1/4 cup extra virgin olive oil
2 cloves garlic, fresh minced
1/2 teaspoon red chili flakes, crushed
1 tablespoon oregano, fresh minced
1 tablespoon rosemary, fresh minced
1 teaspoon lemon zest
1 lb. wt. chicken breast, boneless and skinless
1 3/4 cups California green seedless grapes, picked from stem and rinsed
1/2 tsp. salt
2 tablespoon extra virgin olive oil
1 tablespoon lemon juice, fresh

Steps:

  • In small bowl combine olive oil, garlic, chili flakes, oregano, rosemary and lemon zest. Whisk together marinade. Cut chicken into 3/4 inch cubes. Alternate chicken and grapes and thread onto 12 skewers. Place skewers into a baking dish or pan large enough to hold them. Pour marinade over skewers, coating each one. Marinate for 4-24 hours. Remove skewers from marinade and let excess oil drip off. Season with salt. Grill on barbecue until chicken is cooked through, about 3-5 minutes on each side. Arrange on serving platter and drizzle with additional olive oil and lemon juice.

Yakitori negima is a popular Japanese dish of skewered grilled chicken and green onion or scallion. It is grilled with a savory teriyaki-style sauce.

For Skewers:
2 chicken breasts, cut into about 3/4 inch pieces
1 scallion or green onion (negi), cut into about 3/4 inch pieces
Bamboo skewers
Water for soaking the skewers
For Yakitori Sauce (tare); makes about 1/2 cup:
5 tablespoons soy sauce
5 tablespoons mirin​
3 tablespoons cooking sake
1 1/2 to 2 tablespoons granulated sugar; adjust to taste
1 slice of ginger, optional

Steps:

  • Gather the ingredients.
  • Soak the bamboo skewers in a shallow dish of cold water for up to an hour, or overnight. This will prevent the skewers from burning when the yakitori is grilling. Alternatively, use metal skewers.
  • Evenly divide pieces of chicken and scallions between the skewers. Set aside.
  • Make the teriyaki style yakitori sauce (tare). Add the soy sauce, mirin, sake, sugar, and ginger to a small saucepan. Bring to a boil over high heat, then reduce to a simmer and cook until the sauce thickens slightly, 10 to 12 minutes. Remove from heat and set aside.
  • Prepare a medium (350°F to 375°F) gas, charcoal, or hibachi grill fire. Use half the yakitori sauce for basting, and reserve half for serving. Brush the skewered chicken and scallions generously with yakitori sauce and grill until the chicken is opaque and cooked through, turning and basting once or twice, 7 to 8 minutes total.
  • Serve with the remaining yakitori sauce on the side.

An easy recipe for Japanese Yakitori Chicken featuring bite sized chicken pieces cooked on bamboo skewers. Smothered in a sticky, sweet and salty soy sauce, they're deliciously juicy, with quick prep and no marinating required!

2 chicken thighs (boneless, chopped into roughly 4 cm / 1.5 inch square pieces)
6 spring onion / green onion (white section sliced into 4 cm / 1.5 inch lengths)
6 tbsp yakitori sauce (sub with teriyaki sauce)
6 bamboo skewers (pre-soaked in water)
1 tbsp vegetable oil

Steps:

  • On each skewer, add the following: chicken, spring onion, chicken, spring onion, chicken. Make sure they're all pressed tight together.
  • Pop a large frying pan over a medium to high heat. Add the vegetable oil and chicken skewers and cook for 3 minutes on each side, then cover and steam for another 5 minutes until almost cooked.
  • Remove the chicken skewers and pour in the teriyaki sauce. Turn the heat up and bring it to a boil - it should be bubbling quite a bit. Add the chicken skewers back into the pan and cook for another couple of minutes on each side, basting the sauce over it as you go.
  • Once the sauce starts to reduce and thicken, turn the heat off.
  • Serve the chicken skewers immediately, and baste one last time with the thickened sauce in the pan for an extra shiny coat.

