Chipotle Tomatillo Green Chili Salsa is smoky and spicy, with lemon and lime juice and fresh cilantro, you can make this copycat at home in 30 minutes!

Ingredients

2 pounds tomatillos (halved)
3 vine tomatoes (halved)
2 jalapenos (deseeded)
1 red onion (cut into wedges)
4 cloves garlic
1 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
2 teaspoon cumin
1 teaspoon dried oregano
2 tablespoons lemon juice
2 tablespoons lime juice
1/4 cup fresh cilantro

Steps:

Preheat your oven to 450 degrees and add the tomatillos, tomato, jalapenõ and red onion to a baking sheet and roast for 25-30 minutes until they all start to char.
Add the roasted vegetables along with the rest of the ingredients to a large food processor or a blender with a vent (the steam will need an escape) and pulse until slightly chunky, about 10-15 seconds.

From the moment I first tasted this type at Chipotle Grill I was hooked on this tangy salsa. It's not always easy for me to get to the restaurant and to be honest, they don't give you a very generous portion with your chips. I looked all over the internet to find a recipe for this one, but couldn't find it so I made my own. I created this recipe based on the ingredients list on their website, plus a few of my own touches but the result is very very close. Adjust the hot peppers if more or less heat is desired.

Ingredients

2 medium tomatoes, quartered
6 medium tomatillos (use 12 if they are very tiny)
1 small red onion, quartered (for a milder taste use a vidalia onion)
2 garlic cloves, pressed or minced
2 jalapeno peppers (seeded, roasted (or broiled)
2 limes, juice of
1/4-1/2 cup fresh cilantro
2 tablespoons ground cumin
1 pinch red pepper flakes (add more if more heat is desired)
1/2 teaspoon ground coriander
1 teaspoon TABASCO® brand Chipotle Pepper Sauce (more for a hotter salsa)
sea salt (to personal taste)
fresh ground pepper (to personal taste)

Steps:

Combine the above ingredients into a food processor. Pulse until desired consistency is reached. I gave it about 4 pulses to reach a small sized chunk, perfect for scooping with chips.

1 bunch green onion, chopped
4 medium tomatoes, chopped (or 2 15-ounce cans diced, drained)
4 ounces chopped black olives
4 ounces green chilies, drained
1 teaspoon garlic salt
1/2 teaspoon black pepper
2 tablespoons red wine vinegar
1 tablespoon olive oil
tortilla chips

Steps:

Mix all salsa ingredients.
Chill overnight.
Serve with tortilla chips.
