Mini Cherry Cheesecakes with Vanilla Wafer Crusts image

These are delicious little cheesecakes, perfect for any occasion. Experiment with different toppings instead of cherry if you like.

2 (8 ounce) packages cream cheese, softened
1/4 cup sugar
2 large eggs
1 tablespoon lemon juice
2 teaspoons vanilla
24 vanilla wafers
1 (21 ounce) can cherry pie filling (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
  • Line regular sized muffin pans or cupcake tins with paper baking cups and place a vanilla wafer in the bottom of each cup.
  • Fill the cups 2/3 full of cream cheese mixture.
  • Bake for 15 to 20 minutes or until set.
  • When warm, top each with a tablespoon of cherry filling.
  • Chill in refrigerator.

foil cup cake cups

Steps:

  • 1. Mix cream cheese, sugar, vanilla and eggs together until smooth.
  • 2. Press 1 vanilla wafer into each paper cup.
  • 3. Spoon cheese mixture over wafer.
  • 4. Bake for 10 minutes at 350.
  • 5. Cool, place pie filling on top. Refrigerate.
  • 6. You can change the pie filling flavors to your liking.

24 vanilla wafer cookies
2 (8 ounce) packages cream cheese, softened
¾ cup white sugar
2 eggs
2 ½ tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
  • Place a vanilla wafer into the bottom of each muffin cup.
  • Beat cream cheese, sugar, eggs, lemon juice, and vanilla extract in a bowl until fluffy. Spoon mixture into the muffin cups, filling them 2/3 full.
  • Bake in the preheated oven until cheesecake filling is set, 15 to 20 minutes. Let cool completely, about 1 1/2 hours. Spoon 2 or 3 cherries from pie filling over each cheesecake.

1 cup crushed vanilla wafers (about 30 wafers)
3 tablespoons butter, melted
1 package (8 ounces) cream cheese, softened
1/3 cup sugar
2 teaspoons lemon juice
1-1/2 teaspoons vanilla extract
1 large egg, room temperature, lightly beaten
TOPPING:
1 pound pitted canned or frozen tart red cherries
1/2 cup sugar
1 tablespoon cornstarch
Red food coloring, optional

Steps:

  • Preheat oven to 350°. Combine crumbs and butter; press gently onto bottoms of 12 foil-lined muffin cups. In another bowl, combine cream cheese, sugar, lemon juice and vanilla. Add egg; beat on low speed just until combined. Spoon over crusts. , Bake until centers are almost set, 12-15 minutes. Cool completely. , For topping, drain cherries, reserving 1/2 cup juice in a saucepan; discard remaining juice. To reserved juice, add cherries, sugar, cornstarch and, if desired, food coloring. Bring to a boil; cook until thickened, about 1 minute. Cool; spoon over cheesecakes. Refrigerate, covered, at least 2 hours.

½ cup white sugar
2 eggs
1 teaspoon vanilla extract

1 ⅛ cups graham cracker crumbs
2 tablespoons white sugar
1 pinch ground cinnamon
¼ cup butter
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place cup cake liners into muffin tins.
  • To Make Filling: In a medium bowl, combine cream cheese and 1/2 cup sugar. Stir in eggs, vanilla and lemon juice. Mix thoroughly.
  • To Make Crust: Combine crumbs, 2 tablespoons sugar and cinnamon. Cut in butter until crust forms small crumbs. Put one spoonful of crust into each cup cake liner and pat it down. Spoon a layer of filling on top of crusts.
  • Bake in preheated oven for 30 minutes. When tarts are fresh from oven, spoon cherry pie filling over top of each. Let tarts chill in refrigerator for 30 minutes to an hour.

This recipe came with the Chicago Metallic 12 cup mini cheesecake pan. Posting as written for safekeeping. This pan is used for making mini-sized cheesecakes and has removable discs for the bottom of each cup to make removing the cheesecakes easy.

