1 tbsp rapeseed oil
2 red onion , sliced
2 red peppers , deseeded and sliced
2 garlic cloves , crushed
2 tsp chipotle paste (add extra if you prefer more heat)
2 skinless chicken breasts, cut into thin strips
400g can black beans or kidney beans
small bunch coriander , chopped
500ml passata
1 tsp ketchup or sugar
6 medium tortillas
50g mature cheddar , grated
green salad , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a large frying pan and add the onions, peppers and half the garlic. Cook for 15 mins, stirring now and then until the veg has softened. Stir in the chipotle paste, then fry for 1 min more. Add the chicken strips, turning them over in the mixture so they cook through, about 5-10 mins.
  • Stir in the beans, coriander and 150ml of the passata, then take the pan off the heat. Mix the rest of the passata with the remaining crushed garlic and the ketchup.
  • Divide the mixture between the tortillas, then fold the sides in and roll them up. Pour half the passata sauce into a 22cm square baking dish, then place the enchiladas on top, side by side. Dot over the remaining sauce and sprinkle over the grated cheese, then bake for 25-30 mins until golden brown.

1 tbsp (15 mL) vegetable oil
1 onion, chopped
1 lb (500 g) chicken breasts, trimmed and thinly sliced
1 pkg (465 g) Old El Paso* Soft Taco Kit
1 can (398 mL) Old El Paso* Refried Beans
1 1/2 cups (375 mL) shredded Cheddar cheese
1 jar (215 mL) Old El Paso* Taco Sauce
sour cream and chopped green onions

Steps:

  • Heat oil in a large skillet over medium heat. Cook onion for 3 to 5 minutes or until softened.
  • Add chicken and cook, stirring occasionally until no longer pink.
  • Sprinkle with taco seasoning mix, and stir in 1/2 cup (125 mL) water.
  • Cook, stirring for 5 minutes or until sauce has thickened slightly; remove from heat.
  • Place soft tortillas on work surface. Divide and evenly spread refried beans on tortillas.
  • Divide chicken mixture among tortillas, and spoon along one half of each tortilla. Using 1 cup (250 mL) of the shredded cheese, divide and sprinkle evenly over chicken on each tortilla.
  • Spread taco sauce packet contents on the bottom of a 9x13-inch (23x33 cm) baking dish.
  • Roll each tortilla up jelly-roll-style, beginning at the end with the chicken.
  • Place rolled tortillas seam-side-down in baking dish. Spoon taco sauce from jar evenly over tortillas. Sprinkle with remaining.
  • Cover with foil and bake in a 350°F (180°C) oven for 25 minutes; remove foil and bake 10 minutes longer or until heated through

Very yummy! I grew up making these with my mom and sisters, and everyone I knew loved them! They're easy to make and incredibly tempting! Add chicken or cilantro if you like. I suggest pairing it with easy-to-make boxed Mexican rice.

2 (16 ounce) cans refried beans
2 cups shredded Mexican cheese blend, divided
½ cup chopped onion
12 small corn tortillas
2 (10 ounce) cans red enchilada sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
  • Mix refried beans, 1 1/2 cup Mexican cheese blend, and onion in a microwave-safe bowl; heat in microwave until cheese is melted, about 1 minute.
  • Stack tortillas, 3 at a time, on a microwave-safe plate; heat in microwave until warmed, about 30 seconds. Repeat with remaining tortillas.
  • Pour enough enchilada sauce onto a small plate to cover. Quickly dip both sides of each tortilla in enchilada sauce. Spoon bean filling down the middle of each dipped tortilla and wrap tortilla around filling. Arrange filled tortillas in the prepared baking dish. Pour remaining enchilada sauce over filled tortillas and sprinkle remaining cheese over sauce layer. Cover dish with aluminum foil.
  • Bake in the preheated oven until sauce is bubbling and cheese is melted, 35 and 40 minutes.

