Black Bean, Chicken and Spinach Chili image

Make this comforting Black Bean, Chicken & Spinach Chili on top of the stove or allow it to simmer all day in your crock pot.

3 lb. Ground Chicken
1 tbsp. Extra Virgin Olive Oil
1/4 c. Red Onion or Scallions, chopped
2 cloves Garlic, minced
2-4 tsp. Ground Chili Powder
1 tsp. Ground Cumin
1- 15(ounce) Can Black Beans, rinsed
3 c Fresh Baby Spinach, rinsed
3 Plum Tomatoes, small dice (or 1 can fire roasted tomatoes)
1- 6(ounce) Can Tomato Paste
1 c. Water

Steps:

  • Heat the oil over medium heat in a Dutch oven or large pot. Brown the chicken until it is cooked through and there is no pink.
  • Add the onions, garlic, chili powder and cumin; stir for about 2-3 minutes.
  • Next, add the beans, tomatoes, spinach, tomato paste and water; mix well. Reduce heat to low and simmer partially covered for a minimum of 30 minutes stirring occasionally.

3 teaspoons whole cumin seed
2 medium onions, finely chopped (about 3 cups)

1 green bell pepper, finely chopped

2 teaspoons chili powder
1 teaspoon dried oregano
1 dried bay leaf
One 28-ounce can chopped tomatoes with their juice
One 4-ounce can green chiles, finely chopped
2 1/2 cups homemade or low-sodium canned chicken stock, skimmed of fat
1/2 teaspoon coarse salt
4 cups canned kidney beans, drained and rinsed
Freshly ground black pepper
2 ounces (1/4 cup) low-fat sour cream, for garnish (optional)
Fresh cilantro leaves, for garnish (optional)

Steps:

  • In a large, heavy-bottom pot or Dutch oven, heat the oil and cumin seeds over medium heat until the cumin is lightly toasted and aromatic, about 1 minute. Add onion, garlic, and bell pepper, and reduce heat to medium-low; cook, stirring occasionally, until vegetables are soft and lightly golden, about 10 minutes.
  • Raise heat to medium, and add the chicken, chili powder, oregano, and bay leaf to pot. Cook, stirring frequently, until chicken is seared on the outside and coated thoroughly with spices, about 10 minutes. Add tomatoes and green chiles, and stir to combine. Cook 5 minutes. Add stock, salt, and beans; season with black pepper, and stir to combine.
  • Cover; simmer. Stir contents, then replace lid to partially cover pot. Reduce heat to medium-low, and cook until chili is thickened and chicken is tender, stirring occasionally, about 1 1/2 hours.
  • Divide chili among six bowls; garnish with sour cream and cilantro leaves, if desired. Serve immediately.

1 can (about 15 ounces) white kidney beans (cannellini), rinsed and drained
1 bag (about 7 ounces) fresh baby spinach

Steps:

  • Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.
  • Reduce the heat to medium. Add the garlic to the skillet and cook and stir for 1 minute. Stir in the vinegar and cook, scraping up the browned bits from the bottom of the pan.

Steps:

  • In a large heavy-bottomed saucepan or Dutch oven, heat the oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for 30 seconds. Add the ground chicken, 1 teaspoon salt, cumin, fennel seeds, oregano, and chili powder. Cook, stirring frequently, until the chicken is cooked through, about 8 minutes. Stir the flour into the chicken mixture. Add the beans, Swiss chard, corn, and chicken stock. Bring the mixture to a simmer, scraping up the brown bits that cling to the bottom of the pan with a wooden spoon. 1 tablespoon butter
1 medium onion, finely chopped
2 large garlic cloves, minced
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (15 ounces each) pinto beans, rinsed and drained
1 can (28 ounces) diced tomatoes, undrained
3 cups shredded cooked chicken
1-2/3 cups whole milk
1 cup beer or reduced-sodium chicken broth
2 tablespoons chicken bouillon granules
1 tablespoon sugar
1 bay leaf
2 teaspoons ground cumin
1 teaspoon each onion powder, garlic powder and chili powder
1/2 teaspoon salt

1 cup fresh spinach, chopped
1 (4 ounce) can diced green chilies
2 cups chicken broth

1 cooked chicken breast, cut into cubes
6 ounces grated monterey jack pepper cheese (Pepper Jack)

Steps:

  • 1. Rinse Great Northern beans. Place in Dutch oven, cover with water, and soak overnight.
  • 2. Add onion, garlic, spinach, green chiles, salt, pepper, cumin, and chicken broth to beans.
  • 3. Simmer, uncovered, for 2 hours or till beans are cooked and tender.

