1 cup jarred sweet cherries
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon fennel seed, toasted
1 teaspoon kosher salt
1 clove garlic, smashed and peeled
One 3 1/2-pound chicken, cut into 8 pieces
2 tablespoons olive oil
1/2 teaspoon fennel pollen or ground toasted fennel seed

Steps:

  • Combine the cherries, vinegar, mustard, fennel seed, salt and garlic in a blender. Puree until smooth. Place the chicken pieces in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and toss to coat. Marinate in the refrigerator for 2 hours.
  • Remove the chicken from the refrigerator 30 minutes before grilling. Preheat a grill to 450 degrees F or medium-high heat with indirect heat on one side.
  • Remove the chicken pieces from the marinade and place on a baking sheet; reserve the marinade. Drizzle with the olive oil. Place the chicken on the grill over direct heat and cook undisturbed for 4 minutes. Flip the chicken, move to indirect heat and baste with the marinade. Cover the grill and roast until the chicken is cooked through, about 30 minutes. Remove to a platter and sprinkle with the fennel pollen.

2 unit Scallions
1 clove Garlic
½ ounce Sliced Almonds
2.5 ounce Israeli Couscous
12 ounce Chicken Breasts
5 teaspoon Balsamic Vinegar
1 unit Chicken Stock Concentrate
1 unit Cherry Jam
2 tablespoon Butter
1 tablespoon Cooking Oil
Kosher Salt
Pepper

Steps:

  • • Adjust rack to middle position and preheat oven to 425 degrees. Wash and dry produce. • Peel and mince garlic. Trim, peel, and cut carrots on a diagonal into ½-inch-thick pieces. Trim and thinly slice scallions, separating whites from greens.
  • • Melt 1 TBSP butter in a small pot over medium-high heat. Add almonds; cook, stirring, until lightly browned, 1-2 minutes. • Add garlic, couscous, and a pinch of salt; cook, stirring, 30 seconds. • Stir in ¾ cup water (1½ cups for 4 servings) and cover. Bring to a boil, then cover and reduce heat to low. Cook until couscous is tender, 6-8 minutes. Drain any excess water from pot if necessary. • Keep covered off heat until ready to serve.
  • • While couscous cooks, toss carrots on a baking sheet with a drizzle of oil, salt, and pepper. • Roast on middle rack until browned and tender, 20-25 minutes.
  • • Meanwhile, pat chicken* dry with paper towels; season generously all over with salt and pepper. • Heat a drizzle of oil in a large pan over medium-high heat. Add chicken and cook until browned and cooked through, 5-7 minutes per side. • Turn off heat; transfer to a cutting board to rest.
  • • Heat a drizzle of oil in same pan over medium-high heat. Add scallion whites; cook, stirring, 1 minute. • Pour in vinegar, stock concentrate, jam, and ¼ cup water (1⁄3 cup for 4 servings); whisk to combine. Bring to a simmer and cook until thickened, 3-4 minutes. • Turn off heat; stir in 1 TBSP butter (2 TBSP for 4) until melted. Season with salt and pepper.
  • • Fluff couscous with a fork; season with salt and pepper. TIP: For an extra-rich experience, stir in 1 TBSP butter (2 TBSP for 4 servings). • Thinly slice chicken crosswise. • Divide couscous, chicken, and carrots between plates. Top chicken with sauce. Garnish with scallion greens and serve.

Get dinner on the table quickly and easily with this balsamic stuffed chicken. Chicken breasts are stuffed with cheese and tomatoes before being baked in a balsamic glaze.

4 boneless skinless chicken breasts
Salt and pepper
8 cheddar cheese slices
4 cherry tomatoes (sliced)
2 tablespoons olive oil
1 teaspoon garlic (finely minced)
⅓ cup balsamic vinegar
2 tablespoons brown sugar

Steps:

  • Preheat the oven to 350 F.
  • Cut about ¾ quarter of the way through each chicken breast. Be careful not to cut all the way through.
  • Season chicken breast with salt and pepper and fill each with cheese and tomato.
  • Seal with 2 or 3 toothpicks to secure the filling inside while cooking.
  • Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat.
  • Add the chicken and fry each side for about 2 minutes until golden brown.
  • Mix garlic, balsamic vinegar and brown sugar together in a small bowl. Pour the mixture in the skillet around the chicken. Bring to simmer and cook chicken each side for about 1 minute while stirring occasionally until the glaze has slightly thickened. It will not take longer than 3 minutes.
  • If you are using a heat proof pan, transfer it in the oven directly to cook the chicken for a further 10 minutes. If not, transfer chicken to a baking dish before transferring in the oven.

