1 egg
2 egg whites
1 cup mashed ripe bananas
1 teaspoon vanilla extract

1 (8 ounce) can crushed pineapple, drained
½ cup chopped maraschino cherries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 8x4-inch loaf pans.
  • Beat white sugar, brown sugar, butter, and applesauce together in a bowl using an electric mixer until light and fluffy. Beat egg and egg whites into sugar mixture; stir in bananas, vanilla extract, and cinnamon. Mix flour, alternating with buttermilk, into sugar mixture until batter is well mixed; fold in pineapple and cherries. Pour batter into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 teaspoon baking soda
1 teaspoon salt

1 (10-oz.) jar maraschino cherries, quartered, well drained
2 teaspoons powdered sugar

Steps:

  • Heat oven to 325°F. Grease and flour bottoms only of two 8x4-inch loaf pans. In large bowl, combine flour, sugar, baking soda and salt; mix well. Add oil, vanilla, eggs and pineapple with liquid; mix with electric mixer at low speed until combined. Fold in cherries. Spoon into greased and floured pans.
  • Bake at 325°F. for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes. Remove from pans; place on wire racks. Cool 1 hour or until completely cooled. Sprinkle cooled loaves with powdered sugar.

COCONUT CHERRY LOAF

Is a combination of two traditional favorites. Nice for a change. Crowd pleaser: pretty, with good flavor. Freezes well.

Number Of Ingredients 12

1 2/3 cups flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
½ cup medium coconut
1 cup chopped maraschino or red glace cherries
½ cup margarine or butter, softened
1 cup sugar
2 eggs
1 tsp vanilla
½ tsp almond flavoring
1 cup crushed pineapple with syrup

Steps:

  • Grease 1 (9x5x3) loaf pan (I like to line with wax paper first, then spray with cooking spray). Alternatively, you could use a pan of mini loaves. Just oil these.
  • Preheat oven to 350 degrees F
  • Place flour, coconut, salt, baking powder and baking soda in medium bowl. Stir with a whisk to mix well. Fold in chopped cherries and stir to coat cherries with flour (this helps keep them from sinking to the bottom while cooking.)
  • Beat margarine and add sugar, beating until light and fluffy. Add eggs, beating after each addition, then add almond flavor and vanilla. Stir in pineapple until batter is well mixed.
  • Add dry ingredients to wet ingredients and stir just until combined.
  • Pour batter into prepared pan(s).
  • Bake for about 1 hour, or until toothpick inserted into centre comes out clean. (30 - 35 minutes for mini loaves.)
  • Cool in pan on rack for 20 minutes. Remove bread from pan (and peel off wax paper if you used it) and completely cool on rack before cutting. It cuts easier the next day, and even better while frozen.

The original version of this recipe is from Easy Home Cooking. I've listed vegan alternatives for those who want to make the bread without animal products.

1 3/4 cups all-purpose flour
2 tablespoons baking powder
1/2 teaspoon salt
1/2 cup sucanat or 2/3 cup firmly packed brown sugar
1/3 cup butter or 1/3 cup margarine, softened
2 eggs or 1 mashed ripe banana
1 cup mashed ripe banana

Steps:

  • Drain maraschino cherries, reserving 2 Tablespoons juice.
  • Cut cherries into quarters.
  • Combine flour, baking powder, and salt; set aside.
  • Combine sugar, butter, eggs [or ONE mashed banana], and reserved cherry juice in large bowl. Beat with electric mixer at medium speed 3-4 minutes or until well mixed.
  • Alternate between adding flour mixture and mashed bananas, beginning and ending with the flour mixture. If the mixture seems a bit too dry, you might want to try adding some water at the end. I suggest adding it a teaspoon or so at a time.
  • Stir in drained cherries.
  • Grease a loaf pan and spread batter evenly in pan.

Steps:

  • Preheat the oven to 350F. Line two, 9-inch loaf pans with parchment paper or butter and flour them. Can also use a muffin pan, or some combination of both. I used one loaf pan and one 12-count muffin pan.
  • Grate 2 small zucchinis into a bowl and set them into the refrigerator for 10 minutes. After 10 minutes, place zucchini into a cheesecloth and squeeze out all excess water.
  • In a large bowl, whisk together the eggs and sugar until well combined. Next, add the melted butter and vanilla extract. Fold in grated zucchini. In a separate bowl, combine the dry ingredients: flour, baking powder, salt and nutmeg.
  • Add half of the flour and the apricots, pineapple and half of the nut mixture. Use a spatula to mix together the batter, then add the remaining flour.
  • Divide batter into loaf pans or muffin tins. Sprinkle remaining diced nuts over the top of the bread batter. Bake loaves in preheated oven for 55-60 minutes, until a toothpick inserted into the center comes out clean. Bake muffins for 30-35 minutes. Once baked, remove bread from pan right away and set onto cooling rack to cool before cutting.
