- In a Bread Machine - Add crust ingredients to the bread pan of your bread machine, following the manufacturer's instructions for the dough setting. (Don't be afraid to open the lid to check on it during the first knead. The dough should come together to a nice, soft and slightly tacky ball. If the dough looks too moist, add more flour a teaspoon at a time. If it looks too dry, add warm water a Tbsp at a time.)When the dough is done, remove it from the bread machine.
- By Hand - In a large bowl, mix together warm water, sugar, and yeast. Let stand for 5 minutes, until yeast dissolves and begins to foam. Add oil, flour, cornmeal, and salt. Mix by hand or on low speed with a dough hook until a soft dough comes together, 5-7 minutes by hand or 3-5 minutes in a stand mixer. Place in a greased bowl and over loosely with plastic wrap or a damp towel. Set in a warm place to rise until doubled (1 hour).
- Preheat your oven to 450F.
- Punch down the risen dough, cover ti loosely and let it rest for 5-10 minutes while you prepare the sauce and pan.
- To make the sauce: Mix together crushed tomatoes and herbs. Set aside.
- Lightly oil the inside of a 10" spring form pan or deep dish pizza pan with olive oil.
- Place the dough into the bottom of the pan, and press it gently until it covers the entire bottom and sides of the pan. (If the dough resists stretching, cover and let rest for 15-20 minutes before trying again.)
- Sprinkle 1 ½ c of cheese over the bottom of the dough. Add chopped veggies over the cheese. Spread the crushed tomato sauce over the veggies.
- Bake for 15-20 minutes, until the crust is golden.
- Remove from the oven and top with the remaining 1/2 c cheese.
- Return the pizza to the oven and cook for an additional 5 minutes, until the cheese is melted.
- Remove the pizza from the oven and let it cool in the pan for 3-5 minutes before removing the sides of the spring form pan and serving.

TRUE CHICAGO-STYLE DEEP-DISH PIZZA

- Mix sugar, yeast and 11 ounces room temperature water (about 80 degrees) in a bowl and let bloom for 15 minutes. Combine flour, salt and cream of tartar in the bowl of a stand mixer. Once yeast has bloomed, add to dry ingredients along with corn oil. Gently combine with a rubber spatula until a rough ball is formed.
- Knead on low speed with the dough hook for 90 seconds. Transfer to a lightly oiled bowl and proof until doubled in size, about 6 hours. Punch down and let dough settle for 15 more minutes.
- Position an oven rack in the middle of the oven and preheat to 450 degrees F.
- Coat bottom and sides of a 12-inch cake pan or traditional Chicago style pizza pan with melted butter. Using your hands, spread out about three-quarters of the dough across the bottom and up the sides of the pan (save the remainder for another use). Cover entire bottom in mozzarella, all the way up to the edge. Cover half with a thin, even layer of raw sausage. Cover the other half with the pepperoni. Top with a couple handfuls of crushed tomatoes. Spread out with hands to the edge. Sprinkle top evenly with grated Parm.
- Bake, rotating halfway through, until golden around the edge, about 25 minutes. Let rest for about 5 minutes, then either gently lift pizza out of pan or just cut your slice out of the pan like a pie!
VEGETABLE LOVERS' DEEP-DISH PIZZA
Adorned with peppers, onions, broccolini, and artichokes, this hearty, colorful pizza is built in the traditional style of Chicago deep-dish, with butter in the dough, mozzarella on the bottom, and sauce on top.

- Preheat oven to 450 degrees, with rack in lower third lined with a pizza stone or baking sheet. Brush a 9-by-2-inch springform or cake pan with oil.
- Heat a large skillet over medium-high. Swirl in oil. Add onion, bell pepper, and broccolini; season with salt and pepper. Reduce heat to medium and cook, stirring occasionally, until onion and pepper soften and broccolini is crisp-tender, 12 to 15 minutes. Add artichokes, garlic, pepper flakes, and oregano; cook 1 minute more. Transfer mixture to a plate; let cool completely.
- Turn dough out into prepared pan (do not punch down) and flip once to evenly coat. Starting in center of pan and using both hands, press down and outward with fingertips, working dough until it's evenly distributed along bottom and two-thirds up sides of pan.
- Sprinkle half of mozzarella evenly over bottom of dough. Toss vegetables with remaining mozzarella and spread evenly in pan. Dollop small spoonfuls of sauce evenly over vegetables; sprinkle with Parmigiano.
- Bake until dough is puffed and golden brown, 35 to 40 minutes. Let cool in pan 15 minutes. Remove from pan and cut into wedges; serve.
CHICAGO-STYLE VEGGIE DEEP DISH PIZZA WITH RICOTTA, SPINACH, AND ROASTED RED PEPPERS
Deep dish pizza is a uniquely Chicago institution, and because it's our hometown, we'd be remiss if we didn't share our secret for making one in your own kitchen. Our veggie version is packed with fresh spinach, creamy ricotta cheese, and roasted red peppers baked in an easy-to-make dough. You don't have to visit the City of Broad Shoulders to enjoy some of its authentic fare.

