2 packages (9 ounces each) refrigerated tricolor cheese tortellini
4 cups cubed cooked chicken breast
1 can (6 ounces) pitted ripe olives, drained and halved
2 medium tomatoes, chopped
1 cup cubed part-skim mozzarella cheese
1/3 cup minced fresh parsley
3/4 teaspoon salt
3/4 teaspoon pepper
3/4 cup balsamic vinaigrette
1/2 cup shredded Parmesan cheese

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, chicken, olives, tomatoes, mozzarella cheese, parsley, salt and pepper. Drizzle with vinaigrette and toss to coat. , Cover and refrigerate for at least 4 hours. Just before serving, sprinkle with Parmesan cheese and toss.

1 /12 lb chicken thighs, skinless and boneless
1 small shallot, minced
1/4 cup grated parmesan cheese
1 teaspoon dijon mustard
1/4 cup + 1 teaspoon olive oil
2 Tablespoons white balsamic vinegar
3-4 oz arugula (about 4-5 cups)
salt and pepper

Steps:

  • Cook pasta as directed and set aside.
  • Meanwhile, season chicken with 1 teaspoon of olive oil, salt and pepper.
  • Broil on high for 8 minutes, flip over and broil for another 6 minutes, or until cooked through. (Can also cook on the grill.) Let rest for a few minutes and cut into bite-sized pieces.
  • While chicken and pasta are cooking, combine shallot, parmesan cheese, dijon mustard, 1/4 cup olive oil, vinegar, salt, and pepper in a blender and blend until smooth.
  • Toss together pasta, chicken, arugula, and dressing.
  • Season with salt and pepper to taste and serve immediately.

1 green bell pepper, thinly sliced
1 red bell pepper, julienned
1 small red onion, julienned
½ cup sliced black olives
½ cup crumbled feta cheese
1 boneless chicken breast half, cooked and sliced into thin strips
¼ cup olive oil
2 teaspoons grated lemon zest, minced
¼ cup lemon juice
2 tablespoons ground walnuts
1 tablespoon honey

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente. Drain and cool under cold water. Refrigerate until chilled.

This pasta salad with chicken and fresh vegetables makes a quick and delicious summer dinner and an even better lunch for the next day. Get a jump on meal planning and prep this recipe a day in advance. Make and refrigerate the basil vinaigrette (shake it well before dressing the salad). Mix the tortellini, shredded rotisserie chicken, tomatoes, black-eyed peas, and corn in a large bowl; cover and refrigerate. When you are ready to serve the salad, dress the tortellini mixture with the dressing, stir in arugula, and top with toasted pecans. Get in the habit of toasting nuts every time you use them; toasting adds a depth of flavor and a wonderful aroma, as well as improving the texture of nuts so they stay crisp on top of salads or baked into breads and cookies. Toast several cups of nuts at one time, store in freezer-safe containers in the freezer, then pull out the amount you need when cooking. 1 (9 or 10 ounce) package fresh three cheese tortellini pasta
2 cups loosely packed baby spinach
1 cup diced red onion

1 cup diced seedless cucumber
1 (2.25 ounce) can sliced black olives, drained
¼ cup crumbled feta cheese
¼ cup loosely packed fresh basil leaves, chopped

Steps:

  • Prepare the Vinaigrette: Combine all of the dressing ingredients in a large jar or measuring cup. Shake (or whisk) until completely combined. Set aside.
  • Prepare the Chicken: Season chicken with salt and pepper on all sides, to taste. Heat olive oil in a large skillet over medium heat. Place chicken in the skillet and allow the chicken to cook on one side, undisturbed, for at least 6-7 minutes. Flip, and cook the chicken for about 6-8 more minutes, or until it is nicely browned on both sides and cooked through.
  • The chicken is cooked through when the internal temperature reaches 180 degrees F, or when juices run clear.
  • When the chicken is cooked through, remove it from the skillet and place it on a cutting board to rest.
  • Prepare the Tortellini: Cook the tortellini in a large saucepot according to package instructions. Drain.
  • While the tortellini cooks, dice the chicken into bite-size pieces.
  • Assemble the Salad: In a large bowl, gently combine diced chicken, cooked tortellini, spinach, onion, tomatoes, cucumbers, olives, and feta cheese. Pour about ¼ cup vinaigrette over the salad (or more, to taste). Reserve remaining vinaigrette.*

Steps:

  • Heat the olive oil in a large pan over medium-high heat.
  • Add the chicken to the pan and season to taste with salt and pepper.

