1 clove garlic, (finely grated)
2 tablespoons olive oil
2 tablespoons rice vinegar
1/4 cup parsley, (finely chopped)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon lemon juice

Steps:

  • In a large mixing or salad bowl, whisk together the garlic, olive oil, vinegar, salt, lemon juice, and black pepper.
  • Add in the beans, chickpeas, and parsley. Toss to coat.
  • Refrigerate for two hours for best results.

1 (15 ounce) can garbanzo beans, drained
1 cup cubed cheddar cheese or 1 cup monterey jack cheese
2 stalks celery, sliced
1 small green pepper, chopped
2 green onions, sliced
1/2 cup mayonnaise or 1/2 cup salad dressing
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium tomatoes, cut into wedges
1 leaf lettuce

Steps:

  • In a medium bowl combine chicken, garbanzo beans, cheese, celery, green pepper and green onions.
  • For dressing, stir together mayonaisse, lemon juice, chili powder, salt and pepper. Stir into chicken mixture. Cover and chill for 2-24 hours. Before serving, stir mixture. Serve on lettuce lined plates. Garnish with tomato wedges.

1/2 cup olive oil
3 tablespoons balsamic vinegar

2 onions, sliced
4 tomatoes, roughly chopped
2 teaspoons ginger
2 teaspoons garlic paste
1 teaspoon crushed black pepper
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2-1 teaspoon chili powder
1/2 teaspoon turmeric powder
1 1/2 teaspoons nigella seeds
1 -1 1/2 teaspoon salt
6 -7 chicken drumsticks
2 cups pre-soaked garbanzo beans
4 -5 whole green chilies

Steps:

  • Heat oil.
  • Fry onion till brown.
  • Add ginger, garlic, black pepper, cumin powder, coriander powder, turmeric and nigella seeds (mixed with a little water to make a paste).
  • Stir fry 1-2 minutes.
  • Add tomatoes and stir fry till tomatoes are soft.
  • Add drumsticks, fry 1-2 minutes.
  • Add red chili powder and salt and mix well. Let chicken cook in its own water for a few mins or add 1/2 - 1 cup water and the garbanzo beans, mix well.
  • Cover and let cook till chicken and beans soft and oil rises to the surface.
  • (NOTE: if using canned beans, it won't take very long for this curry to cook).
  • Toss in whole green chillies, cover and turn off heat.
  • Serve in 5 minutes.
  • Yum!
  • Serve with a simple salad.

  • Preheat oven to 450°. Mix first 5 ingredients in medium bowl. Pour 1 teaspoon spiced oil mixture into small bowl; whisk in yogurt and set aside for sauce. Place chicken on large rimmed baking sheet. Rub 2 tablespoons spiced oil mixture over chicken. Add beans, tomatoes, and 1/2 cup cilantro to remaining spiced oil mixture; toss to coat. Pour bean mixture around chicken. Sprinkle everything generously with salt and pepper.
  • Roast until chicken is cooked through, about 20 minutes. Sprinkle with 1/2 cup cilantro. Transfer chicken to plates. Spoon bean mixture over. Serve with yogurt sauce.
