Spicy Roasted Cashew Nuts image

2.5 cups (375g) raw unsalted cashews (halves or whole)
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander (cilantro)
1/2 teaspoon ground cumin
Salt
1.5 tablespoon oil

Steps:

  • Pre-heat oven to fan assisted 140C /160C / 325F /Gas 3.
  • Line a roasting tray with baking parchment.
  • Combine all the ingredients together in a bowl.
  • Spread out spiced cashews in a single layer on the roasting tray.
  • Roast for about 15 min turning them twice to ensure they are evenly roasted
  • Remove from the oven and transfer to a serving bowl.
  • Now try very hard to keep your hands off them till the guest arrive.
  • Serve and enjoy.

1 cup raw whole cashews
1 cup raw whole walnuts
1 cup raw whole almonds
1 cup raw pepitas
1 egg white
1 teaspoon water
1/2 cup sugar
¼ teaspoon Spice Islands® Sea Salt
½ teaspoon Spice Islands® Cayenne Pepper
½ teaspoon Spice Islands® Chipotle Chile Powder
½ teaspoon Spice Islands® Ground Saigon Cinnamon

Steps:

  • Preheat the oven to 350°F. Line a baking sheet with a piece of parchment paper and set aside. Combine the cashews, walnuts, almonds and pepitas in a large bowl and toss to combine. Whisk together the egg white, water, sugar, salt, cayenne and chipotle pepper and cinnamon. Drizzle mixture over the nuts and toss to combine, making sure they are evenly coated. Transfer nuts to prepared baking sheet and spread in an even layer. Roast in oven for 30 minutes, stirring occasionally. Remove from oven; separate the nuts as they cool. Once they are completely cooled, transfer to an airtight container.

Cashews are my favorite nut. I get tired of almonds, I'm not a huge fan of peanuts (which are actually legumes and not nuts anyhow), and pistachios are sometimes just too much of a hassle with those little shells. But cashews....yum. Creamy and crunchy - I love these guys.

1 ½ tsp sweet smoked paprika
2 tsp honey
1 tbsp lime juice
1 tsp olive oil
1 tsp salt

Steps:

  • Preheat oven to 350 F°.Place the cashews, smoked paprika, chili, lime juice, olive oil, honey and salt in a bowl and toss to combine. Spread the cashews on a baking tray lined with parchment paper and bake, turning halfway, for 20 minutes or until golden.Let the nuts cool completely before serving. You can keep the nuts in an airtight container for up to one week.

1 teaspoon of ground chili powder or cayenne (to taste)
12 ounces of raw cashews
2 tablespoons of coconut sugar or unprocessed cane sugar
1.5 teaspoons of sea salt

Steps:

  • Preheat your oven to 325 degrees F and line a baking sheet with parchment paper.
  • Combine honey and chili powder, microwaving for a few seconds to liquify the honey. Add raw cashews and toss to coat.
  • Spread the cashews on the baking sheet in a single layer, then roast for 10-15 minutes, being sure to stir at least once. When the nuts look just a little darkened, remove them from the oven.
  • Stir together sugar and salt while the nuts cool for 5 minutes, then toss in the sugar-salt mixture.

1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

Steps:

  • In a small heavy skillet melt the butter over moderately low heat, add the cumin, the chili powder, the cayenne, the salt, and the paprika, and cook the spices, stirring, for 30 seconds. Add the nuts and stir them to coat them well. Transfer the coated nuts to a baking pan large enough to hold them in one layer and toast them in a preheated 350°F. oven for 5 minutes. Let the nuts cool and transfer them to serving dish.
