Steps:
- Heat oil in a large heavy based saucepan.
- Add onion and celery and cook until soft.
- Add garlic and cook a further minute.
- Add chicken and cook until browned.
- Add wine, if using, and mushrooms.
- Cook a further couple of minutes.
- Add soup and sour cream and season with pepper (check for salt, often the soup contains a fair amount).
- Cook until warmed through.
- Stir through parsley and serve with rice, risoni or pasta.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat oil in a very large skillet over medium heat. Add chicken strips; cook and stir until browned, 1 to 2 minutes per side. Transfer to a casserole baking dish.
- Place cremini mushrooms, oyster mushrooms, shiitake mushrooms, and garlic in the same skillet; cook and stir until tender, about 5 minutes. Stir in flour until well-incorporated. Slowly mix in white wine. Add chicken stock, sage, salt, and black pepper; bring sauce to a simmer and cook, until thickened, about 5 minutes. Remove from heat and stir in heavy cream.
- Pour sauce over chicken in the casserole dish; stir gently to combine. Cover with aluminum foil.
- Bake in the preheated oven until bubbly, about 30 minutes. Garnish with parsley before serving.

- Heat 1 tbsp oil in a frying pan. Season and dust the chicken with flour, brown on all sides. Remove. Fry the pancetta and mushrooms until softened, then remove.
- Add the final tbsp oil and cook shallots for 5 mins. Add the stock and vinegar, bubble for 1-2 mins. Return the chicken, pancetta and mushrooms and cook for 15 mins. Add the peas and parsley and cook for 2 mins more, then serve.

- Preheat oven to 350 degrees. Season chicken on both sides with salt and pepper. Heat 2 tablespoons oil in a medium saute pan over medium-high heat. Add chicken, and cook until golden brown on 1 side, 3 to 4 minutes. Flip, reduce heat to medium, and cook until cooked through, about 10 minutes more. Transfer chicken to a plate, and return pan, with drippings, to medium heat.
- Heat remaining 3 tablespoons oil in pan. Add leek, celery, mushrooms, and a pinch of salt. Cook, stirring occasionally, until vegetables are golden brown and tender, 8 to 10 minutes. (Reduce heat if vegetables brown too quickly.) Stir in flour, and cook, stirring often, for 2 minutes. Add sherry, stock, milk, and bay leaf, and cook, scraping up browned bits from bottom, until thickened, about 5 minutes. Season with salt and pepper. Discard bay leaf.
- Arrange bread on bottom of a 2-quart oval baking dish, overlapping slices slightly. Spoon half of the vegetables and sauce over bread. Slice chicken crosswise, 1/2 inch thick, and arrange on bread. Top with any accumulated juices from chicken. Spread remaining vegetables and sauce over chicken, sprinkle with parsley and Parmesan, and bake until golden brown and bubbling, 25 to 30 minutes. Let stand for 15 minutes before serving.
CHICKEN, BAMBOO & BLACK MUSHROOM CASSEROLE WITH DOMAINE DE CANTON & VERMICELLI

- Soak the vermicelli in warm water until softened, about 10 minutes. Drain and cut into 4 in. pieces. Heat canola oil in a large casserole over moderate heat. Season the chicken generously with salt and pepper. Once the oil is hot, place the chicken pieces in the casserole, skin side down and saute until golden brown on all sides. Remove the browned chicken from the casserole and add garlic, ginger, and onions, sweat gently. When vegetables are soft, deglaze with the Domaine de Canton. Add the chicken back to the casserole along with the bamboo shoots, black mushrooms, and chicken stock. Cover the casserole and bring to a boil, reduce the heat to low and let simmer until the chicken is tender, about 20 minutes, adding the vermicelli during the last 5 minutes. Divide the chicken and vermicelli into 6 large bowls and garnish with cilantro and green onions. Serve immediately. Serves 6

- Toss 8 small free-range chicken legs in 1/4 cup (40g) plain flour until coated.
- Heat 2 tbs olive oil in a frying pan over high heat.
- Add chicken and cook, turning until golden. Place in a 3.5-litre crockpot.
- Add 200g bacon rashers, rind removed and cut into 2cm cubes, 500g button mushrooms, halved, 1 onion, chopped, and 2 garlic cloves, crushed, to the frying pan and cook for 5 minutes or until golden.
- Add to the crockpot with 800g can diced tomatoes and 140g container tomato paste.
- Cook, covered, on Low for 4-6 hours or on High for 2-3 hours.
- Season well with salt and freshly ground pepper. Serve with a dollop of sour cream and scattered with chopped continental parsley.

- Heat oven to 400°. Stir together the mustard and olive oil; rub mixture on chicken pieces. Season chicken with 1/2 teaspoons of the salt and pepper to taste; set aside.

- Preheat the oven to 325 degrees F (165 degrees C).
- Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain, reserving 1/2 cup cooking liquid for the sauce.
- Heat olive oil in a large frying pan or Dutch oven over medium heat. Gently saute celery, onion, and bell pepper until onion is translucent, 5 to 7 minutes. Add the mushrooms and toss. - Brown the sausage with the celery, onion and mushrooms.
- Stir the softened cream cheese into the sausage mixture until well blended.
- Coarsely chop the cooked cauliflower.

- Dust chicken in flour. Heat oil in casserole and brown chicken all over, in 2 to 3 batches. Reserve
- Add more oil to the dish. Cook bacon and shallots. Add wine, bubble and reduce by half. Stir
- Add mustard and stock. Return chicken to dish. Simmer lid on for 40 minutes. Add mushrooms and cook for another 20 minutes
- Remove chicken. Bubble sauce to reduce. Add cream and tarragon, return chicken to dish and warm through. Serve
QUICK CHICKEN AND MUSHROOM CASSEROLE
This recipe was given to me by a work mate. I used a cooked BBQ chicken which I brought from the supermarket; you can chop the chicken to what ever size you like. Broccoli, carrots and peas could be cooked on the stove top or in the microwave. Don't overcook vegetables they just need to still be semi crisp

- Preheat oven at 150oC/300oF/Gas Mark 2.
- Chop or pull apart cooked chicken and only place the flesh of the chicken into a large casserole dish (preferable with a lid) discard chicken bones, fat and skin.
- To cook broccoli and carrots, chop them as directed, put them in a microwave proof dish add 1/4 cups of water, cover with microwave proof with lid and cook for three minutes on high.
- Add broccoli, carrots, frozen peas, onion, cream of mushroom soup, mushrooms and cream in the casserole dish, mix well without mashing vegetables.
- Cover and cook for 30 minutes.
- Serve with rice or plain pasta.
