Spicy and sweet - ginger, garlic, chili powder, and curry paste are just a few of the flavors in this tomato chutney. Best made with tomatoes fresh from the garden.

4 pounds ripe tomatoes
1 (1 inch) piece fresh ginger root
3 cloves garlic
1 ¾ cups white sugar
1 cup red wine vinegar
2 onions, diced
¼ cup golden raisins
2 teaspoons mixed spice
1 teaspoon chili powder
1 pinch paprika
1 tablespoon curry paste

Steps:

  • Fill a saucepan with water, and bring to a boil. Place tomatoes in boiling water, and cook for 3 to 5 minutes, or until skins begin to crack and peel. Remove from water, cool, and peel.
  • Puree tomatoes with ginger and garlic in a food processor or blender.
  • Place tomato mixture, sugar, vinegar, onions, and golden raisins in a large saucepan. Season with mixed spice, chili powder, paprika, and curry paste. Simmer over medium heat until thick. Refrigerate until ready to use.

Hot, spicy and tangy condiment made with red chilies, garlic and spices. It is best served with snacks & chaats.

25 dried red chilies ((or 2½ tablespoons kashmiri chilli powder) )
10 medium garlic cloves ((refer notes))
½ teaspoon cumin seeds ((or cumin powder))
⅓ teaspoon salt ((adjust to taste))
1½ to 2 tablespoons sugar ((or jaggery, adjust to taste))
1 to 1½ tablespoon lemon juice ((or apple vinegar, adjust to taste))
1½ tablespoon oil
1 pinch mustard seeds
1 pinch hing ((skip to make gluten-free))
1 sprig curry leaves

Steps:

  • Optional - Skip this step if you prefer to use red chilli powder. Break red chilies to 2 parts each and deseed them. Remove the stalks. Add them to a bowl and pour hot water. Once they soften, remove them from water and add to a grinder/ blender jar.
  • Add garlic, salt, sugar, vinegar, cumin seeds and 3 to 4 tablespoons water to the same blender jar.
  • Blend all of them until smooth and thick adding more water as needed. It should have a sauce like consistency.
  • Taste test and add more sugar, salt or vinegar to suit your taste. It should be well balanced in flavors and taste slightly hot, spicy, tangy and mildly sweet.
  • Garlic chutney is ready to serve with snacks, breakfasts and chaats.

I had way to many patty pan squash this year. This was a great way to use them. This is a hot spicy chunky relish with a hint of garlic. You will need to go to an ethnic Indian store to get the spice mix for it. One is a very red/orange Hot Garlic Chutney dry spice mix and the other is a curry powder that is very golden because it has a lot of turmeric. There are many different brands that have differing flavors. So just experiment. Should be fun. I love this with pinto beans.

4 lbs squash, cut into 2 in.long chunky strips
4 cups white vinegar
1 2/3 cups sugar
5 teaspoons hot garlic chutney mixed spice
2 teaspoons curry powder
3 bay leaves
2 tablespoons pickling salt

Steps:

  • Salt squash and let sit for 3 hours, stir several times during 3 hour wait.
  • Drain and rinse squash.
  • Mix vinegar, sugar and spices. Bring to a boil then add drained squash, resume boil and simmer 10-15 minute till tender. You may need to add more vinegar to cover cooked squash.
  • Taste and add more curry or chutney spice if needed. Remove bay leaves.
  • Put in hot pint jars and process 10 minute in water bath.

  • Place peeled garlic into food processor or high powered blender i.e Vitamix/Nutri Bullet. Grind to a paste.
  • Add the red chili powder, cumin powder, salt and, sesame seeds. Blitz in the blender/processor until all of the ingredients are blended together.
  • COOKING THE MIXTURE IS OPTIONAL. I prefer to cook the mix to get rid of the raw garlic taste and preserve it a bit better. Add 2-3 tbsp oil (vegetable is what I used) to a pan and heat over medium-low. Transfer the blended ingredients to the pan and stir making sure to not burn the garlic. Add in the lime juice and keep stirring. If the garlic is starting to burn make sure you lower the heat.
  • Cook this mixture for about 5-7 minutes. Once the mixture has cooked, set aside and let it cool. Once cool, place in an airtight jar, layer the top of the lasanyu marchu with some oil and store in the fridge for up to 6 months. * See Recipe Notes
