CLASSIC CHERRY DELIGHT



Classic Cherry Delight image

This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

This is another Christmas favorite in my house! I used to have so much fun pressing the cherries onto each cookie when I was younger. These cookies are sweet and delicious, both with and without the nuts! Cook time is if you bake about a dozen at a time.

1 cup margarine
1/2 cup sugar
1/2 cup Karo light corn syrup
2 eggs, divided
2 1/2 cups flour
2 cups nuts, finely chopped (we omit sometimes)
candied cherry, halved

Steps:

  • Mix margarine and sugar until fluffy.
  • Stir in Karo syrup and egg yolks; mix well.
  • Mix in flour.
  • Chill.
  • Roll into 1 inch balls.
  • Dip into slightly beaten egg whites and roll in chopped nuts.
  • Place on greased cookie sheets.
  • Press candied cherry halves into centers.
  • Bake in 325 degree F oven for 20 minutes.

Spoon pie filling over top. Refrigerate for 1 hour or until chilled.

3 ounces cream cheese, softened
1 large egg, room temperature
1 package (17-1/2 ounces) sugar cookie mix
FILLING:
1-1/2 cups slivered almonds
3/4 cup sugar
2 large eggs, room temperature
1/4 cup butter, softened
2 teaspoons vanilla extract
24 maraschino cherries, well-drained
Confectioners' sugar

Steps:

  • In a large bowl, beat butter and cream cheese until smooth. Beat in egg. Add cookie mix; mix well (dough will be sticky). Shape dough into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to handle., Place almonds and sugar in a food processor; pulse until almonds are finely chopped. Add eggs; process until mixture forms a paste. Add butter and vanilla; process until blended., Preheat oven to 350°. Shape dough into 1-1/4-in. balls; press onto bottom and up the sides of greased mini muffin cups., Place 1 Tbsp. filling in each cup. Top each with a cherry. Bake 16-18 minutes or until edges are golden and filling is set. Cool in pans 10 minutes. Remove to wire racks to cool completely. Dust tops with confectioners' sugar before serving.

1 cup butter, softened
1-1/2 cups sugar
1/3 cup maraschino cherry juice
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 cup baking cocoa
1 cup sweetened shredded coconut
3/4 cup chopped maraschino cherries, drained and patted dry
1/2 cup miniature semisweet chocolate chips
TOPPING:
3/4 cup vanilla frosting
48 maraschino cherries with stems, drained and patted dry
1 cup miniature semisweet chocolate chips
1 teaspoon shortening

Steps:

  • Preheat oven to 375°. In a large bowl, beat butter and sugar until blended. Gradually beat in cherry juice and vanilla. In another bowl, whisk flour and cocoa; gradually beat into creamed mixture. Stir in coconut, cherries and chocolate chips., Shape dough into 48 balls (about 1-1/4 in.); place 2 in. apart on ungreased baking sheets. Press a deep indentation in center of each with the end of a wooden spoon handle. Bake 9-11 minutes or until set and bottoms are lightly browned. Remove from pans to wire racks to cool completely., Fill each cookie with 3/4 teaspoon frosting. Top with cherries. In a microwave, melt chocolate chips and shortening; stir until smooth. Spoon over cherries. Let stand until set.

This is a really great dessert, plan ahead this needs to chill for a minimum of 3 hours or overnight is even better.

1 3/4 cups crushed graham cracker crumbs
1/3 cup sugar
1/4 cup melted butter
2 cups whipped dream whipped topping (1 envelope)
1/2 teaspoon vanilla
1 (8 ounce) package cream cheese, softened
1 (28 ounce) can cherry pie filling

Steps:

  • Prepare a 9 x 9" baking pan.
  • In a bowl, mix the graham cracker crumbs, melted butter and 1 tbsp sugar; spread on bottom of prepared baking pan to form a crust.
  • Mix the Dream Whip topping according to directions on the package, then beat in the softened cream cheese into the Dream Whip a little at a time.
  • Add the remaining sugar and vanilla until well blended.
  • Smooth on top of the crust.
  • Top with the cherry pie filling.
  • Chill at least 3 hours (overnight is even better) if storing in the fridge overnight, cover with plastic wrap.

While on vacation this summer, I read the book "Chocolate Chip Cookie Murder" by Joanne Fluke. The author included some very good cookie recipes throughout the book. I want to pass the book on to my swap partner in the Used Media Swap on Zaar, I am posting the recipes here so I can try them later. If you make the cookies before me, please leave a review to let us know how good they are. FYI, the author did not indicate how many cookies the recipe makes so I guessed. I will post a correction as soon as I know better. Oh, one more thing - the book was fun to read. (Author's note about this recipe: "A plate of these should be in every psychiatrist's office - - two Chocolate-Covered Cherry Delights will lift anyone out of a depression)

1 cup butter, melted
2 cups white sugar
2 eggs
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons vanilla
1 cup cocoa powder
3 cups flour (not sifted)
2 (10 ounce) jars maraschino cherries
2 cups chocolate chips (6 oz package)
1/2 cup sweetened condensed milk

Steps:

  • Preheat oven to 350°F, rack in middle position.
  • Melt butter and mix in sugar.
  • Let mixture cool.
  • Add eggs, mix thoroughly.
  • Add baking powder, baking soda, salt, vanilla and cocoa, stirring after each addition.
  • Add flour and mix well (dough will be stiff and a bit crumbly).
  • Drain cherries, remove stems, reserve juice.
  • Pat dough into walnut-sized balls.
  • Place on a greased cookie sheet, 12 to a standard sheet.
  • Press down in center with thumb to make a deep indentation.
  • Place one cherry in each indentation.
  • In a saucepan, over simmering water (double boiler), combine the chocolate chips and condensed milk.
  • Heat on low until the chips are melted.
  • Add approximately 1/8 cup of reserved cherry juice and stir to a thick sauce.
  • If sauce is too thick, carefully add a little more juice. Test with a teaspoon. If it doesn't glob off, it is too thick.
  • Spoon the sauce over the center of each cookie, just enough to cover each cherry. Make sure it doesn't drip down the sides.
  • Bake at 350°F for 10-12 minutes.
  • Let cool on cookie sheet for 2 minutes.
  • Remove to rack to finish cooling.

1 cup sugar
3/4 cup butter or 3/4 cup margarine
1 egg
1 teaspoon vanilla
3 drops red food coloring (optional)
1 (4 ounce) bottle maraschino cherries, including juice
1 cup shredded coconut
1/2 cup chopped walnuts
1 cup chopped dates
1 teaspoon baking soda
1/4 teaspoon salt
2 cups flour

Steps:

  • Mix baking soda, salt and flour together. Set aside.
  • Cream together sugar and butter.
  • Beat in egg, vanilla and food coloring if using.
  • Stir in maraschino cherries (including juice), coconut, nuts, and dates.
  • Add dry ingredients.
  • Drop onto greased cookie sheet about 2 inches apart.
  • Bake at 350 degrees for 12 minutes.
  • Enjoy.
  • Note: Depending on how much juice is in the cherries you may need to add additional flour otherwise the cookies will flatten way out when baked.
