⅓ cup balsamic vinegar
½ cup chicken broth
2 tablespoons white sugar
1 clove garlic, minced
1 teaspoon dried Italian herb seasoning
4 skinless, boneless chicken breast halves
1 tablespoon olive oil

Steps:

  • Whisk together the balsamic vinegar, chicken broth, sugar, garlic, and Italian seasoning in a bowl, place the chicken breasts in the marinade, and marinate for 10 minutes on each side.
  • Heat the olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and reserve the marinade. Place the chicken in the heated pan and cook until they start to brown and are no longer pink inside, about 7 minutes per side. Pour the marinade into the skillet, and cook until it thickens slightly, turning the chicken breasts over once or twice, about 5 minutes.

Baked Balsamic Chicken Breast Recipe - this is seriously the juiciest, delicious and easy to make baked chicken breast. Loaded with simple flavors, this could be served on its own or added to pasta, salads or grain bowls.

4 boneless, skinless chicken breasts (6 oz each)
1/4 cup olive oil
2 tbsp soy sauce
1/2 cup balsamic vinegar
2 cloves garlic, minced
2 tsp dried oregano
1/4 tsp black pepper
1/4 tsp salt (or more to taste)

Steps:

  • If the chicken breast is too thick, you can pound it with a meat mallet until it is 1/2-inch thick.
  • Combine olive oil, balsamic vinegar, soy sauce, garlic, oregano and black pepper in a bowl.
  • Place chicken in a baking dish. Pour the marinade over it, making sure it is evenly coated. Let is sit for 10 minutes if you have the extra time.
  • Preheat oven to 400 F. Bake chicken at 400 F for 25 minutes, or until a thermometer inserted into the thickest part of the meat reads 165 F.

1 kg / 2 lb chicken thighs (5 pieces, bone in, skin on), or drumsticks or wings (any combination) (Note 1)
1/4 cup (65 ml) balsamic vinegar
2 1/2 tbsp / 50 ml soy sauce (, all purpose or light (not dark soy sauce))
1/4 cup (85 g / 65 ml) honey
1/4 cup (45g) brown sugar (, loosely packed (Note 2))
2 garlic cloves, minced ((or 1 1/2 tsp garlic paste from jar))

Steps:

  • Preheat oven to 180C/350F.
  • Line a baking dish with foil and baking / parchment paper.
  • Mix together Sauce in a bowl.
  • Place chicken in baking dish, skin side down for thighs and wings. Make sure the pan is big enough so the chicken is squished up next to each other (sauce may not reduce enough), but not so large that there is more than 4"/10 cm between every piece of chicken (sauce may reduce too much).
  • Pour over Sauce. Bake 30 minutes. Turn chicken over, spoon over sauce.
  • Bake 20 minutes or until chicken is cooked through. The Sauce should have thickened.
  • Stand for 5 minutes, then spoon Sauce over chicken and serve.

4 skinless, boneless chicken breasts
salt and pepper to taste
¾ pound fresh mushrooms, sliced
2 tablespoons all-purpose flour
2 tablespoons olive oil
6 cloves garlic
¼ cup balsamic vinegar
¾ cup chicken broth
1 bay leaf
¼ teaspoon dried thyme
1 tablespoon butter

Steps:

  • Season the chicken with salt and pepper. Rinse the mushrooms and pat dry. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
  • Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. 6 bacon slices (4 oz), cut crosswise into 1/4-inch-wide strips
1 (3 1/2-lb) chicken, cut into 8 serving pieces
1 lb shallots, thinly sliced
1 head garlic, cloves separated and peeled
1/4 cup balsamic vinegar

Steps:

  • Cook bacon in a deep 12-inch heavy skillet over moderately low heat, stirring, until crisp, about 8 minutes. Transfer with a slotted spoon to paper towels to drain and reserve bacon fat in skillet.
  • While bacon is cooking, pat chicken dry and season with salt and pepper. Brown, beginning with skin sides down, in 2 batches in bacon fat over moderately high heat, turning, about 8 minutes. Transfer chicken as browned with tongs to a plate and pour off all but 2 tablespoons fat from skillet.
  • Add shallots to skillet and cook over moderately low heat, covered, stirring occasionally, until soft and pale golden, about 10 minutes.