2 cups broccoli, (chopped into very small pieces)
2 cups rotisserie chicken, (chopped into small pieces)
1 pound (16 ounces) cheese-filled tortellini (frozen, not fresh or dried)
3 tablespoons unsalted butter
1/3 cup white all-purpose flour
1 cup milk ((1%, 2% or whole; I use 1%))
1 cup chicken broth or chicken stock
1 cup freshly grated sharp Cheddar cheese
1 cup freshly grated Parmesan cheese, (divided)
1/2 cup sour cream ((I use fat free))
2 teaspoons chicken bouillon powder
1 and 1/2 teaspoons Dijon mustard
1 teaspoon EACH: dried parsley flakes, roasted garlic powder
1/4 teaspoon granulated onion
Salt and pepper
2 tablespoons unsalted butter
3/4 cup panko ((next to breadcrumbs))

Steps:

  • CASSEROLE: Preheat the oven to 375 degrees. Cut the broccoli into small pieces (no need to cook beforehand if you chop it small). Chop the chicken into small pieces. Add both to the bottom of a 9x13-inch baking dish. Add the frozen (not thawed and not cooked) tortellini on top. Toss everything to combine.
  • SAUCE: Melt 3 tablespoons butter in a small pot over medium heat. Once melted, gradually add in flour, while whisking constantly, until a thick paste forms. Whisk for one minute to cook out the raw flour taste and then gradually add in 1/3 cup of the milk while whisking constantly. Gradually add 1/3 cup chicken stock or broth while continuing to whisk. Add in another 1/3 cup milk, another 1/3 cup stock, last remaining 1/3 cup milk, and last remaining 1/3 cup stock. Whisk after each addition until completely smooth and sauce is thickened. Add in 1 cup of sharp Cheddar cheese and 1/2 cup Parmesan cheese and whisk until completely smooth. Add in sour cream and whisk again until smooth. Stir in the chicken bouillon powder, Dijon mustard, dried parsley, garlic powder, granulated onion, and salt and pepper to taste. (I add 1/2 teaspoon salt and 1/4 teaspoon pepper; add to taste preference -- the Parmesan cheese does add a good amount of saltiness as well.)
  • ASSEMBLE AND BAKE: Pour the sauce over everything in the casserole dish and toss ingredients to coat evenly. Make sure the tortellini is covered with the sauce. Sprinkle remaining 1/2 cup Parmesan cheese over top of the casserole. Cover with foil and bake for 30 minutes. Meanwhile, in a saucepan over medium-high heat, melt the 2 tablespoons butter for the topping. Add the panko crumbs and toast, stirring constantly, until panko is light brown and toasted. After casserole has baked for 30 minutes, remove and then sprinkle the topping evenly over the cheese. Bake, uncovered, for another 8-10 minutes or until warm and bubbly. Remove and serve hot.

