This recipe was originally posted by my friend, Shelly, and I adopted it after she left the site. She told me that she found it on Cooking.com and the original recipe included instructions to cook the chicken separately. Being a woman after my own heart, Shelly decided that there was no point in dirtying another pan and tossed the chicken into the stew to simmer. It works well with no ill effects. When I prepared this, I omitted the chickpeas, as they are a texture and flavor that I don't enjoy, and upped the amount of zucchini to include 3 small ones. My hubby is sometimes sceptical of tomato and rice dishes (and couscous is very close to rice in his opinion) and also is unsure of lemon in savory dishes, but he helped himself to seconds and commented on the fresh flavor of the dish. I think that makes it a winner.

1 tablespoon olive oil
1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces (raw)
1 1/2 teaspoons salt
1 large yellow onion, chopped
4 garlic cloves, mined
1 tablespoon fresh ginger, chopped
1/2 teaspoon paprika
3/4 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1/4 teaspoon ground turmeric
1 1/2 cups canned chicken broth
1 cup crushed tomatoes, canned
1 cup canned chick-peas, drained
1 small zucchini, sliced
3 tablespoons fresh parsley, chopped (optional)
1 tablespoon fresh lemon juice
4 cups cooked couscous

Steps:

  • In large pot, heat oil, add 1/4 tsp of salt and chopped onion.
  • Cook until translucent, about 5 minutes.
  • Add garlic, ginger, paprika, cumin, oregano, cayenne and turmeric and cook, stirring for 1 minute.
  • Add broth, tomatoes and remaining 1 1/4 tsp salt.
  • Bring to a simmer and cook, covered for 10 minutes.
  • Add chicken, chickpeas, zucchini and bring back to a simmer.
  • Cook, covered, until chicken and zucchini are just done, about 12 minutes longer.
  • Add parsley and lemon juice and just let it"hang out" for several minutes or more-- does it good in my opinion.
  • Serve over couscous.

1 large zucchini, quartered lengthwise and cut into 1-inch chunks
1 tablespoon unsalted butter
1 teaspoon kosher salt
1 1/2 cups couscous
1/2 cup cilantro leaves, roughly chopped
1/2 cup parsley leaves, roughly chopped
1/4 cup sliced almonds
1/4 cup salted shelled pistachios, crushed
1/4 cup golden raisins
Harissa and plain yogurt, for serving

Steps:

  • For the chicken stew: Put the garlic, carrots, onion, cinnamon, raisins, ginger, cumin, paprika, sugar, turmeric, 1 tablespoon salt and several grinds of black pepper in a large saucepan or Dutch oven with a tight-fitting lid. Add 2 cups water and bring to a boil over high heat; cover, reduce the heat and simmer until the carrots start to get tender, about 15 minutes. Add the chicken, chickpeas, tomatoes and zucchini and stir to combine. Return to a boil over high heat, cover, reduce the heat and simmer until the stew is slightly thickened and fragrant and the vegetables are tender enough to cut with the side of a fork, but still hold their shapes, about 15 minutes. (If the vegetables are fork-tender a bit sooner, remove them to a bowl while the liquid reduces then return them to the pot when ready to serve.) Remove and discard the cinnamon sticks.
  • For the couscous: Bring 1 1/2 cups water to a boil with the butter and salt in a small saucepan. Stir in the couscous, remove from the heat, cover and set aside until the water has been absorbed and the couscous is plump, about 5 minutes. Fluff with a fork and keep warm.
  • For the topping: Combine the cilantro, parsley, almonds, pistachios and raisins in a medium bowl.
  • To serve, divide the couscous among bowls, top with the stew and sprinkle with the herb topping. Serve with harissa and yogurt on the side.

1 tablespoon olive oil
1/2 teaspoon ground cumin
1 cup boiling water
2/3 cup couscous

Steps:

  • Cut zucchini into 1/4-inch dice.
  • In a large non-stick skillet cook zucchini in oil with cumin and salt and pepper to taste over moderate heat, stirring until just tender, about 5 minutes.
  • Add water and bring to a boil.
  • Stir in couscous and remove skillet from heat.
  • Let mixture stand, covered, for 5 minutes.
  • Fluff couscous with a fork.
  • Cover for 5 minutes.

