Cheesy Roasted Onions with Smoked Paprika image

Delicious and bit different way of cooking onions. The smoked paprika gives it a special pizzaz, but sub ordinary paprika if you don't have any.

8 medium onions, preferably white
2 tablespoons olive oil
4 tablespoons grated parmesan cheese
1 pinch of grated nutmeg
kosher salt or sea salt
fresh ground black pepper
250 ml real cream
1/2 teaspoon smoked paprika

Steps:

  • Heat the oven to 180 degrees C.
  • Peel the onions, keep a bit of the root attached so that they don't fall apart, and arrange in a lightly oiled baking tray so that they fit snugly side by side.
  • Drizzle with the olive oil and bake until soft, about an hour but it could be longer.
  • Remove from the oven, and turn the heat up to 220 degrees C.
  • Combine the cheese, nutmeg, salt, pepper and cream in a jug or bowl, stirring well.
  • Pour it over the onions, and sprinkle with paprika.
  • Return the dish to the oven for 15 minutes until the cheese sauce is golden brown and bubbling.

I recently roasted a chicken using a smoked paprika rub and decided to try it on a whole cauliflower. It was totally delicious! I recommend serving it as a vegan or vegetarian main with a big green salad.

1 small head cauliflower
1 ½ teaspoons fennel seeds
1 ½ teaspoons smoked paprika
1 ¼ teaspoons sea salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
2 tablespoons olive oil
½ lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Trim large leaves off the cauliflower. Trim stalk so cauliflower can sit flat in a Dutch oven.
  • Grind fennel seeds with a mortar and pestle. Mix in smoked paprika, salt, pepper, and garlic powder. Whisk in olive oil to form a paste. Rub the paste all over the cauliflower. Drizzle lemon juice all over.
  • Bake in the preheated oven, covered, until tender, about 30 minutes. Uncover and baste with any juices that have pooled at the base. Continue baking, uncovered, until top is browned and center feels completely tender when pierced with a paring knife, about 15 minutes.

Two 14 oz bags frozen pearl onions cooked according to package instructions.
2 Tbsp butter
2 Tbsp all purpose flour
1 c half and half
2 Tbsp sour cream
2 Tbsp cream cheese
1 c cheddar cheese (i use sharp)
dried french fried onions (either plain or cheddar cheese, or buttered bread crumbs
paprika (not smoked paprika)

Steps:

  • 1. Melt butter (don't let it turn brown!) Add flour and stir until smooth.
  • 2. Slowly add half and half and stir constantly until smooth and thick (just like a white sauce).
  • 3. Add sour cream and cream cheese.
  • 4. Add 3/4 cup cheese.
  • 5. Stir again until smooth and then add onions.
  • 6. Pour into casserole dish, top with cheese, and add either dried French fried onions or bread crumbs. Sprinkle with paprika.
  • 7. Bake for approximately 20-30 minutes until slightly browned. (Oven temp will depend on whether or not you are baking something else. Only thing that matters is that the top is slightly browned.

10 tablespoons unsalted butter, softened or 5 ounces unsalted butter
4 ounces parmesan cheese, freshly grated
2 ounces sharp cheddar cheese, grated
1 cup all-purpose flour
2 tablespoons all-purpose flour
4 teaspoons spanish smoked paprika
1/2 teaspoon fresh ground black pepper, to taste
smoked salt or sea salt, for sprinkling on top

Steps:

  • In a large bowl, toss butter, Parmesan, cheddar, flour, paprika and 1/2 teaspoon black pepper with fingers until combined.
  • Using hands, press mix into a dough. Roll dough into a log 2 1/4 inches in diameter. Tightly wrap in parchment paper. Twist ends of parchment to keep log tight. Chill 45 minutes or until just firm.
  • Adjust oven racks to lower and upper middle positions and preheat to 350°F Line 2 baking sheets with parchment paper.
  • Remove paper from log and slice into 1/8-inch-thick slices. Space evenly on pans. Sprinkle with smoked salt and bake until a deep golden brown, about 15 minutes; about halfway through, rotate pans from top to bottom and front to back.
  • Let crackers cool completely on pans.

2 lb russet potatoes peeled and sliced in 1/8 inch rounds
2 lb yukon gold potatoes peeled and sliced in 1/8 inch rounds
1 medium sweet onion thinly sliced
1/4 c butter
4 clove garlic minced
1/4 c all purpose flour
1/4 tsp onion powder
1/4 tsp smoked paprika
1/2 Tbsp dried parsley
1 tsp sea salt
1/2 tsp fresh ground black pepper
1 c low sodium chicken broth
2 c 2% milk
2 c freshly grated sharp cheddar (reserve 1/2 cup for top)
1 c freshly grated white cheddar (reserve 1/4 cup for top)

Steps:

  • 1. Preheat oven to 400 degrees. Spray 9×13 inch casserole with olive oil or nonstick cooking spray.
  • 2. In large skillet over medium low melt butter. Add minced garlic and saute for 1 minute; stirring constantly. Slowly whisk in flour; cook for 3 to 4 minutes whisking constantly. Whisk in onion powder, paprika, dried parsley, salt and freshly ground black pepper. Slowly whisk in chicken broth and milk; alternating between the two. Whisk until smooth; simmer for 5 minutes. Turn heat to low and slowly whisk in 1/2 cups sharp cheddar and 3/4 cup white cheddar. Simmer while you layer the potatoes.
  • 3. Layer 1/2 of the potatoes and 1/2 of the onions in the casserole dish. Pour 1/2 of the cheese sauce over the potatoes. Layer the rest of the potatoes and onions and and pour the rest of the cheese sauce over. Top with the remaining reserved cheese. Cover with foil and bake for 30 minutes. Uncover and bake for another 30 minutes or until it is nicely browned on the top and bubbly.