2 cups green seedless grapes
1 cup snow peas, trimmed and cut into pieces
12 -15 spinach leaves, stems trimmed and torn into pieces

1 lb frozen cheese-filled egg tortellini, cooked and drained according to package directions
1 (6 ounce) jar marinated artichoke hearts, drained

2 pkg. (6 oz. each) OSCAR MAYER CARVING BOARD Flame Grilled Chicken Breast Strips
2 cans (15 oz. each) chickpeas (garbanzo beans), rinsed
2 cans (14 oz. each) artichoke hearts, drained, quartered
1 red onion, cut into thin slices
2 Tbsp. drained pitted black olives, cut in half
2 Tbsp. drained pimento-stuffed green olives, cut in half
1 env. (0.7 oz.) GOOD SEASONS Zesty Italian Dressing Mix
4 cloves garlic, minced
1/4 tsp. ground black pepper
1 jar (12 oz.) roasted red peppers, drained, cut into thin strips
1/4 cup thinly sliced fresh basil

Steps:

  • Combine pasta, chicken, chickpeas, artichokes, onions and olives.
  • Prepare dressing mix as directed on envelope. Add garlic and black pepper; mix well. Pour half over pasta mixture; mix lightly. Refrigerate 1 hour.
  • Add roasted peppers and remaining dressing mixture to pasta salad just before serving; mix lightly. Sprinkle with basil.

1 pound fresh tortelloni pasta,
2 cups baby spinach ((packed))
1 cup cherry tomatoes ((halved))
1 cup fresh parsley ((chopped) )
1 cup fresh basil ((chopped) )
1 cup baby mozzarella balls
1/2 cup sundried tomatoes in oil ((chopped, drained) )
1/2 cup olives ((sliced, any kind you like))
2 cloves garlic ((minced))
1 lemon ((juice of))
2 tablespoons red wine vinegar
1/3 cup extra virgin olive oil
1 tablespoon fresh thyme
1 teaspoon dried oregano
Kosher salt and black pepper

Steps:

  • Cook the tortellini pasta in salted boiling water according to package instructions (about 5 to 7 minutes). Drain and rinse in cold water.
  • Transfer the pasta to a large bowl. Add the rest of the salad ingredients and toss gently.
  • In a small bowl, combine the garlic, lemon juice, vinegar, olive oil, and herbs. Add a big pinch of kosher salt and black pepper. Whisk to combine.
  • Pour the dressing over the salad. Toss to combine.
  • For best flavor, allow the salad to rest for 30 minutes or so for the flavors to meld before serving. Transfer to a platter and serve.

1/2 pkg herbed grilling marinade (powder form), 1 oz package
1 Tbsp olive oil
1 Tbsp balsamic vinegar
2 Tbsp water
1 pkg mixed cheese tortellini (refrigerated type), 20 oz.
1 jar(s) pesto basil sauce (8 oz)
4-6 oz sun-dried tomatoes, julienned
1 lb boneless, skinless chicken breasts (approx. 3)
4-6 oz zesty Italian salad dressing
1 c shaved or shredded Parmesan chees
1 c toasted pine nuts
3 fresh basil leaves
salt and pepper, to taste

Steps:

  • 1. Marinade chicken in herb mix in a Ziploc bag. Add the olive oil, balsamic vinegar, and water. Marinate for at least 1 hour.
  • 2. Grill chicken, turning every 2 minutes for a total of 12 minutes.
  • 3. Boil tortellini pasta per instructions, add a small amount of olive oil to water and boil approx 7 minutes - drain well.
  • 4. Toss a small amount of olive oil in pasta to prevent sticking.
  • 5. Cut julienned strips of sun-dried tomatoes into smaller pieces.
  • 6. Toast the pine nuts. Place pine nuts in a pan in a single layer over medium heat. Constantly stir until fragrant and golden brown (about 7-8 minutes). Quickly transfer to a plate so they don't burn.
  • 7. Add pesto, sun-dried tomatoes, and toasted pine nuts to the tortellini.
  • 8. And add zesty Italian salad dressing.
  • 9. Add shaved Parmesan cheese.
  • 10. You can also season salt and pepper to taste. Stir together.
  • 11. Cut grilled chicken into bite-size strips.
  • 12. Add grilled chicken to the pasta salad prior to serving.
  • 13. Cut basil leaves into ribbons. First, roll the basil.
  • 14. Then cut into ribbons. Basil is for garnish and adds additional flavor.