2 lbs chicken breasts, boneless, skinless cut into 1 inch cubes
1 (10 ounce) bag matchstick cut carrots
2 medium onions, diced (I just throw them in the food processor)
3 large garlic cloves, minced
1 cup of cubed zucchini
2 (13 3/4 ounce) cans chicken broth
1 (10 ounce) box of quick cooking couscous
2 teaspoons pepper sauce (i.e. Tabasco)
1 1/2 teaspoons curry powder
1/2 teaspoon salt
1 cup slivered almonds, toasted
1/4 cup chopped fresh parsley (optional)

Steps:

  • Heat oil in a 12-inch skillet over med-high heat.
  • Add chicken and cook until well browned on all sides.
  • With a slotted spoon, remove chicken to a plate.
  • Reduce heat to medium. Cook carrots, zucchini, and onions in drippings for 5 minutes.
  • Add garlic and cook 2 minutes more, stirring frequently.
  • Grab a pot because this makes a lot. Transfer your carrots, zucchini, and onions to it.
  • Stir chicken broth, pepper sauce, curry powder, salt and chicken.
  • Bring to a boil, add couscous, cover and remove from heat for 5 minutes.
  • Stir in almonds and parsley.

2 cups couscous (*)
4 skinless chicken breasts
3 tomatoes (chopped) or 12 ounces crushed tomatoes
1 medium onion (finely chopped)
2 tablespoons extra virgin olive oil or 2 tablespoons vegetable oil
1 cup chicken broth
2 medium carrots (peeled, cut in small pieces)
1 medium zucchini (cut in small pieces)
3 bay leaves
3 whole cloves, crushed
1/4 teaspoon cinnamon
1/4 teaspoon turmeric or 1/4 teaspoon curry
1/4 teaspoon chili powder (berbere)
salt and black pepper

Steps:

  • Clean the chicken breasts with cold water, lemon/lime and a pinch of salt.
  • Rinse the chicken breasts and pat dry; cut as desired.
  • Sauté the onion with oil until tender.
  • Add to the the onion, the chicken breasts, cloves, cinnamon; stir-fry until the chicken turns to golden brown.
  • Combine the chicken, the tomatoes, red chili pepper, curry or turmeric, carrots, zucchini; cook for five minutes.
  • Add the chicken broth, bay leaves, salt and black pepper; Cook for 15 minutes.
  • Meanwhile, prepare the couscous following direction from the package.
  • In a serving dish, place the chicken and sauce in the middle and the couscous around it.

8 chicken thighs
2 zucchini (about 1 pound total), halved lengthwise and sliced crosswise
1 cup couscous
1/2 cup fresh parsley, chopped
2 tablespoons red-wine vinegar

Steps:

  • Preheat oven to 450 degrees, with rack in upper third. Season chicken with salt and pepper; place, skin side down, on a rimmed baking sheet. Roast for 10 minutes.
  • Remove sheet from oven, and turn chicken, skin side up. Scatter zucchini around chicken, and season with salt and pepper; toss with pan juices. Return sheet to oven, and continue to roast until an instant-read thermometer inserted into the thickest part of a thigh (avoiding bone) registers 165 degrees, 7 to 10 minutes more.
  • Meanwhile, bring 1 1/4 cups water to a boil in a small saucepan; season with salt and pepper. Remove from heat, and stir in couscous. Cover, and let stand until all the liquid is absorbed, about 5 minutes. Fluff couscous with a fork. Steps:

  • Cook onion in 2 tablespoons butter in a 10-inch heavy skillet over moderate heat, stirring occasionally, until softened, about 8 minutes, then reserve in skillet.
  • Meanwhile, pat chicken slices dry and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté chicken in 2 batches, turning occasionally, until just cooked through and golden brown, 3 to 4 minutes per batch, transferring chicken to a plate with tongs.

  • While couscous is standing, add chicken and zucchini to sauce along with any juices accumulated on plate and cook over moderate heat, stirring occasionally, until heated through, about 2 minutes. Season with salt and pepper and sprinkle with 1/2 tablespoon cilantro.
  • Fluff couscous with a fork to break up any lumps, then stir in remaining 2 tablespoons cilantro and salt and pepper to taste. Serve with lime wedges.