8 ounces cream cheese
1 egg
1 teaspoon vanilla
1/4 cup sugar
1 cup ground nuts
1/4 cup melted butter (38 grams)
3 tablespoons sugar
cherry pie filling

Steps:

  • Preheat oven to 375°F Place one disc in each cup of the cheesecake pan. Lightly grease the pans with butter or use a non-stick spray.
  • Blend cream cheese with the egg, vanilla and 1/4 cup sugar. Set aside.
  • Mix the ground nuts woth the melted butter and 3 tablespoons of sugar.
  • Press the nut crumb into the base of 12 cups. Press the crumbs into the base and about 1/3 ways up the side of each cup.
  • Fill evenly with the cheesecake mixture.
  • Bake 14 minutes.
  • Remove the pan from the oven and place on a rack to cool for 20 minutes.
  • The tops will all as they cool.
  • Lightly loosen the cheese tarts around the edges and carefully remove the cheesecakes by pushing the handle of a wooden spoon through the hole at the bottom of each cup.
  • When cool, take the disc off the bottom of each cheesecake using a butter knife.
  • Place 3 or 4 cherries on the top of each tart.
  • Refrigerate until ready to serve. Makes 1 dozen cheesecakes.

1 tablespoon unsalted butter, plus more for ramekins
1/2 pound Bing cherries (about 30 cherries), pitted
3 tablespoons Kirsch (cherry brandy)
1 pound cream cheese, softened
1/2 cup sugar substitute (recommended: Splenda)
2 large eggs, room temperature
Cocoa, for dusting

Steps:

  • Preheat oven to 325 degrees F. Lightly butter 6 (6-ounce) ramekins
  • Melt the butter in a medium skillet over medium heat. Add the cherries and 1 tablespoon of the Kirsch, and cook until the fruit softens and glazes, about 7 minutes. Divide the cherries with their juices evenly among the prepared ramekins.
  • Pulse the cream cheese, sugar substitute, eggs, and remaining 2 tablespoons of Kirsch in a food processor until smooth. Pour the filling into the ramekins.
  • Bake the cheesecakes until the edges puff slightly and the centers almost set, about 25 minutes. Cool the cheesecakes on a rack in the ramekins. Cover and refrigerate for at least 2 hours before serving.
  • When ready to serve, run a small knife around the outside of the cheesecakes. Carefully invert each cheesecake onto a plate, then flip the cheesecakes over so the cherries are on the bottom. Lightly dust with cocoa.

3/4 cup sugar

vegetable oil cooking spray
2/3 cup gingersnap crumbs (12 to 16 gingersnaps)
3 cups fresh fruit
fresh mint sprig

Steps:

  • Beat cream cheeses at medium speed with an electric mixer until smooth; add sugar and flour, and beat well.
  • Add eggs, 1 at a time, beating until blended after each addition.
  • Stir in extracts.
  • Lightly coat 6 (4-inch) tart pans with removable bottoms with vegetable cooking spray; sprinkle pans evenly with gingersnap crumbs, shaking to coat bottom and sides of pans.
  • (Let excess crumbs remain, evenly covering bottom of each tart pan.)
  • Place tart pans on a baking sheet.

12 vanilla wafers or 12 pecan sandies
2 (8 ounce) packages cream cheese
2 eggs
3/4 cup sugar, depending upon taste (may be less)
1 teaspoon vanilla extract
cherry pie filling

Steps:

  • Place cupcake inserts into cupcake tin.
  • Crush several vanilla wafers or pecan sandies and sprinkle into bottom of cupcake inserts about 1/4", or use a whole vanilla wafer.
  • Mix cream cheese, eggs vanilla.
  • Add about 1/2 cup of the 3/4 cup sugar.
  • Taste mixture.
  • If not sweet enough add more sugar.
  • I like to add a little at a time and taste.
  • When I feel it's sweet enough I stop.
  • Mix about 5 minutes with a mixer on medium.
  • Add to cupcake inserts till about 2/3 full.
  • Bake 12 to 15 minutes in a 350 degree oven.
  • Cool and spoon cherrie pie filling on top of mini cheescake tarts.

  • Divide the cheesecake filling evenly between each of the muffin cups. Bake in the preheated oven just until set, 12-15 minutes. Let the cheesecakes cool completely.
  • Top each cheesecake with a large spoonful of the pie filling. Just before serving, top with a dollop of Reddi-wip.
