Grilled Chicken with Buttermilk Marinade is juicy and flavourful. This Grilled Chicken Marinade made with Buttermilk, garlic, herb, spice is easy and quick to make. Best for a quick weeknight dinner or for summer barbeques.

4 chicken breast (medium size)
1.5 cups buttermilk
1 tablespoon Minced garlic
1 teaspoon Onion powder
2 teaspoon Italian seasoning ((or mixed dry herb))
1/2 teaspoon chili powder
1 tablespoon brown sugar
Salt and Pepper as per taste
2 tablespoon Melted salted Butter

Steps:

  • Pound chicken breast till it is of uniform thickness. If it is too large, then cut horizontally to two fillets.
  • In a ziplock bag or a bowl, add all the ingredients including chicken. Check the seasoning.
  • Marinate in the refrigerator for at least 1 hour up to 24 hours.
  • Remove Marinated chicken at least 1 hour before cooking and let it come to room temperature. (Letting the chicken to come to room temperature is important).
  • Heat the grill pan or the outdoor grill to medium-high heat. Grease the grill lightly.
  • Cook each fillet 3-4 minutes on each side. Bast with melted butter in between. The internal temperature reaches 165 F.
  • Cover and let it rest for 5 minutes before serving.

2 teaspoons hot sauce
4 bone-in, skin-on, chicken breasts, about 8-ounces each
Kosher salt and freshly ground black pepper
1 9.7 ounce jar Bobby Flay Mesa Grill BBQ Sauce (www.bobbyflay.com) or your favorite homemade or store-bought BBQ Sauce

Steps:

  • 1. Combine the buttermilk, hot sauce in a large plastic zip top bag, add the chicken breasts, and turn to coat in the mixture. Place the bag in a large bowl and refrigerate, for at least 4 hours and up to 24 hours. 2. Heat the grill to medium heat. Remove the chicken from the buttermilk and pat dry with paper towels. Season the breasts on both sides with salt and pepper and place on the grill, skin side down and grill, without touching, until the skin is golden brown and crisp, about 7 minutes. Turn the chicken over and brush the top side liberally with some of the barbecue sauce, close the cover and continue grilling until the bottom is golden brown about 5 minutes. Brush the top with more of the barbecue sauce, turn over, close the cover of the grill and continue grilling until an instant read thermometer inserted into the center registers 155 degrees F, about 5 minutes longer. Remove from the grill, brush with more of the sauce, loosely tent with foil and let rest 5 minutes before serving. This will allow the internal temperature to increase to 160 degrees and the juices to redistribute.

4 cups buttermilk
15 garlic cloves
1 cup fresh rosemary or thyme
Coarse salt and freshly ground pepper
3 whole chickens (about 3 pounds each), cut into 8 pieces each (then halve breasts on the diagonal)
Safflower oil, for brushing

Steps:

  • Combine buttermilk, garlic, herbs, 2 tablespoons salt, and 2 teaspoons pepper.
  • Divide chicken between 2 baking dishes. Cover with marinade, turning to coat. Refrigerate for at least 4 hours or overnight, turning chicken occasionally. Remove chicken from refrigerator 30 minutes before grilling.
  • Heat grill to medium with direct and indirect heat zones. Brush grates with oil. Remove chicken from marinade, and pat dry with paper towels. Grill breast halves, thighs, and drumsticks, skin side down, over direct heat for 10 minutes. Flip, move to indirect heat, and grill, covered, until an instant-read thermometer inserted into the thickest part of thighs registers 165 degrees, 10 to 15 minutes. 2 cups buttermilk
Juice of 1/2 lemon
1 tablespoon hot sauce
1/2 yellow onion, sliced
5 sprigs fresh thyme
3 cloves garlic, smashed
Kosher salt and freshly ground black pepper
1 (3 pound) chicken cut into 8 pieces, rinsed and patted dry
2 cups crushed corn flakes
3/4 cup grated Parmesan cheese
2 teaspoons chopped fresh thyme

Steps:

  • Preheat the oven to 400 degrees F. Fit a sheet tray with a wire rack and spray with nonstick cooking spray.
  • Mix together buttermilk, lemon juice, hot sauce, onion, thyme, garlic, salt, and pepper to a large bowl. Add chicken and coat with mixture. Cover with plastic wrap and place in the refrigerator for 3 hours or up 12 hours.
  • Mix corn flakes, Parmesan cheese, and thyme together. Season with salt and pepper.
  • Remove chicken from the marinade, letting the excess drip off, and dredge through the corn flake-Parmesan mixture, pressing to help it adhere.
  • Place on the wire rack-fitted sheet tray and bake for 45 minutes until golden and crisp.