- Before You Cook Turn oven on to 375 degrees. Let preheat, at least 10 minutes If using any fresh produce, thoroughly rinse and pat dry Prepare a baking sheet with foil Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare Ingredients and Make Filling Coat inside of pie pan with cooking spray. Cut roasted red peppers into 1/4" dice. Place a large pan over medium heat and add 1 tsp. olive oil to hot pan. Add spinach and roasted red peppers. Cook, stirring often, until wilted, 2-3 minutes. Remove from burner and season with a pinch of salt and pepper. Allow to cool, place in a wire-mesh strainer or kitchen towel, and squeeze out liquid. Measure out 1/2 cup flour and set aside. Place remaining flour in a mixing bowl with 2 Tbsp. olive oil, all but 2 Tbsp. yogurt, and a pinch of salt. 2 Knead the Dough Mix dough until a loose, crumbly ball forms, 1-2 minutes Dough will be shaggy until kneaded. Lightly dust a clean work surface with reserved flour. Turn dough onto dusted surface and knead 5 minutes, folding dough over on itself and pressing down with the heel of your hand. Dough should be slightly sticky. If it feels too wet, add some reserved flour. If it feels too dry and crumbly, add some reserved yogurt. 3 Roll the Dough Using a rolling pin or wine bottle, roll dough into a 13" circle about 1/4" thick. Dust underneath dough with more flour as needed to prevent sticking. Carefully lift dough into pie pan and press against sides. Avoid stretching dough. Instead, lift excess dough from sides further down into pan. Trim overhanging dough. 4 Build the Pizza Spread ricotta on dough. Top with 1/3 the mozzarella. Chicago deep dish pizzas are "upside-down" and have cheese on bottom and sauce on top. Place an even layer of filling on cheese and add remaining mozzarella. Top with pizza sauce and season with 1/2 tsp. salt and a pinch of pepper. 5 Bake the Pizza Place pizza pan on prepared baking sheet (to catch any drips) and bake until crust is golden brown, 35-40 minutes. Remove from oven and cool 5 minutes. Cooling allows pizza to better hold together, making it easier to remove from pan. 6 Plate the Dish Carefully remove pizza from pan with a spatula. You may have to bend or cut the disposable pan with scissors. Garnish with grated Parmesan, oregano, and red pepper flakes (to taste).

- Prepare pizza dough (half batch only) and sauce if using homemade.
- If roasting veggies, preheat oven to broil, toss veggies in olive oil on a baking sheet, and broil for 4-6 minutes on the top rack (low/medium broil), tossing once for even cooking. Or if using a parchment-lined baking sheet, roast veggies at 450 degrees F (232 C) as the broiling function is unsafe with parchment paper. Remove from oven and set aside.
- Preheat oven to 450 degrees F (232 C).
- Next, coat a 10-inch cast iron skillet or round baking dish with olive oil and run a garlic clove around for seasoning (NOTE: If using a 12-inch cast iron, the recipe should still work you'll just need to stretch the dough a bit more to fit the pan, and use slightly more toppings). Plop your dough down into the pan and push it up around the sides about 1 to 1.5 inches (see photo). Let rest for a few minutes while preparing the rest of your toppings.
- First sprinkle in 1/2 of mozzarella cheese, then add veggies, then sauce. Top with remaining mozzarella cheese, Italian seasonings (dried basil, oregano, thyme, red pepper, etc.) and grated parmesan cheese.
- Bake for 25-30 minutes or until the crust is golden brown and the cheese and sauce are bubbly. Let rest for 5-10 minutes before cutting, then serve immediately. Store cooled leftovers covered in the refrigerator up to 2-3 days. Or in the freezer up to 1 month.

Being from Chicago, I've tasted a lot of different pizza sauces. (Pizza capital of the world!) Everyone that's had my pizza says they love my sauce. Try it once. You'll be hooked!! The best thing about this sauce is that you don't have to cook it!

- Stir all well. I use a whisk. Let sit for "a couple-two-tree" hours. What could be easier? You can use this for pasta sauce too with some meatballs and sausage. I put the raw meat in and gently simmer it for an hour or so. It gives the sauce a hearty flavor. You gotta try this one!
DEEP-DISH SPINACH PIZZA
My husband won a pizza contest with this pizza from Jane Brody who got it from Pizzapiazza in Lower Manhattan. He won for best tasting AND best looking pizza. Hard to believe when in competition with other cheese and meat-loaded pies. This one is full of vegetables with low-fat cheeses and homemade sauce in a whole wheat crust. Baked in a springform pan, the sides allow for an attractive design of plum tomatoes and fresh basil leaves. It's definitely worth the effort.

