TOMATO AND GOAT CHEESE TARTS

Steps:
- Unfold a sheet of puff pastry on a lightly floured surface and roll it lightly to an 11 by 11-inch square. Using a 6-inch wide saucer or other round object as a guide, cut 2 circles from the sheet of puff pastry, discarding the scraps. Repeat with the second pastry sheet to make 4 circles in all. Place the pastry circles on 2 sheet pans lined with parchment paper and refrigerate until ready to use.
- Preheat the oven to 425 degrees F.
- Heat 3 tablespoons of olive oil in a large skillet over medium to low heat and add the onions and garlic. Saute for 15 to 20 minutes, stirring frequently, until the onions are limp and there is almost no moisture remaining in the skillet. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, the wine, and thyme and continue to cook for another 10 minutes, until the onions are lightly browned. Remove from the heat.
- Using a sharp paring knife, score a 1/4-inch-wide border around each pastry circle. Prick the pastry inside the score lines with the tines of a fork and sprinkle a tablespoon of grated Parmesan on each round, staying inside the scored border.
- Place 1/4 of the onion mixture on each circle, again staying within the scored edge. Crumble 1 ounce of goat cheese on top of the onions. Place a slice of tomato in the center of each tart. Brush the tomato lightly with olive oil and sprinkle with basil, salt, and pepper. Finally, scatter 4 or 5 shards of Parmesan on each tart.
- Bake for 20 to 25 minutes, until the pastry is golden brown. The bottom sheet pan may need an extra few minutes in the oven. Serve hot or warm.
CHERRY TOMATO CANAPES WITH GOAT CHEESE AND CAVIAR
These baby balls of flavour make an elegant cold canapé that's easy to make in bulk. Cook's note: Buy the bigger variety of cherry tomato as these are easier to stuff.

- Cut the base off each of the cherry tomatoes and scoop out the seeds. Put them, cut side down and sit on kitchen paper to absorb any tomato juices from inside.
- In a bowl, mix together the goat's cheese, cream and chopped chives and season with salt and pepper. This can now be spooned or piped (piping looks more stylish and professional) into the hollowed-out tomatoes.
- Cut the chives for the garnish into 1cm lengths. Top each tomato with a little caviar and a couple of pieces of chive.

- Cook pasta in 6-quart pot of boiling water until tender.
- While pasta is cooking, toss tomatoes with salt and let juices exude.
- Toss hot pasta with goat cheese in large bowl until cheese is melted and coats pasta. Add tomatoes with juices, olives, basil, salt and pepper to taste; toss and combine.
- Note: To prevent basil from discoloring, don't tear until just before pasta is done.

This recipe is from Paula Dean's show. I usually make them when I am hosting dinner at home for a few friends. However they are extremely easy to make, so delicious and "healthy". I will be making them for a potluck next. Hope you enjoy! NOTE: definitely double the recipe, one batch feeds 4.

- Directions.
- Preheat the oven to 350 degrees F.
- Place the diced tomatoes in a colander. Sprinkle with the onions, basil, and House Seasoning, and toss to coat. Allow to drain, stirring occasionally. Fill each phyllo shell with a scant tablespoon of the tomato mixture. Stir together the mozzarella and mayonnaise. Frost the top of each shell with a scant tablespoon of the mozzarella mixture. Sprinkle each shell with 1/4 teaspoon of bacon pieces. Bake the filled shells for 10 to 12 minutes. Serve hot. These may be prepared ahead of time and refrigerated until serving time.
- House Seasoning: 1 cup salt + 1/4 cup black pepper + 1/4 cup garlic powder.
- Mix ingredients together and store in an airtight container for up to 6 months.

- Use a small, sharp knife to remove the tops from the cherry tomatoes, and reserve for serving. Using a small teaspoon, remove the seeds from the tomatoes. Trim the bases of the tomatoes so they sit flat.
- Combine the goat's cheese, single cream, toasted pine nuts and chopped basil leaves, then season. Spoon mixture inside each tomato and top with extra small basil leaves. Replace the reserved lids and serve.

- Remove any stems from the cherry tomatoes. Turn them stem-side down on a cutting board or other work surface. Carefully slice off the top third of each tomato, reserving these pieces for another use.
- Stir the sour cream or creme fraiche to make it smooth. Using a small spoon, dab a scant teaspoon of the cream carefully and neatly on the top of each tomato.
- Using the tip of a knife, place a tiny dab of the caviar on the cream. Arrange the tomatoes on a platter and serve, or refrigerate for up to one-half hour before serving.

- Preheat oven to 375ºF/180ºC degrees.
- Place cherry tomatoes in an oven-proof shallow pan.
- Drizzle olive oil and roast for about 15 minutes until tomatoes are soft.
- Transfer the tomatoes to a bowl. Add balsamic vinegar, salt and pepper and toss gently. You can refrigerate it at this point if serving it chilled.
- Transfer to a plate and top with goat cheese and basil leaves.
- Infuse love and serve!