Mildly spicy and satisfying, these easy enchiladas stuffed with refried beans, onion and red pepper will be popular with the whole family

3 tbsp olive oil
2 red onions, sliced
2 red peppers, sliced
3 red chillies, 2 deseeded and chopped, 1 sliced
small bunch coriander, stalks finely chopped, leaves roughly chopped - plus extra to serve (optional)
2 garlic cloves, crushed
1 tbsp ground coriander
1 tbsp cumin seeds
6 skinless chicken breasts, cut into small chunks
415g can refried beans (we used Discovery)
198g can sweetcorn, drained
700ml bottle passata
1 tsp golden caster sugar
10 tortillas
2 x 142ml pots soured cream
200g cheddar, grated

Steps:

  • Heat 2 tbsp of the oil in your largest pan, then fry the onions, peppers, chopped chilli and coriander stalks with half the garlic for 10 mins until soft. Stir in 2 tsp ground coriander and 2 tsp cumin seeds, then fry for 1 min more. Meanwhile, in another frying pan, fry the chicken in the remaining oil, in batches, until browned - add it to the pan of veg as it is done.
  • Stir the beans, sweetcorn, coriander leaves and 150ml of the passata into the veg and chicken. In a bowl, mix the rest of the passata with the other crushed garlic clove, the remaining spices and the sugar, then set aside.
  • To assemble, lay the tortillas onto a board and divide the chicken mixture between them, folding over the ends and rolling up to seal. Divide the passata sauce into the dishes you are using, then top with the enchiladas. Dot over the soured cream, sprinkle with grated cheese and scatter with the sliced chilli.
  • Cool and freeze (see freezing tips, below) or, if eating straight away, heat oven to 200C/180C fan/gas 6, then bake for 30 mins, scattering with more coriander leaves to serve, if you like.

This recipe appeared in our local newspaper, from the Supper Swap girls at GreenvilleOnlin.com. It's very important to first dip the tortillas in the sauce BEFORE assembling them.

2 cups shredded cooked chicken
1 (16 ounce) can refried beans
8 soft flour tortillas
1 (15 ounce) can enchilada sauce
2 cups grated cheddar cheese
shredded lettuce
chopped tomato
sliced black olives
sour cream

Steps:

  • Pour 1/4 of the enchilada sauce into a shallow bowl. One at a time, dip a tortilla in the sauce, making sure each side is wet. Transfer to a plate and fill the center of each tortilla with a handful of chicken and then 3 tablespoons of beans. Sprinkle with some cheese and roll up. Lay the tortilla seam side down in a shallow baking pan. Repeat the process until all eight are in the pan. Pour the remaining enchilada sauce over the rolled tortillas and then sprinkle with the remaining cheese. Bake at 350 for 20 minutes or until the cheese melts.
  • Garnish with lettuce, tomatoes, olives and sour cream and serve.

Lots of fun to make and especially eat! I am a vegetarian, so I have substituted vegetarian "chicken" in this recipe and it was fabulous, but if you are a meat-eater you can use the same amount of real chicken instead with the same delicious outcome. I also used a combination of mozzarella and cheddar cheeses because Mexican cheeses aren't available to me here in England but if you would prefer monterey jack or other Mexican cheeses go right ahead and use them instead. These were soooooooo good. Enjoy!

6 tablespoons butter, divided
3 cups cubed cooked chicken (or vegetarian chicken)
4 medium red chilies, diced (only remove seeds from two of the peppers, use the rest in the recipe)
3 garlic cloves, chopped
1 red onion, diced
1 orange bell peppers, diced diced or 1 yellow bell pepper, diced
1 (16 ounce) can refried beans
1 lime
1/4 cup all-purpose flour
10 ounces half-and-half
1 bunch fresh cilantro, chopped
4 ounces sour cream
1/2 cup milk
2 teaspoons cumin
1 3/4 cups shredded mozzarella cheese, divided
1 3/4 cups shredded cheddar cheese, divided
8 flour tortillas

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium heat. Place the peppers, garlic, onion and chiles in the skillet.
  • Cook until onions are translucent.
  • Add cubed cooked chicken, refried beans and juice of the lime. Cook for five minutes over low heat. Mix in 1/4 cup mozzarella and 1/4 cup cheddar. Set skillet aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 1/4 cup butter (4 tablespoons) in a medium saucepan over low heat.
  • Gradually stir in the flour and half-and-half. Mix in the cilantro, sour cream, and 1 cup each of shredded cheddar and mozzarella cheese. Cook and stir until cheeses are melted. Add 1/2 cup milk and two teaspoons cumin and stir until well integrated. The sauce will have a slightly gooey consistency.
  • Spread 1/4 cup of the sauce on the bottom of a 9x13 inch baking dish.
  • Roll chicken/bean mixture into enchiladas using the 8 tortillas and line up in baking dish.
  • Spread cheese sauce on top with a spatula.
  • Top with remaining shredded mozzarella and shredded cheddar (you should have 1/2 cup of each remaining).
  • Bake 30 minutes in the preheated oven, until cheese is melted and lightly browned.