These chicken skewers in flatbreads taste great as well as being healthy and an easy-to-make dinner for hectic weeknights

1 small pack mint , leaves picked
150g natural yogurt , plus extra to serve (optional)
1 lemon , zested and juiced
½ tsp ground cumin
½ tsp ground coriander
2cm piece ginger , grated
4 skinless chicken breasts, each cut into 6 pieces
4 wholemeal flatbreads or pittas
2 Little Gem lettuces , sliced
1 small red onion , sliced, to serve
pickled red cabbage , chilli sauce and hummus, to serve (all optional)
4 metal or wooden skewers

Steps:

  • Chop half the mint and put in a bowl with the yogurt, half the lemon juice, all the lemon zest, spices and ginger. Mix well and season with lots of black pepper and a pinch of salt. Add the chicken pieces, mix well and put in the fridge for 20-30 mins. Meanwhile, soak 4 large wooden skewers in water for at least 20 mins (or use metal ones).
  • When you're ready to cook the chicken, heat your grill to a medium heat and line the grill tray with foil. Thread the chicken onto the soaked wooden or metal skewers and grill for 15-20 mins, turning halfway through, until browned and cooked through.
  • Warm the flatbreads under the grill for a couple of seconds, then serve them topped with the lettuce, chicken, red onion, remaining lemon juice and mint, and any optional extras such as extra yogurt or pickled cabbage, chilli sauce and hummus.

1/4 cup mirin (Japanese sweet rice wine)
3 tablespoons soy sauce
3 tablespoons sake or dry Sherry
2 teaspoons sugar
3 bunches large scallions
1 lb skinless boneless chicken thighs (about 3), cut into 1-inch pieces

12 (8-inch) wooden skewers

Steps:

  • Line bottom of a broiler pan with foil and cover with rack. Lightly brush rack with oil.
  • Bring mirin, soy sauce, sake, and sugar to a boil in a 1-quart saucepan over moderately high heat, stirring until sugar is dissolved. Boil, uncovered, until reduced to about 1/3 cup, about 5 minutes. Remove from heat and reserve 1 1/2 tablespoons sauce in a small bowl for brushing after skewers are cooked.
  • Cut white and pale green parts of scallions crosswise into 1 1/2-inch pieces (reserve scallion greens for another use).
  • Cook scallions in a 2-quart saucepan of boiling (unsalted) water 1 minute, then drain in a colander. Immediately transfer to a bowl of ice and cold water to stop cooking. Drain, then pat scallions dry with paper towels.
  • Preheat broiler. Thread 1 skewer alternately with chicken and scallions, using 3 pieces of each and piercing scallions crosswise through center. Place skewer on rack of broiler pan, then brush both sides generously with sauce. Repeat with remaining skewers, arranging all skewers in same direction. (You may have some chicken and scallion pieces left over.)
  • Cover exposed skewers (but not chicken or scallions) with a strip of foil to prevent scorching.
  • Broil skewers 4 to 6 inches from heat until chicken is slightly charred, about 4 minutes. Remove foil and brush both sides with more sauce, then turn skewers over and replace foil. Broil until other side of chicken is slightly charred and cooked through, about 4 minutes more.
  • Serve warm or at room temperature. Just before serving, coat skewers with reserved sauce using cleaned brush.

Negima-chicken grilled on a skewer with green onion or scallion-is one of the most popular yakitori dishes in Japan and beyond.

8 chicken wings
¾ cup sake
1⅓ cups mirin
3 Tbsp. sugar
1⅓ cups shoyu (soy sauce)
1 boneless chicken thigh, with or without skin attached
1 boneless chicken breast, with or without skin attached
4 naganegi or scallion, or young, thin leeks, white parts only

Steps:

  • Soak 12 bamboo skewers in water for at least 1 hour. Meanwhile, make the tare. In a broiler or on a grill, cook the chicken wings until they are charred over about half their surfaces. In a medium pot, bring the sake and mirin to a boil over high heat. Reduce the heat to medium, add the sugar, and cook until the sugar is dissolved, stirring. Add the shoyu and chicken wings, and bring the mixture to a boil. Cook over low heat for 30 to 45 minutes, until the sauce is slightly thickened and glossy. Strain the sauce through a strainer lined with cotton cloth-chicken wings can be eaten as a cook's treat or saved for another purpose. Let the sauce cool to room temperature, then refrigerate it for as long as a month. Reheat the tare before using it, and once every week between uses.
  • Cut the chicken thigh and breast into small pieces, about 1 by 1¼ inches. Cut the white part of each green onion into 1¼-inch lengths. Thread two pieces of chicken thigh or breasts and three pieces of long onion or leek alternately on each skewer. When using chicken with skin, folding the edges of the skin, and tuck them between the chicken meat and the long onion or leek to prevent the skin from burning.
  • Heat a grill or broiler until hot. Cook the skewered chicken and green onion for 4 minutes, turning the skewers several times. Remove the chicken from the heat, and, with a pastry brush, baste it with tare.
  • Return the chicken to the heat, and cook for 2 minutes, turning the skewers several times. Remove the chicken from the heat, and baste again.
