FRITTATA WITH TOMATOES, ONIONS AND BASIL

6 medium onions, thinly sliced
6 tablespoons olive oil
8 ounces plum tomatoes, peeled
Salt
Black pepper, freshly ground
6 eggs
2 tablespoons freshly grated Parmesan
2 ounces butter
Handful fresh basil

Steps:

  • Sweat the onions in the oil until just browning. Chop the tomatoes and add to the onions with salt to taste. Cook for 10 minutes, stirring occasionally. Press the vegetables to the side of the pan and remove to a bowl with a slotted spoon. Leave to cool.
  • Beat the eggs until well mixed but not frothy. Add the vegetables, cheese, a good quantity of pepper and salt to taste. Tear up the basil leaves, add and stir everything together. Melt the butter in a 12 inch nonstick frying ban until just foaming. Pour in the egg mixture, lower the heat and cook for 15 minutes until the eggs are set but the top is still a bit runny. Then put the pan under the broiler for 30 seconds.
  • Loosen the frittata with a pliable spatula and slide onto a suitable dish. Cut into wedges when cooled. It can be eaten warm with a salad or cold on a hunk of bread.

60 g butter (plus a little extra)
4 large thinly sliced onions
6 eggs
2 garlic cloves, crushed
salt & freshly ground black pepper
1 chili, finely diced (optional)

Steps:

  • Put the butter, garlic, diced chili and onions in a frying pan and fry gently until the onions are a nice golden brown.
  • Beat the six eggs well with the salt and pepper.
  • Scoop the onions out of the pan and mix with the eggs.
  • Melt the extra butter in the pan and pour in the egg mixture.
  • Cook on both sides until browned Slice in wedges and serve hot.

1 red onion, peeled and cut into 8 equal-size wedges
1 yellow onion, peeled and cut into 8 equal-size wedges
salt & freshly ground black pepper, to taste
olive oil, as needed
10 eggs
1/4 cup heavy cream
1/2 cup freshly grated parmigiano-reggiano cheese
2 tablespoons unsalted butter
1 teaspoon finely chopped fresh rosemary

Steps:

  • Preheat an oven to 350ºF.
  • In a large bowl, combine the red and yellow onions, salt, pepper and olive oil and toss to coat well.
  • Preheat a grill pan over high heat.
  • Arrange the onion wedges on the pan and cook until they are browned and tender underneath, about 5 minutes.
  • Turn and cook until the onions are very tender, 5 to 7 minutes more.
  • Transfer to a plate and set aside.
  • In a large bowl, whisk together the eggs and cream until blended.
  • Stir in the cheese, salt and pepper until smooth.
  • In a 10-inch braiser or ovenproof fry pan over medium-low heat, melt the butter, add the rosemary and cook, stirring, for 1 minute.
  • Pour the egg mixture into the pan and fold gently to combine the rosemary and eggs.
  • Arrange the grilled onions on top, transfer the pan to the oven, and bake until the frittata is golden and cooked through, 12 to 15 minutes.

1 small zucchini, 1-inch-diced
1 red bell pepper, seeded and 1 1/2-inch-diced
1 yellow bell pepper, seeded and 1 1/2-inch-diced
1 red onion, 1 1/2-inch-diced
1/3 cup good olive oil
Kosher salt and freshly ground black pepper
2 teaspoons minced garlic (2 cloves)
12 extra-large eggs
1 cup half-and-half
1/4 cup freshly grated Parmesan cheese
1 tablespoon unsalted butter
1/3 cup chopped scallions, white and green parts (3 scallions)
1/2 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Place the zucchini, peppers, and onion on a sheet pan. Drizzle with the olive oil, sprinkle with 1 1/2 teaspoons salt and 1/2 teaspoon pepper, and toss well. Bake for 15 minutes. Add the garlic, toss again, and bake for another 15 minutes. Remove from the oven and turn the oven to 350 degrees.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, Parmesan, 1 teaspoon salt, and 1/2 teaspoon pepper.
  • In a 10-inch ovenproof saute pan, melt the butter and saute the scallions over medium-low heat for 1 minute. Add the roasted vegetables to the pan and toss with the scallions. Pour the egg mixture over the vegetables and cook for 2 minutes over medium-low heat without stirring. Transfer the pan to the oven and bake the frittata for 20 to 30 minutes, until puffed and set in the middle. Sprinkle with the Gruyere and bake for another 3 minutes, until the cheese is just melted. Cut into 6 or 8 wedges and serve hot.

1 small brown onion, halved, thinly sliced crossways
1 (170 g) jar marinated artichoke hearts, drained
6 eggs
1 garlic clove, crushed
salt & freshly ground black pepper
2 tablespoons fresh continental fresh parsley leaves

Steps:

  • Preheat grill on medium-high. Heat oil in a 20cm-diameter (base measurement) non-stick frying pan over medium heat. Add onion and cook, stirring occasionally, for 5-6 minutes or until golden brown. Add artichokes and cook for 2 minutes or until heated through.
  • Kids' task: Meanwhile, place the eggs in a jug. Add the garlic and whisk until combined. Season with salt and pepper.
  • Pour the egg mixture over the artichoke mixture. Reduce heat to low and cook for 6-7 minutes or until frittata is set around the edge but still runny in the centre. Cook under preheated grill for a further 2 minutes or until golden brown and just set. Remove from grill. Turn onto a chopping board.
  • Cut frittata into 8 wedges. Place on a serving platter and sprinkle with parsley to serve.

12 large eggs
1 cup loosely packed chopped herbs, such as flat-leaf parsley, basil and tarragon
1/2 cup whole milk
salt & freshly ground black pepper
4 tablespoons unsalted butter
1 medium onion, very finely chopped
2 tablespoons extra-dry vermouth
1 small tomatoes, thinly sliced

Steps:

  • Preheat the oven to 350°.
  • Whisk eggs with chopped herbs and whole milk in a bowl and season with salt and pepper.
  • In a medium ovenproof nonstick skillet, melt 2 tablespoons butter over moderate heat. Add onion and saute until it is softened, about 6 minutes.
  • Add vermouth and increase heat to high and cook until evaporated, about 1 minute. Reduce heat to moderate and add the remaining 2 tablespoons of butter to the skillet.
  • Pour in the egg mixture. Carefully arrange the tomato slices on top of the egg mixture in a single layer in a pretty circle. Cook eggs without touching, until the edge just begins to set, about 4 minutes.
  • Place skillet in oven and bake for 30 minutes, or until it is set in the center.
  • Let the frittata stand for 5 minutes, then slide it onto a large plate and serve.

1 cup diced baking potato
3 tablespoons water
1 lb onion, sliced
1/3 cup water
1 tablespoon chopped fresh sage
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated parmesan cheese, divided
2 tablespoons skim milk
6 egg whites, lightly beaten
4 eggs, lightly beaten

Steps:

  • Place potato and 3 tbs water in a small bowl. Cover with plastic wrap, vent and microwave 4 minutes or until tender, stirring once. Set aside.
  • Heat a 10" skillet over med-high heat. Coat pan with cooking spray and add onion.
  • Cover and cook 10 minutes or until lightly browned, stirring occasionally.
  • Uncover and cook 10 minutes or until golden brown, stirring frequently. While onions cook, add 1/3 cup water, 1 Tbs at a time to prevent sticking.
