CHERRY SNOWBALL COOKIES
This is a version of the popular snowball cookies. Cherries, coconut, and walnuts have been added. They are easy to make, not overly sweet, and make a pretty festive pink color inside from the addition of the chopped maraschino cherries.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Beat 1/4 cup confectioner's sugar and butter with an electric mixer until smooth. Add flour; beat for 5 seconds. Add oats; beat for 5 seconds. Add coconut; beat for 5 seconds. Add walnuts; beat for 5 seconds. Add salt; beat for 5 seconds.
- Mix cherries into the butter mixture, beating until dough comes together and turns light pink from cherries, about 25 seconds.
- Drop spoonfuls of the dough 2 inches apart onto prepared baking sheets.
- Bake in preheated oven until slightly golden, 18 minutes. Remove from oven. Pour remaining 1 cup confectioners' sugar into a shallow dish; roll warm cookies in sugar to coat. After rolling all of the cookies once, roll again in confectioners' sugar to coat.

In another bowl, whisk flour, oats and salt; gradually beat into creamed mixture. , Shape 1 tablespoonful of dough around each cherry, forming a ball. Place 2 in. apart on ungreased baking sheets. CHERRY SNOWBALLS
My mom made these every Christmas and we SO looked forward to them. The dough is almost like a shortbread and kind of melts in your mouth. I often make a double batch, using half red cherries and half green. Enjoy!

Steps:
- Blend together butter, 1/2 cup icing sugar and vanilla.
- Then add flour, salt and chopped pecans.
- Mix well to form a dough.
- Chill dough thoroughly.
- Drain candied cherries well.
- Form dough around each cherry to form a small ball.
- Bake at 400 for 10- 15 minutes.
- (Dough should not brown).
- Roll in icing sugar while warm and again when cool.

- Preheat oven to 350 degrees F.
- In a mixing bowl, beat egg whites and salt to soft peaks, then add sugar and beat again until peaks are stiff. Beat in almond flavoring. Using a rubber spatula or wooden spoon, stir in half of the coconut. Sprinkle in the nutmeg and flour, stir, then fold in the remaining coconut.
- Using a melon baller or other small scoop, or working with 2 spoons, form 9 "snowballs" a couple of inches apart on each of 2 cookie sheets. Bake snowballs 12 to 15 minutes, until lightly golden. Remove from oven and garnish each snowball with half a cherry and a couple of slivered almonds. Transfer to a rack or serving plate to cool.
CHERRY SNOWBALLS CANDY
An incredibly simple recipe for those of us who are not gifted in the art of candy-making :) No cooking, just melting white chocolate - my sons and I will be making these to give as gifts this year.

- Cut each cherry halfway through so you can spread it open.
- Place a pea-size ball of marzipan inside each cherry. Press halves together and set aside.
- In a small microwavable bowl, melt 8 ounces white chocolate on medium power in the microwave for 30-second intervals until melted. Stir well.
- Dip cherries in melted chocolate. Place on parchment paper to harden.
- When chocolate has hardened, melt remaining white chocolate and dip cherries again. Place on parchment paper to cool. Before the chocolate actually sets and hardens, roll each candy in the coconut - then place back on the parchment paper and let harden for at least 1 hour.

- Line a baking sheet with waxed paper; set aside. , In a large saucepan, combine the butter, milk, cocoa and vanilla. Cook and stir over medium heat until butter is melted and mixture is smooth. Remove from the heat; stir in cracker crumbs and 1-1/2 cups coconut. Let stand until cool enough to handle., Using moistened hands, wrap about 1 tablespoon of mixture around each marshmallow (dip hands in water often to prevent sticking).
