1 carton (8 ounces) miniature fresh mozzarella cheese balls, drained

Steps:

  • In a large saucepan, cook tortellini according to package directions. Drain; transfer to a large bowl. Immediately add zucchini and dressing; toss to coat. Stir in the remaining ingredients. Serve warm or refrigerate and serve cold.

1 red bell pepper, julienned
1 small red onion, julienned
½ cup sliced black olives

1 boneless chicken breast half, cooked and sliced into thin strips
¼ cup olive oil
2 teaspoons grated lemon zest, minced
¼ cup lemon juice
2 tablespoons ground walnuts
1 tablespoon honey

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente. Drain and cool under cold water. Refrigerate until chilled.

2 tablespoons snipped fresh basil (or 1 teaspoon dried basil)
4 teaspoons powdered fruit pectin
1 tablespoon Dijon mustard
2 garlic cloves, minced
1 teaspoon sugar
1/4 teaspoon pepper
1/3 cup water
2 tablespoons white wine vinegar (or rice wine vinegar)
1 (9 ounce) package refrigerated tortellini (light garlic and cheese)
3 cups broccoli florets
1 cup sliced carrot
1/4 cup sliced green onion
1 large tomatoes, chopped
1 cup fresh snow pea pods, halved
4 lettuce leaves

Steps:

  • To make the dressing: stir together the basil, pectin, mustard, garlic, sugar, and pepper in a small bowl.
  • Stir in water and vinegar; cover and chill 30 minutes (at least).
  • Cook tortellini by following the package directions (except omit oil).
  • Add in the broccoli and carrots during the last 3 minutes of cooking.
  • Drain; rinse with cold running water; drain again.
  • In a serving bowl combine the pasta mixture and green onions; drizzle with dressing.
  • Toss to coat; cover and chill 2-24 hours.
  • To serve: gently stir in the tomato and pea pods; adjust seasoning to taste.
  • Line four salad plates with lettuce leaves; top with pasta mixture.

My family *LOVES* this salad, I make often in the summer with sweet cherry tomatoes from my garden, feel free to adjust all ingredient amounts and add in other ingeredints also, you can sub feta for Parmesan, use your favorite Caesar dressing or use my recipe#116849. Prep time does not include cooking the tortellini.

1 (9 ounce) package cheese tortellini (cooked and rinsed under cold water)
1 head romaine lettuce (torn into small pieces)
1 cup prepared creamy caesar salad dressing (can use less, I use Kittencal's Famous Caesar Salad)
1/4 cup grated parmesan cheese (or to taste)
10 large cherry tomatoes (cut in half)
2 cups caesar-flavor croutons (see my Kittencal's Garlic Croutons)
black pepper (to taste)
salt (optional and to taste)

Steps:

  • In a medium bowl combine the cooked tortellini with chopped lettuce, Caesar dressing and Parmesan cheese; toss well to coat.
  • Season with black pepper to taste and salt if desired.
  • Top with sliced cherry tomatoes and croutons.
  • Serve immediately.

I'm not sure where I got this recipe from, but I have had it for over 30 years. I usually garnish the top of the salad with crushed tortilla chips. Serving size is approximate (depending on appetites) as a side dish. NOTE: Cooking time is time it takes to cook the tortellini.

1 (15 ounce) can red kidney beans, drained and rinsed
1 medium tomatoes, seeded and coarsely chopped
1/2 green pepper, coarsely chopped
2 tablespoons olives, sliced
1/2 cup salsa (you pick the heat, but I use "medium")
1/3 cup thousand island dressing
1/2 teaspoon cumin

Steps:

  • Cook the tortellini. Drain and rinse with cold water.
  • Combine beans, tomato, pepper and olives in a large bowl. Add tortellini and toss.
  • Make the dressing - combining the salsa, thousand island salad dressing and cumin.
  • Just before serving, pour dressing over the tortellini salad mixture and toss.
