1 1/2 cups raspberry pie filling (from 21-oz can)
1 cup sliced fresh strawberries
3/4 cup fresh blueberries
6 slices (about 3/4 inch thick) angel food or pound cake (3x2 1/2 inches)
3/4 cup whipped cream topping (from 7-oz can)

Steps:

  • In medium bowl, mix pie filling, strawberries and blueberries.
  • Cut each cake slice diagonally in half to make 2 triangles. Arrange 2 triangles on each of 6 serving plates. Top with fruit mixture and whipped cream.

If you want to store them for a longer period, cover them tightly with aluminum foil and freeze for up to 2 month. This means you can make one and serve it fresh for Thanksgiving and freeze the other one for Christmas!

2 cups graham cracker crumbs
3/4 cup ground hazelnuts, toasted (see note)
1/2 cup Splenda granular
1/2 cup butter, melted (1 stick)
16 ounces reduced-fat cream cheese, softened (2 packages)
2 cups Splenda granular
1 tablespoon vanilla
1/2 cup sour cream
1/2 cup whipping cream
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 cup flour
8 eggs
3 cups canned pumpkin (slightly less than a 29 oz. can)

Steps:

  • Preheat oven to 400°F.
  • Crust: Lightly spray the bottom and sides of two 10-inch springform pans with nonstick cooking spray. Line sides of the pans with parchment or wax paper.
  • In a small bowl, combine graham cracker crumbs, hazelnuts, sugar and melted butter. Mix well and divide evenly between prepared pans. Press firmly over the bottom and 1/2 inch up the sides of the pans.
  • Filling: In a large bowl, use a heavy-duty electric mixer to combine cream cheese, sugar and vanilla. Mix until smooth; add sour cream and whipping cream. Scrape the sides of the bowl and continue beating. Add cinnamon, ginger, nutmeg, cloves and flour. Add eggs one at a time, beating well after each addition; beat in pumpkin. Divide evenly between prepared pans.
  • Place in oven side by side. Bake 20 minutes, then lower oven temperature to 200°F for 1 hour or until the cheesecakes feel firm to the touch. Turn oven off and let cheesecakes cool in the oven with the door slightly ajar for about 1 hour. This should prevent cracking (if a crack should appear, blend some sour cream, powdered sugar and vanilla and spread over the top when ready to serve). Cool, cover and refrigerate or freeze cheesecakes.
  • Unwrap frozen cheesecake and thaw either overnight in refrigerator or at room temperature for several hours; cover leftover cake with plastic wrap and store in refrigerator.
  • Note: To toast hazelnuts, spread the shelled nuts in a shallow pan or roast in a 275°F oven for 20 to 30 minutes or until the skins crack. To remove skins, rub nuts while warm with a rough cloth.

This nonalcoholic drink-a soda fountain classic-pairs pineapple, lemon, and an easy homemade raspberry vinegar. Make the Razzle Dazzle for your next gathering.

Yield Makes 1 (with additional syrup)

Number Of Ingredients 8

6 oz. fresh raspberries (about 1½ cups)
1 cup sherry vinegar
1½ oz. chilled club soda
1½ oz. fresh pineapple juice
½ oz. fresh lemon juice
½ oz. simple syrup
½ oz. raspberry vinegar
Orange half-moon and lightly crushed raspberries, for serving (optional)

Steps:

  • Blend 6 oz. fresh raspberries (about 1½ cups) and 1 cup sherry vinegar in a blender on low speed just to smash berries, about 5 seconds. Pour into a resealable container and let sit at room temperature at least 4 hours or up to overnight.
  • Strain raspberry mixture through a fine-mesh sieve into another airtight container (you should have about 1 cup). Cover and chill until ready to use. Do ahead: Raspberry vinegar can be made 1 month ahead. Keep chilled.
  • Fill a glass about two thirds full with crushed, cracked, or pebble ice. Add 1½ oz. chilled club soda.
  • Combine 1½ oz. fresh pineapple juice, ½ oz. fresh lemon juice, ½ oz. simple syrup, and ½ oz. raspberry vinegar in a cocktail shaker. Fill shaker with ice, cover, and shake until just chilled, about 5 seconds.
  • Strain into prepared glass and stir to combine. Mound crushed ice to form a rounded peak on top. Top with orange half-moon and lightly crushed raspberries (if using).

1-1/2 cups Oreo cookie crumbs
1/4 cup butter, melted
1 package (8 ounces) cream cheese, softened
3/4 cup confectioners' sugar
1 package (10 ounces) frozen sweetened raspberries, thawed
3/4 cup cranberry-raspberry juice, divided
1 teaspoon lemon juice
2 cups heavy whipping cream, whipped

Steps:

  • Combine cookie crumbs and butter; press onto the bottom of an ungreased 9-in. springform pan. In a large bowl, beat cream cheese and confectioners' sugar until smooth. Beat in the raspberries, 1/2 cup cranberry-raspberry juice and lemon juice until blended. Fold in whipped cream. Pour onto crust. , Spoon remaining juice over cheesecake; cut through batter with a knife to swirl. Cover and freeze overnight. Remove from the freezer 15 minutes before serving.
