Easy Cherry Bars are a tasty summer treat! Shortbread double crust with cherry pie filling baked in a sheet pan and topped with sweet vanilla almond glaze.

1 cup butter (, softened)
2 cups sugar
1 teaspoon salt
4 large eggs (, room temperature)
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups flour
2 cans cherry pie filling (, 21 ounces each )
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2-3 tablespoons whole milk

Steps:

  • Preheat oven to 350 degrees. Spray a 15x10 sheet pan with baking spray.
  • In a stand mixer, cream butter, sugar, and salt on medium speed until light and fluffy.
  • Add eggs, one at a time, then add extracts.
  • Gradually fold in flour to butter mixture until combined and dough forms.
  • Press 3 cups dough into prepared pan.
  • Spread with cherry pie filling covering all the dough evenly.
  • Drop remaining dough by teaspoonfuls over filling.
  • Bake 35-40 minutes, or until golden brown.
  • Cool completely in pan before glazing.

1 teaspoon vanilla extract

GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Gradually add flour., Spread 3 cups dough into a greased 15x10x1-in. baking pan. Spread with pie filling. Drop remaining dough by teaspoonfuls over filling. Bake 35-40 minutes or until golden brown. Cool completely in pan on a wire rack., In a small bowl, mix confectioners' sugar, extracts and enough milk to reach desired consistency; drizzle over top.

1 cup all-purpose flour
3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well.   • Heat oven to 350°F.

Press onto the bottom of an ungreased 13x9-in. baking pan. Bake 8-10 minutes or until edges begin to brown., Meanwhile, in a large saucepan, combine the brown sugar, butter, corn syrup, cream and salt. Bring to boil over medium heat, stirring constantly. 1/4 cup toasted wheat germ
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup honey
1/3 cup unsweetened applesauce
1/4 cup canola oil
1 egg, beaten to mix
1 egg white
3/4 cup chopped dried tart cherries
1/2 cup finely chopped walnuts
Cooking spray
1/4 cup "fruit only" apricot preserves

Steps:

  • Preheat oven to 350 degrees F. In a medium bowl, whisk together the oats, flour, wheat germ, cinnamon and salt.
  • In another bowl, whisk together the honey, applesauce, oil, egg and egg white until well combined. Stir in the oatmeal mixture until well combined. Add the dried cherries and walnuts.
  • Coat an 8-inch square baking pan with cooking spray. Spread the mixture into the prepared pan and bake until a toothpick inserted in the center comes out

2 cups crispy brown rice cereal
1 cup raw pepitas
1 cup raw almonds, roughly chopped
1/2 cup sweetened dried cherries
2/3 cup brown rice syrup
2 tablespoons almond butter
1/2 teaspoon almond extract
1/2 teaspoon flaky sea salt

Steps:

  • Preheat an oven to 325 degrees F. Coat an 8-inch square glass baking dish with cooking spray. Line the bottom with a piece of parchment or waxed paper leaving a 4-inch overhang on two opposite sides and spray the paper with cooking spray.
  • Put 1 cup of the rice cereal in a resealable plastic bag and crush to a fine powder with the back of the measuring cup. Combine the remaining 1 cup rice cereal, pepitas, almonds and cherries in a large bowl. Heat the rice syrup and almond butter in a small saucepan until warm and bubbling and remove from heat. Stir in the almond extract and salt, and pour into the nut mixture. Fold with a spatula until it is everything is moistened and well combined. Add the crushed rice cereal and continue to fold until evenly incorporated.
  • Press the mixture very firmly and evenly into the prepared pan using the overhanging pieces of parchment to prevent sticking. Bake until beginning to brown, about 25 minutes. Cool 15 minutes on a wire rack, then press again to compact the mixture. Chill until firm but not completely set , about 45 minutes. Remove the block by the paper handles and invert onto a cutting board. Gently peel off the paper. Cut the block in half, then cut each half into 6 bars for 12 total. Refrigerate until fully set.
  • Store the bars individually wrapped or layered between sheets of parchment or waxed paper in the refrigerator for up to 2 weeks. The bars will soften up and become chewy as they come to room temperature.

1/2 cup butter
1/2 cup whole milk
1 cup brown sugar
1 cup graham wafer crumbs
1 cup chopped pecans
1 cup coconut
10 chopped maraschino cherries
18 whole graham crackers
2 tablespoons butter
1 tablespoon evaporated milk
1 cup powdered sugar
1/2 teaspoon vanilla
1 ounce melted semisweet chocolate

Steps:

  • Arrange 9 of the whole graham crackers in the bottom of a 8 inch square buttered pan.
  • In a saucepan place, butter, brown sugar, and milk.
  • Bring this to a boil.
  • Add the crumbs, coconut, nuts, and cherries.
  • Remove from heat.
  • Blend well.
  • Pour this mixture evenly over the crackers in the pan.
  • Press the last 9 crackers over top, pressing slightly.
  • Blend the icing sugar, butter, evaporated milk, and vanilla.
  • Make a frosting smooth and creamy.
  • Frost the top layer of crackers.
  • Melt your square of chocolate, and drizzle over the frosting.
  • Chill well before cutting into squares.

1/2 cup granulated sugar
1 cup margarine or 3/4 cup oil
2 large eggs
1 egg yolk
1 1/2 cups brown sugar
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup maraschino cherry, chopped
1/2 cup walnuts, chopped

Steps:

  • Combine the flour, margarine and sugar in a bowl well.
  • Pat into a 9 x 13 inch pan .
  • Bake 350 degrees for 12 minutes.
  • Remove and let cool slightly while preparing the filling.
  • Filling:.
  • Beat together the eggs, yolk, brown sugar, flour, salt, and powder.
