin-side up, along with any juices from the plate and cover with the lid slightly ajar. Reduce the heat to medium-low and simmer until the chicken is cooked through, about 15 minutes.
- Swirl in the cream and return the mushroom mixture to the pan. Simmer (uncovered) over medium-high heat, stirring occasionally, until the sauce thickens slightly, about 8 minutes. Season with salt and pepper. Place the chicken on a serving plate, spoon the mushroom sauce over and sprinkle with chives.

- Melt 2 tablespoons chicken fat in a large heavy skillet over medium-high heat. Season chicken generously with salt and pepper. Add chicken to skillet and cook, turning once, until golden brown, about 6 minutes per side. Transfer chicken to a plate. Reduce heat to medium. Add remaining chicken fat to skillet. Add shallots and sauté until soft, about 2 minutes. Add mushrooms and sauté until they begin to release liquid, about 1 minute. Using a slotted spoon, transfer mushrooms to a plate. Add wine to skillet and boil until reduced by half, about 2 minutes. Add stock; bring to a boil. Return chicken to skillet, cover with lid slightly ajar, reduce heat to medium-low, and simmer until chicken is cooked through, about 20 minutes.
- Transfer chicken to a platter. Return mushrooms to skillet; add cream. Simmer, uncovered, until sauce thickens slightly, about 5 minutes. Season to taste with salt and pepper. Pour sauce over chicken and serve.
BAKED CHICKEN IN MUSHROOM SAUCE
I found this recipe somewhere on the internet, I don't think it was Recipe Zaar because I looked for it but didn't see it. Turned out great and wanted to share it.

- Flatten chicken if needed as you want it to fry quickly.
- Measure flour onto a flat plate and lightly coat chicken. Preserve 1/2 tablespoon of flour and set aside.
- Melt margerine in a large skillet and brown chicken two to three minutes each side and place in a greased baking dish.
- Preheat oven to 375.
- Saute mushrooms in the same skillet (do not wash as you want to preserve the juices) until tender.
- Add chicken broth, salt, and pepper and bring to a boil. Let boil for 3 minutes, add sherry and remaining 1/2 tablespoon of flour. Be sure to gradually add the flour by sprinkling in and mixing while allowing it to dissolve. Adding it too fast will result in clumps of flour in your mushroom sauce. Let the mixture reduce by half of your original liquid.
- Pour mixture over chicken and bake uncovered in oven for 12-15 minutes.
- Remove chicken from oven and layer half of the parmesan cheese, then sprinkle on green onions. Add the remaining parmesan and mozzarella on top and bake for an additional five to six minutes.

- Flatten chicken breasts.
- Dip in milk, then in bread crumbs, coating well.
- Roll up and arrange, seam down, in non-stick sprayed baking pan.
- Cover and bake at 350 degrees for 25 minutes.
- While chicken is baking, simmer the mushrooms and onions in wine and lemon juice.
- Add thyme and marjoram.
- Uncover chicken and spoon mushroom mixture over chicken.

CHICKEN WITH MOREL CREAM SAUCE
Morels are rather pricey but this is a delicious dish for company or a special occasion. The cost can be reduced by substituting another mushroom type for part of the recipe.

Steps:
- Rinse dry morels & place in small bowl.
- Pour 1/2 cup boiling water over top& soak for 1/2 hour.
- Cut the chicken into 8 pieces (2 legs, 2 thighs, 4 half brests); reserve wings & backs for making stock or soup.
- Melt butter in heavy frying pan over medium heat.
- Add chicken pieces & cook until golden on each side (about 5- 8 minutes).
- Remove to plate, season to taste & keep warm.
- Discard fat in pan, then add sherry & scrape the bottom of the pan to deglaze.
- Boil until the sherry is reduced by half.
- Drain the liquid from the soaking mushrooms through a fine sieve (to remove any grit) into the frying pan.
- Add the cream & bring to a boil; simmer for 3 minutes.
- Cut the soaked morels into halves or quarters (depending on their size) and add to pan.
- Return chicken to pan & cook for another 10 minutes, uncovered.
- Clean the fresh mushrooms, add to the pan, cover & cook for another 10 minutes or until chicken is cooked through.
- Garnish with parsley.

