- Heat 4 tablespoons olive oil in a large pan. Add the onion and garlic and cook over medium heat until soft. Add the bell pepper, celery, chicken breast and smoked sausage and saute briefly. Sprinkle flour over and stir until all the flour has absorbed all the moisture. Stir in the chicken broth, crushed tomatoes and bay and simmer over low heat for 1-2 minutes. simmer. Remove the pan from the heat and stir in the oregano. Season with salt and plenty of pepper. Add the shrimp and let stand until cooked through (do not boil!).
- Meanwhile, cook the pasta according to package directions until al dente. Toss with the sauce and 1 tablespoon Tabasco. Season with salt and pepper and serve immediately.

- Cook linguine according to packaging instructions (al dente).
- Flatten the chicken with a meat tenderizer to an even thickness of about 1/2 inch thickness.
- Season the chicken with Italian seasoning, salt, and pepper (both sides).
- Heat olive oil in a sauce pan and saute the chicken on medium-high heat for 2-4 minutes (or until golden brown on both sides). Then, place the chicken in a baking dish and continue cooking in the oven for 10 minutes at 350 degrees (or the chicken's internal temp reaches 165 degrees Fahrenheit).
- Slice the chicken into 1/2 to 3/4 inch bite size cubes or chunks. Set aside.
- This recipe calls for 'fully cooked shrimp' so make sure your shrimp is fully cooked, warmed, and thawed. Set shrimp aside.
- In the sauce pan, at medium-high heat, heat the olive oil and add the onions until the onions caramelize and release their fragrance. Then, add the garlic, artichokes, capers, roasted red peppers, and stir for about 2 minutes (until the artichokes start to tenderize).
- Sprinkle the pan with the flour and stir until all ingredients are coated.
- Add the white wine and the lemon zest and stir until it reaches a boil. Then, simmer for 2 minutes.
- Bring the heat back up then incorporate the cream. Stir for about a minute. Add the Parmesan cheese and stir When the cheese is incorporated (melts into sauce) and the sauce thickens, add the lemon juice and stir.
- Add the sun-dried tomatoes, chicken, and shrimp then stir for about a minute. Add salt to taste.
- Add the linguine and a little bit of the parsley (save some for garnishing). Make sure the linguine is thoroughly coated with the sauce.
- Plate on to a large serving dish. Try to transfer the linguine first so you can top the dish with the sauce and ingredients. Garnish with chopped parsley, Parmesan, and maybe a sliced lemon and some black pepper. Enjoy.
LINGUINI WITH SHRIMP
Steps:
- Bring a large pot of water to a boil. Add the linguini and cook according to the directions on the box. Drain, reserving 1 cup of the cooking water.
- Meanwhile, heat the olive oil in a large skillet over a medium-high flame. Add the garlic and saute for 1 minute. Add the shrimp and cook for 3 to 4 minutes, until the shrimp turn pink. Remove the shrimp from the pan and set aside. Add the lemon juice, white wine, and the reserved cup water to the skillet. Let simmer until the liquid is reduced by about half. Salt and saute the asparagus. Cut into 1-inch pieces. Return the shrimp to the pan and stir in the parsley. Add the drained linguini to the shrimp mixture, tossing to combine. Add asparagus and tomatoes. Season with salt and pepper, to taste.

- Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
- Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! After studying several recipes, I came up with this recipe on my own. It's fairly simple to make, and my wife said it was better than the original.

- Heat 1 tablespoon olive oil in a pan over medium-high heat. Cook and stir chicken with 1 tablespoon garlic and 1 tablespoon Italian seasoning, until cooked through, 6 to 8 minutes. Transfer chicken to a bowl and set aside.

- Combine chicken broth, soy sauce, cornstarch and ginger in a small bowl and set aside.
- Cook pasta according to package instructions,drain and keep warm.
- While pasta cooks, coat a large skillet with the cooking spray.
- (add oil if necessary when cooking) Heat over med heat.
- Add green onions and garlic.
- Stir fry for 1 minute and remove from pan.
- Add squash to skillet.
- Stir fry for 2 minutes.

- Return veggies to the skillet.
- Stir all the ingredients together to coat with the sauce.

- Sprinkle with sesame seeds if desired.

- Sprinkle the chicken filets with Cajun seasoning and cook in 4 Tbsp oil until done. Cut in bite size pieces.
- Heat the remaining oil over medium heat and cook garlic, onion and broccoli for about 5 minutes. Add shrimp and chicken, and set aside.
- Cook pasta al dente.
- Make "Thick Bechamel Sauce With Parmesan and Sun Dried Tomatoes" (Recipe #158535).
- Mix together pasta, shrimp/chicken and sauce.
- Pour into greased 2 quart baking pan, the pan will be full. Sprinkle with parmesan cheese and cheddar.

This is my FAVORITE dish at Johnny Carino's in my town and this is my rendition of the recipe. My husband says it tastes exactly like theirs. I have played around with how much cayenne pepper to put in this dish because the recipe I found originally just said "to taste". For me, one teaspoon is too mild, but two teaspoons is pretty spicy. I'd put some in and do a taste test before you add more. The original recipe was in Denver's Rocky Mountain News, but I have modified it to our tastes, including leaving out the green onion and increasing the amount of the sauce. Also, the original recipe said it served 4, but we have no problem getting 6-8 servings of this. I serve it with a tossed salad and my Recipe #281657.

- Heat 1 tablespoon oil in a large skillet over medium high heat. Saute mushrooms until golden; remove from skillet with a slotted spoon and set aside.

- In 12" skillet over medium heat, add olive oil.
- Add onion and garlic and cook until tender, stirring occasionally.
- With a slotted spoon, remove onion and garlic to a small bowl.
- In remaining drippings in skillet over medium high heat cook chicken pieces until slightly browned.
- Add 3 T fresh or 3 t. dried parsley, onion, tomato sauce, chicken broth, salt, ground cayenne red pepper, basil, pepper and 1/4 cup water (feel free to replace this with 1/4 cup white wine).
- Bring to a boil, reduce heat to low, cover and simmer 10 minutes.
- Add shrimp, cover and simmer 5 minutes or until chicken and shrimp are tender.
- Spoon into bowl and sprinkle with remainder of parsley.
- Serve over angel hair pasta.
- Sprinkle a little bit of grated parmesian cheese over the top for a little something extra!