- Crust: Proof yeast in water with sugar; in a food processor or in a bowl, mix 2 cups of the all-purpose flour, whole-wheat flour and salt; add oil to bubbly yeast mixture and stir or process into flour mixture until dough pulls away from sides of bowl.
- Scrape dough onto floured work surface and knead until smooth and elastic (or process until smooth and elastic), using up to 1/4 cup more all-purpose flour, if needed, to keep dough from sticking.
- Place dough in oiled bowl, cover with plastic wrap and allow to rise, in warm place, until doubled; punch dough down, wrap it well and refrigerate until needed.
- Sauce: In a skillet, saute onion and garlic in oil until soft; reduce heat to low and add tomatoes and their liquid; break up the tomatoes slightly and add the salt, sugar, pepper, and pepper flakes; simmer, uncovered, stirring occasionally, until very thick, about 30 minutes.
- Topping: Cook spinach in covered saucepan until wilted, about 3 minutes; drain, rinse with cold water and squeeze dry; chop coarsely; saute garlic in hot oil for 15 seconds; add spinach and cook, stirring, for 1 minute; set aside.
- In a small bowl, mix the cheeses and set aside.
- Assembling: Move oven rack to lowest position and preheat to 475°; grease a 9" springform pan and sprinkle with corn meal.
- Roll half the dough out to a 12" circle; reserve other half of dough for another use; line the bottom and sides of the pan with the dough, but don't let any dough hang over the edge; spread 1 1/2 cups of the cheese mixture over the bottom of the crust.
- Spread tomato sauce evenly over the cheese; spread spinach over the tomato sauce; sprinkle with remaining cheese; arrange the tomato slices vertically, along the side of the pie, alternating the slices with the basil leaves.
- Place the remaining tomato slices in a circle in the center, alternating with the pepper slices, interspersing red and green strips; bake for 25 minutes or until crust is golden and filling is bubbly; let set 5 minutes before removing side of pan and cutting.
DEEP-DISH VEGGIE PIZZA

- Preheat oven to 425°F.
- Lightly coat a 12-inch heavy oven-proof pan or cast-iron skillet with nonstick cooking spray.
- Unroll 1 package of pizza dough and shape into a circle.
- Press dough into prepared skillet; shape onto bottom and halfway up sides.
- Bake 5 minutes, remove from oven.
- In a large skillet sautee onion and garlic in 2 tablespoons of oil about 5 minutes, or until tender.
- Add spinach, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
- Cook and stir until spinach is heated through.
- Remove from heat and set aside.
- In a small bowl combine ricotta cheese, 1/4 cup of pizza cheese, parsley, 1/4 teaspoon salt, and the red pepper flakes.
- Spread the spinach mixture evenly over the bottom of partially baked crust.
- Spread the ricotta mixture over the spinach layer.
- Top with the sliced tomatoes and drizzle with 1 tablespoon of olive oil.
- Sprinkle with 3/4 cup of the pizza cheese.
- Unroll remaining pizza dough and form into a 12 to 13 inch circle.
- Place dough on top of layers.
- Brush with remaining olive oil.
- Bake 15 to 20 minutes or until top is golden.
- Top with remaining pizza cheese.
- Bake 2 to 3 minutes, until cheese is melted.
- Let stand 10 minutes before cutting.
EASY CHICAGO STYLE SPINACH PIZZA
This is my all time favorite recipe! My family used to live near Chicago and it is really hard to find real Chicago style pizza but I think that this comes close.

- Heat oven to 500 degrees F.
- Press crust onto bottom and sides of well greased 9 x 13 inch baking dish.
- Mix spinach, mozzarella and 2 tablespoons Parmesan and spread it evenly over crust.
- Mix tomatoes, garlic, oregano and pepper flakes, and spread it over the cheese mixture.
- Sprinkle with remaining 2 tablespoons Parmesan.
- Bake 10 minutes at 500, then reduce heat to 375 degrees and bake for an additional 20 minutes.

CHICAGO-STYLE STUFFED SPINACH PIZZA
This is my favorite pizza. It's a little work but, to me, it's worth every minute. Another recipe that I clipped years ago from the Chicago Trib. The prep time includes the dough rising time, though it may be less if you're using quick-rise yeast, which works fine with this recipe.

- Crust: dissolve yeast and sugar in water in a large bowl; let stand until bubbly; stir in oil then stir in 4 cups of the flour until smooth; add additional flour as needed to form a stiff dough.
- Lightly flour the work surface; knead dough until smooth and elastic, about 7 to 10 minutes; put into a greased bowl; turn to coat top then let rise, covered, in a warm place until doubled, about 1 hour.
- Sauce: heat oil in a large saucepan over medium-high heat; add garlic, cook 2 minutes; stir in tomatoes, oregano, basil, salt and pepper; simmer until very thick, about 30 minutes or so.
- Filling: mix spinach, mozzarella, mushrooms, parmesan, romano, garlic, olive oil, basil, salt and pepper in a large bowl.
- Heat oven to 450°.
- Punch down dough; let rest 10 minutes.
- Lightly oil a 12-inch pizza pan that is at least 2" deep.
- Roll two-thirds of dough into a 16-inch circle; let sides overhang the pan.
- Put the spinach mixture into center of dough; smooth evenly over the surface.
- Roll the remaining dough on a lightly floured surface to a 12-inch circle; place over the spinach filling then pinch the edges together and cut excess dough at the edges so that the bottom dough is level with the top crust.
- Pour sauce over the dough to cover.
- Bake until crust is golden, 20-40 minutes.
- Let stand 10 minutes before slicing into wedges for serving.
- Ice cold beer or root beer is great with this pizza.