CHICKEN BREASTS IN LEMON MUSHROOM SAUCE
This delicious recipe was inspired by a dish that I made which was submitted by History Teacher. Thank you for inspiring me, I wanted to make your dish again but didn't have all the ingredients so I improvised and this was the result. It is quick and easy to make with a pronounced lemon flavor. We enjoyed it served over noodles.

- In a bowl, combine the egg and one tablespoon lemon juice, mix well and set aside until required.
- Next into a bag, add the flour, salt, pepper, red pepper flakes and lemon zest.
- Dip the chicken breasts in the egg mixture, then add them to the bag of coating and shake, until well coated.
- Melt the butter in a non-stick pan over medium-high heat and add the chicken, cooking for 5 minutes on each side or until done.
- Remove the chicken from the pan and cover with aluminum foil to keep warm.
- If necessary, add the additional tablespoon of butter, then add the garlic, shallot, onions and mushrooms to the pan and cook for 5 minutes on medium to low heat.
- Now in a small bowl add the chicken stock, 2 1/2 tablespoons of lemon juice and cream together, stir and add this to the pan.
- I had large chicken breasts so I added them back into the pan and brought everything to a gentle boil, cooking until the mixture started to reduce and sauce thickened. You may cook sauce to your preference.
- I served the chicken and lemon mushroom sauce overtop of simple buttered noodles for a quick and easy meal.

- Season the chicken breasts with seasoned salt and pepper.
- Heat butter over medium heat in a large skillet; add in breasts and cook until the chicken is tender and no pink remains.
- Remove to a serving platter; tent loosley with foil to keep warm.
- For the sauce; in the same skillet cook mushrooms, shallots and garlic in the chicken drippings for about 3 minutes or until tender; spoon over chicken.
- Add the wine to the skillet, stirring to loosen crusty browned bits in the bottom of the skillet.
- In a small bowl whisk together the chicken broth with flour and thyme; add to the skillet along with bay leaf; cook stirring until bubbly.
- Cook another 2 minutes more then add in whipping cream; cook stirring until just heated through .
- Remove the bay leaf, then season the sauce to taste with salt and pepper.
- Serve the sauce over the chicken along with the cooked pasta.
- Pass the Parmesan cheese to sprinkle on top of plate.
PAN-FRIED CHICKEN IN MUSHROOM SAUCE

- Heat the oil in a large non-stick frying pan. Fry the thighs for 8-10 mins, skin side only, until golden brown, then transfer to a casserole dish. Fry the drumsticks for about 5 mins each side and add them to the thighs.
- Pour the stock over the chicken legs in the casserole. There should be enough stock to just cover the chicken, if not add a little water. Bring stock to the boil and cover, leaving lid slightly ajar. Cook at just below simmering point for 30-35 mins until chicken is cooked.
- While chicken is simmering, drain oil from the pan. Heat the butter in pan and add onion. Sweat onion for 5 mins until soft, but not coloured. Turn up the heat, add the mushrooms, then fry for 3 mins until they soften and start to smell wonderful. Pour over the white wine, raise the heat to maximum and boil rapidly for 6-8 mins until reduced by two-thirds. Turn off the heat and leave until chicken has cooked.
- Once chicken legs are cooked, strain stock into pan with the onion, mushrooms and white wine, bring back to the boil and reduce again by two-thirds until it is thick and syrupy. Pour in double cream, bring it to the boil, season if you want, then pour it over chicken. Heat chicken through in the sauce for 2-3 mins then turn off the heat and leave for a few mins before serving. This is such an aromatic and beautiful looking dish you should serve it straight from the casserole with the lid on.