I needed a fast recipe for some boneless chicken, and this was it. Adapted a bit from a recipe I had, it was delicious. Suitable for just family, or company, too.

4 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts, either pound it out thinly, or fillet the chicken
2 tablespoons olive oil
6 cloves garlic, minced
3/4 cup chicken broth
1/4 cup balsamic vinegar
2 bay leaves
1/4 teaspoon herbes de provence (recipes for this spice mix are available on Recipezaar)
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • Mix the flour, salt and pepper in a shallow dish, and dredge the chicken in it.
  • Heat oil in large skillet and cook the chicken until brown on one side (about 3-4 min).
  • Turn the chicken and add the garlic.
  • Cook 3 minutes more, while stirring the garlic around.
  • Add the broth, vinegar, bay leaves, and herbs.
  • Cover tightly, reduce heat to med-low, cook for about 10 minutes, turning chicken a couple of times. (When you get to the end of this step, you have a choice...you can proceed and reduce the sauce, or you can stop now after ADDING THE TBSP OF BUTTER. This way, you have more sauce, which is the way my husband likes it.)
  • When chicken is done, remove from pan.
  • Bring heat back up to med.
  • ,and cook the pan juices for 7 minutes, uncovered.
  • Stir in butter and remove bay leaves.
  • Spoon sauce over the chicken.
  • I served white rice on the side, and spooned a bit of sauce over that, too.
  • Yum.

CHICKEN WITH ROSEMARY AND BALSAMIC VINEGAR

This is a great tasting chicken dish. If you don't have balsamic, use red wine vinegar. Can substitute any chicken part for the whole chicken mentioned in the recipe. I have even used boneless chicken breasts and baked at 350 for 50 minutes and that worked well. If the chicken gets a nice golden brown, you may not need to broil it. As usual, fresh rosemary works best. I use a bit less olive oil as well, use your judgement. The original recipe calls for 3 slices of pancetta atop each chicken half, but I don't think it added much to the final dish, you could subsitute bacon if desired. This is adapted from Bon Appetit, 1997. Hope you enjoy!

3 3/4 lbs whole chickens, halved, backbone removed
1 1/2 cups dry white wine
1/2 cup balsamic vinegar
3 tablespoons finely chopped garlic
2 teaspoons minced fresh rosemary
1/4 cup olive oil (preferably extra-virgin)
fresh rosemary sprig (optional)

Steps:

  • Preheat oven to 300°F.
  • Place chicken halves skin side up in roasting pan. Pour wine and vinegar over chicken. Sprinkle garlic and rosemary over chicken. Drizzle chicken with olive oil.
  • Cover and bake until chicken is cooked through, about 1 hour 45 minutes.
  • Transfer chicken to baking sheet; tent with foil to keep warm.
  • Pour pan juices into small saucepan. Spoon fat from top of pan juices. Boil juices until reduces to 1 cup, about 25 minutes.
  • Preheat broiler. Meanwhile, broil chicken until chicken is golden brown, about 6 minutes.
  • Transfer chicken to plates. Pour reduced pan juices over chicken.
  • Garnish with rosemary sprigs, if desired.

2 cups chicken stock

  • Dredge chicken breasts in flour.

4 Tablespoons Olive Oil
1 Large Onion, Peeled & Sliced

1 Yellow Peppers, Cored, Seeded, & Sliced

  • Season the chicken with salt, pepper, and dried oregano.
  • Heat the olive oil in a heavy bottomed saucepan over medium heat until lightly smoking.
  • Brown the chicken well on each side, about 7 to 8 minutes.
  • Move the chicken to a plate.
  • Add the onions and peppers to the pan, and cook until they are tender and softened, stirring often, about 6 to 7 minutes.
  • Add the garlic and cook another minute or two until fragrant.
