1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
4 ounces (1 stick) unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1/4 cup buttermilk
2 1/2 cups (1 pound) fresh sour cherries, pitted, or frozen dark sweet cherries

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch square baking dish, and dust with flour, tapping out excess.
  • Make the topping: Stir together butter, flour, sugars, salt, and cinnamon.
  • Make the cakes: Whisk together flour, baking powder, and salt in a bowl. With a mixer, cream butter and granulated sugar in another bowl until pale and fluffy. Beat in eggs and vanilla. Working in alternating batches, add flour mixture and buttermilk, beginning and ending with flour mixture. Beat until just combined. Pour into prepared dish, and smooth with an offset spatula. Dot top with cherries, and sprinkle with crumb topping.
  • Bake until golden and a tester inserted into center comes out clean, about 1 hour. Let cool before cutting.

21 ounces cherry pie filling
1/2 cup all-purpose flour

1/2 cup chopped nuts, use your favorite

Steps:

  • In mixing bowl, cream together butter and sugar. Add eggs, one at a time. Mix well. Add remaining ingredients except pie filling. Beat well.
  • Spread half of the batter in a greased 13 x 9" baking pan. Spread cherry pie filling over batter. Cover with remaining batter.
  • For topping: combine all ingredients except.
  • butter and nuts in a small mixing bowl. Cut in butter. Stir in nuts. Sprinkle topping over batter.
  • Bake at 350º about 45 minutes until cake springs back when lightly pressed with finger.

He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.

1/2 cup packed brown sugar
1 cup all-purpose flour
1/2 cup cold butter, cubed
FILLING:

TOPPING:
1-1/2 cups quick-cooking rolled oats

2 cups all purpose flour
2 teaspoons baking powder
1/2 cup butter (melted)
1/2 cup milk
3/4 cup sugar (if you prefer less sugar use 1/2 cup)
1/2 tsp salt
2 eggs (slightly beaten)
1 can cherry pie filling or flavor of your choice

Steps:

  • 1. Preheat oven to 325 degrees. Grease a 9x13 baking pan with shortening.
  • 2. Place the flour ,sugar, baking powder, salt and melted butter in a large mixing bowl,stir together with a fork until crumbly. If you have large clumps get your hands in there and break them apart. Your hands are your best kitchen tool.
  • 3. Take 1/2 cup of the crumbs out of the bowl. If you're using nuts in the topping, add 1/4 cup of finely crushed nuts now, set a side.
  • 4. In a small bowl whisk the slightly beaten eggs and milk together, add milk mixture to the large bowl of crumbs and stir until incorporated. There will be small lumps in the batter.
  • 5. Pour the batter into your prepared 9x13 inch baking pan. Spread the cherry pie filling over the cake. Sprinkle the reserved crumb topping over the pie filling. Bake at 325 degrees for 40 to 45 minutes. Start checking cake at 35 minutes. Remove from oven, place on a cooling rack.

  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated.   • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

¾ cup of oat flour (can sub for all-purpose flour if desired)
1 cup of brown sugar, loosely packed
⅓ cup of vegan butter, melted
½ teaspoon of salt
½ teaspoon of cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 2-quart baking dish.
  • In a large bowl, toss together the cherries along with the maple syrup, lemon juice, cornstarch, vanilla, and almond extract. Pour the cherry mixture and all of it's juices into your prepared baking dish.
  • In another bowl, mix together the crumble topping: rolled oats, flour, brown sugar, butter, salt, and cinnamon. Sprinkle the topping evenly over the cherries in the baking dish.
  • Bake for 30-35 minutes so that the cherries are nice and tender and the crumble topping is lightly browned. Let cool slightly.