We have Mexican night at least once a week, and this is the perfect meal for it, sure to satisfy any craving! The white bean mash serves as a replacement for the oh so boring refried beans. You'll notice it gives a great zesty dimension to the dish. I recommend serving with sides of salsa and sour cream and a nice helping of yellow rice. Mmmmmm!

4 -5 boneless skinless chicken breasts
3 tablespoons olive oil
1 teaspoon fajita seasoning mix
1/2 teaspoon onion powder
salt and pepper
1/4 teaspoon ground cayenne pepper (to taste)
2 (15 7/8 ounce) cans small white beans or 2 (15 7/8 ounce) cans great northern beans
1/4 cup water
1 teaspoon ground cumin
1 (33 ounce) package of small mexican corn tortillas
2 cups shredded colby-monterey jack cheese
1 cup shredded cheddar cheese

Steps:

  • Heat large pan with olive oil. Add chicken either whole or sliced into strips.
  • Season chicken in pan with fajita seasoning, onion powder, cayenne pepper, and salt and pepper, using more or less according to your preferred taste.
  • Meanwhile, as chicken cooks, drain beans from cans and rinse thoroughly in a colander. Place in food processor or bowl. Add water. Grind beans with food processor or a hand chopper until resembling refried bean texture, like a paste.
  • Add cumin, more cayenne pepper if desired, and a generous amount of salt to bean paste. Blend well.
  • Once chicken is cooked, remove from heat and cut in strips if not done so already. Set aside.
  • Take a single corn tortilla, and spread a spoonful of bean paste on it. Put a few pieces of the cut up chicken down the center in a line. Add a sprinkle of the colby jack cheese blend.
  • Roll up the tortilla and place seam side down in the casserole dish. Repeat using as many tortillas as it takes to fill the entire dish.
  • With leftover bean paste, spread in cracks and crevices of enchiladas, like mortar on bricks.
  • Sprinkle cheddar cheese over top of the entire dish.
  • Bake in oven at 350 degrees for 15 or 20 minutes or until hot. Use broiler if necessary to melt cheese completely.
  • Serve with a side of yellow rice and condiments such as sour cream and salsa.
  • In a 13 x 9 casserole dish, spread bean paste thinly.

24 ounces canned chicken (kirkland)
12 -16 ounces refried beans
1/2 cup salsa, homemade
0.5 (1 1/4 ounce) packet taco seasoning
6 flour tortillas
3 cups enchilada sauce, homemade
8 ounces cheese
3 tablespoons garlic, minced
16 ounces sour cream

Steps:

  • Preaheat oven to 350.
  • Get out a 13x9in. pan. Spray the pan with cooking spray, rub with coconut oil, , olive oil or butter. (Don't use all of these, just use whatever you have).
  • Place olive oil in medium sauce pan, on medium heat.
  • Add Chicken and Refried Beans, heat up so the beans are easy to mix.
  • Add salsa, taco seasoning, and garlic. Cook until warm; about 8 minutes.
  • Mix well.
  • Remove from heat.
  • Add a spoonful or two of meat mixture into the tortilla, with two dollops of sour cream.
  • Roll up the tortilla and place it seam side down in the pan.
  • Once all the wraps are in the pan. Poor your homemade enchilada sauce all over the top. It doesn't have to be only 3 cups if you end up with more or less.
  • Sprinkle cheese over the top.
  • Bake for 20-25 minutes.
  • Broil for 5 minutes.

  • Preheat oven to 400 degrees F. Line a baking sheet or large pan with foil and spray with nonstick cooking spray. Set aside.
  • While the oven is preheating, prepare the enchilada sauce by heating oil in a medium saucepan over medium high heat. Add in garlic and onions and sauté for 5 minutes or until onions become translucent.
  • Add in chili powder, cumin, oregano and cayenne pepper and stir for 30 seconds to allow the spices to cook a bit. Stir in tomato sauce and water, then bring to a boil. Reduce heat to a medium low and simmer for about 20 minutes.

If your chicken breasts are on the thicker side, this may take a little longer than 20 minutes. It’s always best to test with a meat thermometer to ensure they are fully cooked. Once done cooking, shred chicken with two forks.