1 pound dried small white beans
8 fresh Anaheim chilies* (about 1 pound)
1/4 cup (1/2 stick) butter
2 large onions, chopped
1/3 cup all purpose flour
4 cups low-salt chicken broth
3 cups half and half
4 cups shredded cooked chicken
1 tablespoon chili powder
1 tablespoon hot pepper sauce
1 tablespoon ground cumin
2 teaspoons salt
1/2 teaspoon white pepper
1 1/2 cups grated Monterey Jack cheese (about 6 ounces)
1 cup sour cream
Chopped fresh cilantro
Purchased tomatillo or green chili salsa

Steps:

  • Place beans in heavy large pot with enough cold water to cover by at least 3 inches. Let stand overnight.
  • Char chilies over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel, seed, and chop chilies. Set aside.
  • Drain beans. Return to pot. Add enough cold water to pot to cover beans by 3 inches. Simmer until beans are almost tender, stirring occasionally, about 1 hour. Drain well.
  • Melt butter in clean heavy large pot over medium heat. Add onions and sauté until tender, about 15 minutes. Add flour and stir 5 minutes (do not brown). Gradually whisk in chicken broth and half and half. Simmer gently until thickened, about 10 minutes. Add reserved white beans and roasted chilies, shredded chicken, and next 5 ingredients. Simmer gently to blend flavors, about 20 minutes. (Chili can be made 1 day ahead. Chill until cold, then cover and keep chilled. Rewarm before continuing.)
  • Add grated cheese and sour cream to chili; stir just until chili is heated through and cheese melts (do not boil). Ladle chili into bowls and garnish with cilantro and green salsa. Serve.
  • Also known as California chilies; available at Latin American markets and many supermarkets.

1 lb boneless skinless chicken breast
2 thai bird chilies or 2 serrano chilies
1 teaspoon soy sauce
2 cups loosely packed fresh spinach
3 garlic cloves
1/2 tablespoon peanut oil or 1/2 tablespoon canola oil
1/2 tablespoon red chili paste
1 teaspoon sugar
1 teaspoon fresh cracked pepper

Steps:

  • Finely chop the garlic and chilies, then use the side of your knife to press them together into a rough paste. (Add a pinch of salt to make this process easier.).
  • Preheat a wok or stainless-steel saute pan over medium-high heat. Add the oil and the garlic-chili paste you just made, and cook for 1 to 3 minutes (be careful not to burn the garlic).
  • Chop the chicken into small pieces and add them to the pan, cooking until they're lightly browned, about 3 to 4 minutes. Add the soy sauce, red-chili paste, and sugar, and continue to cook until the chicken is done all the way through, another 3 to 4 minutes.
  • Add the pepper and spinach, and cook until the spinach is just wilted, about 2 minutes.
  • Serve immediately.

MELISSA'S CHICKEN, SPINACH & BLACK BEAN ENCHILADAS



Melissa's Chicken, Spinach & Black Bean Enchiladas image

This recipe is a combination of my Southwestern Spinach-Blackbean Dip (#169131) and the sauce used in Chicken Enchiladas (#129531). Very easy to make and can be frozen.

10 flour tortillas
1 (16 ounce) package frozen chopped spinach
1 small onion, chopped
1 (8 ounce) package cream cheese
1 (15 ounce) can black beans, drained & rinsed
1 (10 1/2 ounce) can Rotel Tomatoes
2 cups monterey jack cheese or 2 cups cheddar cheese
1 tablespoon cumin
1/2 tablespoon chili powder
2 cups cooked chicken, shredded
2 (15 ounce) cans tomato sauce
2 teaspoons Tabasco sauce
1 teaspoon chili powder
1/4 teaspoon ground cinnamon

Steps:

  • Saute the chopped onion in a little olive oil, add the frozen spinach and cook about 10 minutes, stirring often.
  • Add the rotel tomatoes, cumin, chili powder to the spinach mixture and mix well. Cook about 5 minutes, then add cream cheese and cook until melted on medium low heat. Stir frequently while it melts.
  • Add black beans to mixture, then add shredded cheese. Mix well then take off heat and put to the side.
  • To make the Sauce:.
  • Combine all the ingredients in a sauce pan and mix well. Heat until bubbly.
  • Spread enough sauce to make a thin layer onto the bottom of a 9 x 13 inch pan. Heat the tortillas in the microwave for about 30 seconds until warm. Spread spoonfuls of the spinach filling onto each tortilla, then wrap it and place seamside down in the pan. When pan is full, pour the remaining sauce over enchiladas, the top with cheese.
  • Bake at 350 about 30 minutes until sauce is bubbly and cheese is melted.

Slow Cooker Chicken Chili with Greens and Beans image

Beans, greens and chicken come together with tomatoes in a thick and creamy broth. This recipe, as with most chili recipes, doesn't need to be exact and can be altered to fit your taste or what you have on hand. The choice of greens is up to you - my first choice is kale, but you can use spinach, turnip greens, collards or a combination (my favorite)! If you use fresh greens, wash and chop them very fine before adding them to the slow cooker.

Steps:

  • Place black beans, white beans, tomatoes, and kale in a slow cooker.
  • Melt the butter in a large skillet over medium heat. Stir in the onion; cook and stir until softened and translucent, about 5 minutes.
  • Transfer the onion to the slow cooker.
  • Sprinkle with chili powder, garlic and herb seasoning, and salt.
  • Place the chicken breast halves on top, then pour the chicken broth into the slow cooker.
  • Cook on Low for 6 hours. Remove the chicken breasts, and shred or cut the chicken into bite-size pieces. Stir the shredded chicken back into the chili.
  • Stir in the heavy cream, allow to heat for a few minutes, and serve.
