CHOCOLATE-CHERRY BROWNIES

Chopped maraschino cherries and chocolate chips are stirred into the batter and added on top. So there's no shortage of chewy cherries and gooey melted chocolate when you bite in these brownies. - Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 9-inch square pan with shortening or cooking spray.
- Mix brownie batter as directed on box. Stir in 1/2 cup chocolate chips and 1/4 cup cherries. Spread in pan.
- Bake 28 to 31 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Sprinkle 1/4 cup of the chocolate chips over top of baked brownies; cool 30 minutes.
- Sprinkle 2 tablespoons cherries over top. In small microwavable bowl, microwave remaining 1/4 cup chocolate chips uncovered on High 30 to 60 seconds, stirring halfway through, until chips can be stirred smooth. Spoon into resealable food-storage plastic bag; partially seal bag. Cut small tip from corner of bag; drizzle chocolate over top. Let stand about 2 hours or until chocolate is set. Cut into 4 rows by 4 rows. Store loosely covered in refrigerator.

Steps:
- Heat oven to 350°F.
- In 2-quart heavy saucepan on low heat, melt 1 cup chocolate chips with butter, stirring constantly; remove from heat. Stir in sugar, eggs and vanilla.
- Gradually add flour, baking powder and salt to chocolate mixture. Fold in oats, nuts, 1/2 cup chocolate chips and 1/3 cup chopped cherries.
- Spread into greased 9 x 13" pan.
- Bake at 350 F for about 25 minutes, or until toothpick inserted in center comes out clean.
- Cool on rack.
- Cut brownies 4 by 6 across pan to make 24 squares.
- Sprinkle remaining chopped cherries over top.
- In small heavy saucepan on low heat, melt remaining 1/2 cup chocolate chips and shortening, stirring constantly.
- Drizzle chocolate over top of brownies to make a lacey pattern.
- Chill about 15 minutes to set chocolate. Recut brownies.

I came up with this brownie recipe after being overwhelmed with cherries on our tree this year. It has the taste of a chocolate-covered cherry.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
- Mix sugar, oil, and almond extract together in a large bowl until well blended.
- Combine flour, cocoa, baking soda, and salt in another bowl; stir into sugar mixture until combined. Beat in 1/2 of the cherries using an electric mixer until moistened. Fold in remaining cherries. Pour batter into the prepared pan.
- Bake in the preheated oven until brownies spring back when gently touched, 25 to 30 minutes.

CHERRY AND CHOCOLATE BROWNIES
A decadent delight I found in a March 2005 issue of 'Fresh' magazine. This was a reader's recipe from Sharon Johnston, Mount Crosby, Queensland (Australia). There is a photograph on the same page as the recipe, and Sharon looks about 10 years old. The page bore the heading 'A slice of heaven.' I considered adding nuts to the recipe, but decided to leave it exactly as it was. Nuts would be the obvious addition here, possibly instead of the coconut. Or perhaps 1/2 cup of coconut and 1/2 cup chopped macadamia nuts. Hope you enjoy Sharon's slices of heaven!

- Preheat oven to 180°C; lightly grease a 16cm x 26cm pan and line it with non-stick baking paper.
- Place the chocolate and butter in a microwave-safe dish (a microwave Tupperware jug is ideal for this purpose); microwave on medium/50% power, stirring once, for 2 minutes or until the chocolate and butter have melted.
- Stir the sugar into the chocolate mixture, stirring well to thoroughly dissolve any lumps; stir in the eggs, flour and coconut; once these ingredients are well combined, add the cherries.
- Pour the mixture into the prepared pan and bake for 40 minutes; leave in the pan to cool; then cut into squares to serve.

WHITE CHOCOLATE CHERRY BROWNIES
These are rich brownies and very yummy. They were an experiment and it was a successful one. :) Don't expect these to last very long.

- Preheat oven to 350°F.
- Grease a 13x9x2- inch (or similar sized) pan.
- Stir together melted butter, sugar, cocoa, vanilla, and baking powder.
- I just use a rubber spatula for stirring; a wooden spoon should work just as well, or the mixer too.
- Then add an egg, stir it in well, add 1/3 cup flour, stir it in, and repeat until all eggs and flour have been added.
- The last flour addition will only be a quarter cup.
- If using a mixer, add all the eggs together, mix in and then add all of the flour.
- Make sure it's all mixed together thoroughly.
- Add the cherries and white chocolate chips and stir just until mixed.
- Pour the batter into the pan and spread it out evenly to the edges.
- Bake for 30 minutes, and then check.
- They should be done by then, but they may take another minute or two, but be careful not to overbake.
- Try to let them cool for half an hour before cutting.