2 cups buttermilk
1 lime, zested and juiced
3 cloves garlic, chopped
2 tablespoons ancho chili powder (or any pure chili powder)
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon turmeric
Hot sauce, to taste (recommended: Tabasco)
1/4 cup coarsely chopped fresh cilantro leaves
Salt and freshly ground black pepper
4 bone-in or boneless chicken breasts (each about 6 to 8 ounces)
Canola oil

Steps:

  • Whisk together the buttermilk, lime zest and juice, garlic, chili powder, coriander, cumin, turmeric, hot sauce, cilantro, and salt and pepper, to taste, in a large bowl. Pour the marinade into a large resealable plastic bag, add the chicken, seal the bag and refrigerate. Marinate bone-in chicken up to 12 hours, boneless up to 4 hours, chicken legs or breasts, up to 24 hours. If using fish, marinate white fish such as snapper, halibut or bass up to 30 minutes.
  • Preheat the grill pan over medium-low heat for boneless breasts and fish, and medium heat for bone-in breasts, thighs and legs. Remove the meat/fish from the marinade and pat dry with paper towels. Brush with oil and season with salt and pepper, to taste, on both sides. Grill until golden brown and charred on both sides and just cooked through.
  • Cook's Note:
  • This recipe also includes the method for fish.
  • Boneless chicken breasts: about 9 minutes total
  • Chicken thighs/legs: about 20 minutes total
  • Bone-in chicken breasts: about 15 minutes total

2 chickens (2 1/2 to 3 pounds each), quartered, with backs removed
1 recipe Barbecue Sauce, recipe follows
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1/2 cup vegetable oil
1 cup tomato paste (10 ounces)
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • Marinate the chickens in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator.
  • Heat the coals in a charcoal grill. Spread the bottom of the grill with a single layer of hot coals and then add a few more coals 5 minutes before cooking, which will keep the fire going longer. Place the chicken quarters on the grill, skin side down, and cook for about 45 minutes, turning once or twice to cook evenly on both sides. Brush with the marinade as needed. The chicken quarters are done when you insert a knife between a leg and thigh and the juices run clear. Discard any unused marinade.
  • Serve with extra barbecue sauce on the side.
  • In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered on low heat for 30 minutes. Use immediately or store in the refrigerator.
  • Yield: 1 1/2 quarts

4 chicken breasts, split, skin on with ribs
1 (12 ounce) container heluva good buttermilk ranch dressing (dip)
1 lemon, juice and zest of
2 garlic cloves, minced
1/4 cup olive oil
1/2 teaspoon fresh ground pepper
2 tablespoons fresh savory, chopped (or other fresh herb)

Steps:

  • Wash and dry the chicken breasts and set aside.
  • In the bowl of a food processor or blender, put in the ranch dip, lemon zest and juice, garlic, olive oil and fresh ground pepper. Process until well blended. Stir in the herbs.
  • Place the chicken in a large zip loc bag and pour in the marinade to coat the chicken well. Close bag tightly and place in the refrigerator for at least 4 hours or overnight.
  • Preheat grill and when well heated, reduce to low.
  • Lay the chicken on the grill, cover and check frequently to make sure chicken does not burn. It is important to cook the chicken slowly about 25-30 minutes turning once.

  • Stir in buttermilk until chicken is coated. Refrigerate for 6 hours.
  • Combine flour, salt, paprika, cayenne, garlic powder, white pepper, and onion powder in a large shallow dish.
  • Remove chicken from the buttermilk and dredge each piece in the seasoned flour. Shake off any excess and transfer to a plate.
  • Heat peanut oil in a large Dutch oven to 350 degrees F (175 degrees C). Add all the chicken to the pan and cook for 10 minutes.
  • Turn chicken pieces and cook for another 10-15 minutes.
  • Remove chicken from the oil and transfer to a cooling rack set over a paper towel lined baking sheet. Let sit for 10 minutes before serving.
