2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
¼ cup shortening, chilled
.66 cup cold milk
2 cups cherries, pitted and halved
¾ cup white sugar
½ teaspoon ground cinnamon
2 teaspoons grated lemon zest
2 tablespoons butter, melted

Steps:

  • To make dough: In a medium bowl, sift together flour, baking powder and salt. Cut in shortening with a pastry blender or two knives, until mixture resembles coarse crumbs. Stir in milk, a little at a time, and mix well. Knead briefly. Set aside.
  • For filling: In a medium bowl, stir together cherries, sugar, cinnamon and lemon zest until well mixed.
  • On a floured surface, roll the dough into a rectangle 1/4 inch thick. Brush with melted butter. Spread the cherry filling evenly over the surface of the dough, leaving 1/2 inch around the edges. Roll up the dough, starting at a short end, and pinch together all the edges so that the juice will not escape. Wrap roll in a kitchen towel or cheesecloth and tie loosely.
  • Place in a steamer or colander over boiling water, cover and steam for 90 minutes, until dough is firm. Remove cloth, slice and serve.

This jam roly-poly is simple to make, comforting and sure to bring back memories of traditional school dinners

50g salted butter, cold and cut into chunks, plus extra for greasing
250g self-raising flour, plus extra for rolling
1 vanilla pod, seeds scraped out
50g shredded suet
150ml milk, plus a drop more if needed
100g/4oz raspberry or plum jam, or a mixture
custard, to serve

Steps:

  • Put a deep roasting tin onto the bottom shelf of the oven, and make sure that there's another shelf directly above it. Pull the roasting tin out on its shelf, fill two-thirds with boiling water from the kettle, then carefully slide it back in. Heat oven to 180C/160C fan/gas 4. Tear off a large sheet of foil and greaseproof paper (about 30 x 40cm). Sit the greaseproof on top of the foil and butter it.
  • Tip butter, flour and vanilla seeds into a food processor; pulse until the butter has disappeared. Tip into a mixing bowl. Stir through the suet, pour in the milk and work together with a cutlery knife until you get a sticky dough. You may need a drop more milk, depending on your flour.
  • Tip the dough out onto a floured surface, quickly pat together to smooth, then roll out to a square roughly 25 x 25cm. Spread the jam all over, leaving a gap along one edge, then roll up from the opposite edge. Pinch the jam-free edge into the dough where it meets, and pinch the ends roughly, too. Carefully lift onto the greased paper, join-side down (you might find a flat baking sheet helpful for this), loosely bring up the paper and foil around it, then scrunch together along the edges and ends to seal. The roly-poly will puff quite a bit during cooking so don't wrap it tightly. Lift the parcel directly onto the rack above the tin and cook for 1 hr.
  • Let the pudding sit for 5 mins before unwrapping, then carefully open the foil and paper, and thickly slice to serve.

175g fresh cranberries (or frozen, thawed)
1 tbsp icing sugar
2 tbsp cranberry sauce or jelly
300g self-raising flour , plus extra for dusting
140g dried suet
85g caster sugar
finely grated zest 1 orange
175-200ml milk
custard , to serve

Steps:

  • To make the filling, warm the cranberries and icing sugar together in a saucepan until the fruits begin to soften. Increase the heat, so the juices boil and become jammy. Pour the mixture into a bowl, then stir in the cranberry sauce or jelly. Leave to cool. Butter and lightly flour a large sheet of greaseproof (about 40 x 30cm), and sit it on a bigger sheet of foil. Put a steamer on to simmer.
  • For the dough, mix together the flour, suet, caster sugar and orange zest with a wooden spoon. Stir in some milk until the mixture reaches the consistency of a soft pastry. Gather together into a ball, but don't overwork or it will toughen.
  • On a lightly floured surface, roll the dough into a rectangle about 22cm x 25cm. Spread with the cooled cranberry mix, leaving a 2cm border around the edge. Moisten the border with cold water or milk before rolling into a cylinder. Start by tucking over the border of one of the short ends, then lift as you roll (see step 1, click photo above) so the jam doesn't get squeezed out. With the long join underneath, lay the roly-poly in the centre of the parchment paper. Fold over the long paper and foil edges to seal, leaving enough space above the pudding to allow it to rise. Squeeze the paper ends together tightly to seal them.
  • Lay the parcel in the steamer over the simmering water, cover and steam for 1¼-1½ hrs, until firm to the touch. Rest for a min or two before unwrapping, slicing and serving. Vanilla custard is the perfect accompaniment and the roly-poly is best eaten as soon as it is made.

Nigella's jam roly-poly pudding is complete comfort food. It's baked to make cooking a little less challenging, leaving you with a slightly crisp edge rather than complete steamy stodge.

250g/8oz self-raising flour
pinch salt
50g/2oz light brown sugar
125g/4oz shredded suet (vegetarians may substitute vegetarian suet)
6-8 tbsp water
5 tbsp raspberry jam, warmed
milk, for brushing
1 free-range egg, beaten
demerara sugar, to glaze
custard, to serve

Steps:

  • Preheat the oven to 200C/400F/Gas 6.
  • Sift the flour into a bowl with the salt and add the light brown sugar. Add the suet and just enough water to create a soft, but not sticky, dough.
  • Place the dough onto a floured work surface and roll out into a rectangle about 20cm/8in x 30cm/12in.
  • Brush one side of the pastry with the warmed raspberry jam, leaving a 1cm/½in border all around the edge. Fold the jamless border in and brush with milk.
  • With the short side of the pastry sheet towards you, roll up the pastry loosely and seal the ends well.
  • Place the pastry roll onto a greased baking sheet with the sealed edge underneath.
  • Brush the pastry roll all over with beaten egg and sprinkle with demerara sugar.
  • Place into the oven to bake for 35-40 minutes, or until golden-brown and cooked through.
  • Remove from the oven and sprinkle on a little more demerara sugar.
  • To serve, place generous slices of the roly-poly into bowls and serve hot with custard.

This is how my mother (who hates cooking) always made roly poly, which is usually made with a suet pastry. I still remember it fondly - we had it with custard after Sunday lunch.

8 ounces all-purpose flour
4 ounces butter or 4 ounces margarine, cold
1 teaspoon baking powder
2 -4 tablespoons golden syrup or 2 -4 tablespoons jam
1/2 cup sugar
1 cup warm water

Steps:

  • Preheat the oven to 375°F.
  • Mix the flour and baking powder and rub in the butter/margarine.
  • Using cold water, make the mix into a pastry.
  • On a floured board, roll the pastry out into a rectangle about 1/4 inch thick (it cooks in a deep dish, so make sure the width is small enough to fit in the dish).
  • Spread the syrup/jam over the pastry and roll it into a cylinder.
  • Place the roll into a deep dish.
  • Dissolve the sugar in the warm water and pour over the roll.
  • Bake for 30-40 minutes until golden. Serve immediately.
