TOMATO-BASIL SPAGHETTI WITH BLACKENED CHICKEN
Easy chicken spaghetti recipe, packed with bright Mediterranean flavors including tomatoes, basil, garlic and citrus. Serve it for dinner with your favorite salad (see ideas in the post.)

- Preheat oven to 400 degrees F.
- Pat chicken breasts dry and season with kosher salt and black pepper. In a small bowl, mix together the oregano, coriander, paprika and nutmeg. Apply the spice mixture to chicken breasts on both sides.
- In an oven-safe skillet, heat 2 tbsp extra virgin olive oil until shimmering but not smoking. Add chicken and brown deeply on both sides (about 4 to 5 minutes in total) Turn heat off. Add 1/4 cup water and lemon juice.
- Transfer chicken to the 400 degrees F-heated oven. Bake for 20 to 25 minutes, turning over once. (Chicken is ready when internal temperature in its thickest part reads 165 degrees F. )
- While chicken is baking, cook spaghetti according to package. Mine took about 9 minutes in boiling water with a dash of salt. Drain in a large colander. Set aside briefly.
- In a large heavy cooking skillet, heat 1/2 cup olive oil. Stir in crushed red pepper flakes, tomatoes, garlic, and chopped green onions. Season with kosher salt and pepper. Cook for 5 to 7 minutes on medium-high. Now add white wine and lemon juice. Bring to a boil, allowing the sauce to reduce a little, then reduce heat to medium, cover and let simmer for 7-10 minutes or until tomatoes sofetn and turn a nice rusty orange.
- Now, add cooked spaghetti to the tomato mixture and stir to combine. When pasta heats through, toss in the basil leaves, Parmesigiano Reggiano, and pine nuts (if you choose).
- Transfer spaghetti to serving bowls and top with the baked chicken breasts. Enjoy!

- Briefly soak and wash the basil in cold water, and gently pat it thoroughly dry with paper towels.
- Put the basil, olive oil, pine nuts, chopped garlic, lemon juice, and salt in the processor bowl, and process to a uniform consistency; I like mine to be just a bit chunky, not completely smooth.
- Add the softened butter and whirl in just until combined.
- Transfer to a bowl, and mix in the two grated cheeses by hand; this results in a nice texture; better than blending with everything in step two.
- Store in the fridge.

- Cut a deep horizontal pocket in the side of each chicken breast. Make the pocket as large as you can without piercing the top or bottom of the breast. Rub pepper & salt over the breasts. Place 2 slices of tomato 1 teaspoon pine nuts and about 4 basil leaves in the pocket of each chicken breast. Secure the pocket with toothpicks threading along the side to close. Heat the oil in a heavy oven-proof skillet until it begins to smoke. Cook each side of the chicken until golden brown.
- Add the vinegar and chicken stock and bring to a boil. Lower the heat and gently simmer the chicken for 2 or 3 minutes per side until cooked through.
- Remove the chicken breasts from the skillet and keep in a warm oven or under a foil tent. Continue to cook the sauce until it is reduced to a thick syrup.
- Taste the sauce and season with salt and pepper. Spoon the sauce over each chicken breast. Garnish with fresh basil.

- Drizzle chicken with 1 tbls olive oil then sprinkle with salt and pepper, squeeze key lime over chicken.
- Flip over a few times to mix marinade with chicken -- set aside.
- Cook bacon -- set aside.
- Get water heating for pasta.
- In large saute pan heat 1 tbls of the Olive Oil add Shallots and Garlic.
- Saute for 1-2 minutes then add 3/4 cup of the Sun Dried Tomatoes.
- Add chicken and cook till done.
- Mix corn starch with chicken stock and slowly stir into chicken mixture then add warm half and half. Add cayenne pepper.
- Cook for 3 minutes or untill sauce is thickened. (add water if necessary).
- Place pasta in boiling water and cook acording to package .
- Add baby spinach to sauce and stir occasionally until wilted.
- Place pasta in large serving dish add sauce and toss.
- Top with pine nuts and two strips of crumbled bacon and two tablespoons of red peppers.

- Place sun-dried tomatoes in small bowl. Pour 2 cups boiling water over. Let stand until tomatoes soften, about 15 minutes. Drain tomatoes, reserving soaking liquid. Thinly slice tomatoes.
