CHERRY MALTED COOKIES (PILLSBURY BAKE-OFF WINNER)



Cherry Malted Cookies (Pillsbury Bake-Off Winner) image

From the 1953 Pillsbury Bake-off Cookbook (4th Grand National). You can replace some or all of the shortening with unsalted butter. If using plain malted milk powder, add 2 tablespoons unsweetened cocoa. For a variation, add 1 cup chopped black walnuts.

1 1/2 cups flour (spoon & sweep)
2/3 cup brown sugar, firmly packed
1/2 cup instant malted milk powder, chocolate flavor
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1 egg
1/2 cup shortening
1 teaspoon vanilla
2 tablespoons maraschino cherry syrup
1/4 cup chopped maraschino cherry, drained

Steps:

  • Adjust oven rack to middle position, preheat to 375°F, and line two baking sheets with parchment. In a medium bowl, combine flour, brown sugar, malted milk powder, salt, cinnamon, and baking soda.
  • In a large bowl, if using a hand mixer, or in the bowl of a stand mixer fitted with a paddle attachment, beat butter and sugar until soft and light, about 1-2 minutes. Add egg and continue beating until smooth, then add vanilla and cherry syrup and beat a minute more, pausing to scrape down the sides of the bowl as needed. Resume mixing on low, add flour, brown sugar, malted milk powder, salt, cinnamon, and baking soda. When fully incorporated, stir in chopped cherries.
  • Drop by rounded teaspoons onto prepared baking sheets. Bake cookies one sheet at a time until puffed and just set around the edges, but still soft in the middle, about 12 minutes. Cool directly on the baking sheet until firm, then transfer to wire rack to cool.

1 1/4 cups softened butter or 1 1/4 cups margarine
2 1/4 cups confectioners' sugar
1/3 cup baking cocoa
1/4 cup sour cream
1 tablespoon vanilla extract
2 1/4 cups flour
2 cups chocolate chips
chocolate sprinkles (optional)

Steps:

  • Cream butter, sugar and cocoa until light and fluffy.
  • Beat in sour cream and vanilla, then flour and chocolate chips.
  • Refrigerate for 1 hour.
  • Roll into 1 inch balls, then dip in chocolate sprinkles, if desired.
  • Place on cookie sheet and bake for 10 minutes at 325°F.
  • Cool and enjoy!

1 lb brown sugar
1 teaspoon vanilla
2 cups biscuit mix (Bisquick is fine)
2 cups roughly chopped pecans

Steps:

  • Preheat oven to 350 degrees F. Grease 9×13″ pan.
  • In large bowl, beat eggs and add sugar and vanilla. Stir in biscuit mix and pecans. Stir until moistened. Pour into prepared pan and bake 30-35 minutes. Cool before cutting into squares.

8 ounces uncooked spaghetti, broken into thirds
1 (16 ounce) package frozen broccoli carrots cauliflower mix
2 tablespoons butter
3 tablespoons all-purpose flour
2 cups low-fat milk
1/2 cup grated parmesan cheese
pepper
1 (4 1/2 ounce) can sliced mushrooms, drained
2 tablespoons grated parmesan cheese

Steps:

  • Cook spaghetti as directed on package, drain.
  • Keep warm and set aside.
  • Cook vegetables until crisp, drain; set aside.
  • Heat oven to 400 degrees.
  • Grease a 13x9-inch baking dish.
  • Melt butter in a saucepan.
  • Stir in flour until smooth, gradually add milk; blend well.
  • Cook over heat for 6 to 8 minutes or until it thickens and boils, stirring constantly.
  • Stir in the pepper and 1/2 cup of cheese.
  • Put spaghetti into baking dish.
  • Top with vegetables and mushrooms.
  • Pour milk mixture over mushrooms; sprinkle with 2 tablespoons of cheese.
  • Bake for 15 to 20 minutes or until mixture bubbles.
