QUICK AND EASY PASTA SALAD

Quick and Easy Pasta Salad image

This easy pasta salad is flexible based on the ingredients you have in your kitchen or the season. Start with a hearty pasta shape that has nooks and crannies to hold onto the dressing like rotini or penne. Then toss with our simple dressing and lots of colorful vegetables. We also love adding parmesan cheese, which melts into the dressing as well as a handful of fresh mozzarella balls. For more suggestions for what to add, read through our recommendations in the article above.

1/4 cup white granulated sugar (or to taste)

salt to taste (~1 1/2 teaspoons)

2 bell peppers, trimmed and seeded and chopped finely (I use 1 red and 1 yellow)
2 cups cooked ham chopped into small cubes (I used a ham I made with my brown sugar glaze)

HAM AND CHEESE PASTA SALAD - NO MAYONNAISE

Ham and Cheese Pasta Salad - No Mayonnaise image

Looking for the perfect pasta salad to take to that family cookout or neighborhood block party? This Ham and Cheese Pasta Salad would be perfect! Plus, it's made without mayo, so it's safe to set out for a bit!

Categories     Pasta

Time 4h27m

Number Of Ingredients 5

12 ounces rotini pasta
Salt
8 ounces block of cheddar cheese
8 ounces cubed or sliced ham
12 ounces (1 bottle) or 2 bottles) Italian dressing

Steps:

  • Bring a large pot of water to a boil on the stove top. Liberally salt the water after it starts to boil. (It's said that you should make pasta water like the ocean before cooking pasta). Add in dry pasta and cook for 12 minutes. Drain cooked pasta and set aside. While pasta is cooking, cubed cheese into tiny piece and dice ham into bite sized pieces. When pasta is done cooking and drained, stir in the ham, but let the pasta cool slightly before adding in the cheese as you don't want to melt it. Stir in the Italian dressing and make sure to stir until all is coated. I like to have an extra bottle on hand to drizzle over the pasta salad right before I serve it. Put pasta salad into the fridge for a few hours or until cold before serving. I like it better once it\'s set over night, it always taste better the next day but may need more dressing drizzled over it after it\'s set in the fridge overnight.

  • In a large pot, bring 4 quarts of water to a boil. Add sea salt and pasta, and let cook, stirring often, until just tender. Drain the pasta, and rinse with cold water until it's cool, then drain shortly. You want the pasta to still be slightly wet so that the pasta doesn't absorb too much dressing. Place it into a large bowl.
  • In a small bowl, mix together the mayo, olive oil, vinegar, dijon mustard, honey, dill weed, and sea salt.
  • Add the dressing, ham and vegetables to the pasta, gently mix to combine, then serve. If you have leftovers, you may need to add a little warm water to loosen the mixture back up before serving.
