CHEWY CINNAMON CRANBERRY NO-BAKE GRANOLA BARS

Steps:
- Lightly grease an 8x8 pan and set aside.
- In a bowl, stir together the oats, crispy cereal and cranberries and set aside.
- In a small pot combine the coconut oil, brown sugar, honey and pinch of salt. Heat the mixture up and stir well to completely dissolve the brown sugar. Bring to a boil. Cook over medium heat for 2 minutes. Remove from the heat and stir in the vanilla and cinnamon. Pour the wet ingredients over the dry ingredients and stir well to combine.
- Once completely combined, pour the mixture into the prepared 8x8 pan and press down very well with a spatula(lightly oiled if the mixture is sticking). Cool completely before cutting into 10 bars(if they seem to pull apart while cutting into bars, place in the fridge for 20 minutes before slicing). Wrap individually in paper or plastic wrap and store at room temperature.
CHEWY NO-BAKE GRANOLA BARS
These chewy granola bars were adapted from recipe #73754 from Kittencal. My changes were to add coconut, dates, and walnuts. I also used butterscotch chips in place of chocolate chips. You'll see that your own options are endless - just substitute the ingredients that your family prefers!

- Prepare a 9x13 pan with non-stick spray.
- In a large bowl, mix all dry ingredients so they are ready for the hot sugar mixture.
- In a sauce pan, make sugar mixture. Combine brown sugar, corn syrup and optional molasses; bring to a full boil and allow to boil 1 MINUTE. Turn down heat and add peanut butter and vanilla, stirring quickly until smooth.
- Work quickly - pour the hot sugar mixture over dry ingredients and use two wooden spoons to thoroughly combine ingredients. Stir in chips LAST so they don't melt in the hot mixture.
- Press mixture very firmly into prepared pan. Keep pressing down until your bars are dense in order to keep them from crumbling later when you cut them.
- When cool, use a sharp knife to cut into 18 bars (1 cut lengthwise and then 9 cuts across).
CHEWY GRANOLA BARS
I "borrowed" this recipe from the kitchen at my college because I fell in love with these bars. They are so much better than store-bought, and you can add or subtract ingredients as you wish. They make a perfect on-the-go snack; a much healthier alternative to chips or cookies, especially for kids (Great for lunch boxes!)

- Preheat oven to 350° and lightly grease or spray 9 x 13 pan.
- In large bowl, beat brown sugar, sugar, and butter until light and fluffy.
- Blend in honey, vanilla and egg.
- In separate bowl, combine flour, cinnamon, baking soda, and salt.
- Add flour mixture gradually to sugar mixture and beat until combined.
- By hand, stir in almonds, chocolate chips and oats until well mixed.
- Press mixture firmly in bottom of greased pan, and bake at 350° for 20-25 minutes, or until light golden brown.
- Cool and cut into squares.

- Heat oven to 160C/fan 140C/gas 3. Butter and line the base of a 18 x 25cm tin. Mix the oats, seeds and nuts in a roasting tin, then put in the oven for 5-10 mins to toast.
- Meanwhile, warm the butter, honey and sugar in a pan, stirring until butter is melted. Add the oat mix, cinnamon and dried fruit, then mix until all the oats are well coated. Tip into the tin, press down lightly, then bake for 30 mins. Cool in tin, then cut into 12 bars.

- 1.In a medium saucepan, combine the brown sugar with the honey and butter. Bring the mixture to a boil over medium-high heat, then lower the heat to medium-low and simmer until the sugar dissolves, about 2 minutes. Remove the saucepan from the heat.
- 2.Add the granola, rice cereal, and almonds to the saucepan and fold the ingredients to evenly coat with the sauce. Once cooled a bit add Chocolate chips. Transfer the granola mixture to a 9-by-13-inch ungreased baking pan and press firmly to evenly fill. Let the granola mixture set until firm, about 15 minutes, then cut into 12 bars.

- Line a 9x9 square pan (for thicker bars like in the pictures) or a 9x13 rectangular pan for thinner bars with parchment paper or foil that has been lightly sprayed with cooking spray leaving an overhang over the pan for easy removal of bars.
- Add dates and water to a medium pot on medium-low heat. Mash down with a fork and continue stirring and mashing while the mixture heats up. The dates should soften after about 3-5 minutes. Continue mashing and stirring until paste becomes smoother and uniform. It is okay to see some chunks still - as long as it is a uniform paste then it is ready to use.
- Once the date paste is smooth and softened, add peanut butter and coconut oil to the pot. Stir constantly to combine and remove from heat once the mixture is smooth and the coconut oil has melted (about 1 minute). Remove from heat and stir in vanilla extract.