1 cup balsamic vinegar
2 cups pitted fresh cherries
1 tablespoon dijon-style mustard
2 tablespoons honey
1 stalk fresh rosemary
4 -5 stalks fresh thyme
4 boneless skinless chicken breasts
4 ounces goat cheese
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
1 teaspoon heavy cream
2 tablespoons extra virgin olive oil

Steps:

  • Combine sauce ingredients in a saucepan. Bring to a boil and cook until cherries soften. Remove from heat and set aside.
  • Preheat the oven to 350 degrees.
  • In a medium bowl, combine the goat cheese, fresh herbs and heavy cream to create an herbed goat cheese mixture; set aside as this will be stuffed inside the chicken breast.
  • Prepare your chicken by creating a pocket for the stuffing. Using a sharp paring knife, make a slit into the side of the chicken breast, cutting along one edge of the chicken. The slit should be about 2-3 inches, depending on how large your chicken breasts are. To fill your chicken breasts, place 1/4 of the herbed goat cheese mixture inside the slit of each breast. Season the chicken breast with salt & pepper to taste and set aside.
  • Prepare your skillet by heating up the oil and butter on high heat. Carefully place the chicken in the skillet and gently brown on all sides. Place the browned chicken in a baking dish and carefully pour the cherry balsamic braising sauce around the chicken. Bake in the preheated oven for 30-35 minutes.
  • Plate chicken and pour glaze over each piece.

½ cup chicken broth
2 tablespoons white sugar
1 clove garlic, minced
1 teaspoon dried Italian herb seasoning

This stuffed, prosciutto-wrapped chicken breast has everything you want in a Valentine's Day entree; it looks fancy, it tastes amazing, and contains dried cherries, a known aphrodisiac.

1 tablespoon vegetable oil
⅓ cup dried cherries, chopped
¼ cup plain bread crumbs
1 egg yolk
1 ½ tablespoons finely grated Parmigiano-Reggiano cheese
2 teaspoons olive oil
1 teaspoon fresh thyme
1 teaspoon fresh oregano, minced
2 cloves garlic, minced
salt and pepper to taste
1 pinch cayenne pepper
2 (6 ounce) skinless, boneless chicken breast halves
4 thin slices prosciutto
¾ cup chicken broth
1 ½ tablespoons balsamic vinegar
1 tablespoon butter
salt and pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Brush the inside of an oven-proof skillet with vegetable oil. Set aside.
  • Mix cherries, bread crumbs, egg yolk, Parmigiano-Reggiano cheese, olive oil, thyme, oregano, garlic, salt, black pepper, and cayenne pepper until combined.
  • Cut a 1-inch slit in each chicken breast by slicing at an angle from the thick end of the breast toward the thinner end.
  • Open flap and place one butterflied chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Repeat with the other breast.
  • Place half the stuffing on each chicken breast, place each breast on a piece of plastic wrap and roll into a tight roll, twisting the ends of the plastic wrap to hold create a tight package.
  • On a piece of plastic wrap, slightly overlap 2 slices of prosciutto so they are as wide as the rolled chicken breast. Unwrap rolled chicken breast and place the breast at one end of the prosciutto. Roll prosciutto around the stuffed breast using the plastic to make a tight roll. Repeat with the second stuffed breast and remaining 2 slices of prosciutto.
  • Lay 4 pieces of string on the cutting board, about 1-inch apart. Place chicken roll across the strings, and tie each into a knot to keep the chicken from unrolling. Repeat for the second stuffed breast.
  • Place stuffed, rolled chicken breasts in the prepared skillet and bake in the preheated oven until the prosciutto is browned and crispy and chicken is no longer pink, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken to a plate and loosely cover with aluminum foil.
  • Drain grease from the pan as desired, leaving juice and browned bits. Pour in chicken stock and balsamic vinegar, and bring to a boil over high heat. Cook, while scraping the browned bits from the bottom of the pan, until liquid has reduced by half, 5 to 6 minutes. Remove from heat, add butter and stir until melted. Season with salt and black pepper to taste.
  • Remove twine from chicken breasts; slice into bite-sized pieces. Serve drizzled with pan sauce.

3/4 cup cherry preserves
1/4 cup balsamic vinegar
1/4 teaspoon Italian spices
1/8 teaspoon ground pepper

Steps:

  • Preheat grill.
  • In a medium saucepan, heat the olive oil over medium heat until hot.
  • Add the shallots and saute until softened- about 3-4 minutes.
  • Add the cherry preserves, balsamic vinegar, Italian seasonings, and the pepper.
  • Reduce heat to medium low and cook until the mixture is reduced by one-fourth.
  • About 6-8 minutes.
  • Reserve 6 tbsp of glaze in small bowl.
  • Lightly season chicken breasts with salt.
  • Place chicken on grill.
  • Cook, covered for 4 minutes per side.
  • Brush one side with glaze.
  • Let set for 1 minutes then flip and brush other side with glaze.
  • Repeat until chicken is cooked through.
